  • Easy Step By Step Soft Roti Recipe For Beginners / Chapati / Indian Flat Bread (Fiji Indian Style)
    Ingredients:
    • 2 cups plain flour (All Purpose Flour)
    • 1 cup hot water
    • 2 tbsp oil
    • ½ tsp salt
    • 4 tbsp butter (Or Ghee)
    Method:
    1. Take your flour, add salt and oil and give it a mix.
    2. Add water and mix with a spoon until it starts to come together.
    4. Put some oil in your palm and knead the dough to make a soft ball.
    6. Roll it into a log, break into golf ball size pieces and roll each piece into a ball.
    7. Flatten the balls and lightly coat it with some dry flour.
    8. Roll each flatten ball into a thin round shape. Use extra dry flour if the dough is sticky.
    9. Heat a non-stick fry pan or a tawa (griddle) on medium heat.
    10. Place a roti on the tawa and wait for the bubbles to appear on the top. Flip it over and cook it for a few seconds until the roti starts to puff up.
    11. With the help of a tea towel press the roti in the middle lightly, wait for a few seconds and start pressing at the edges until the whole roti is puffy. Flip it over , cook it for a few more seconds before taking it out on a plate.
    10. Apply butter, oil or ghee on both sides and serve it with any curry of your choice.
    11. Enjoy.
    Tip:
    Depending on the size of the balls, you can make 10 to 12 rotis.
    Left over roti can be wrapped in foil or plastic wrap and kept in the fridge for up to 5 days.
    To warm the rotis , take the required amount out and warm it in the fry pan or you can warm it in the microwave for 20 seconds for each roti.

    Miss Anita, I don't know what's the time where you're, but it's 2.16 am where I reside, and I had to tell you this right now; I can't wait any longer. Oh my gosh! I tried your recipe with the HOT water, and it was a miracle! My roti WITHOUT baking powder, for the first time, came out perfectly! Thank you, thank you, so very much, I've learnt something new today, due to you.
    I've always made roti "with" baking powder, and it came out perfectly every time; very soft, and round. I usually make a dozen at a time, freeze, and reheat in the microwave as needed, and they'd be very soft, as the day they were made.
    This roti WITHOUT baking powder, I've tried once before, without success, UNTIL TODAY! I think it's because I didn't use HOT water before, and neither did I rolled out the roti, as thin as required. I'm having a piece of hot roti right now, with some pumpkin talkari.
    By the way, I've watched a few videos with people making roti, without baking powder, and the roti puffs up very nicely, so I thought it was some kind of special flour they've used, but I now know, that it's NOT any kind of special flour, because I've used Five Roses, all purpose flour today, and NO baking powder, and my roti's were perfect!

    That's how I make my roti, same measurements, but I also add baking powder. What type of flour do you use, in this recipe? I've noticed, that it didn't need any baking powder? Thank you again and God bless!

    What kind of flour do you use? I use all purpose and I need only 3/4 boiling water to get the same consistency like yours. 1 cup will be too much and turned my dough into almost ‘pudding’ and hard to work with

    Hi Anita .. So when rolling you just roll slowly forward and backward? ... i move the rolling pin fast and mine do not turn out round ...

      Dear Kevin, Yes, just roll it in a backward and forward motion very lightly, do not press the rolling pin to hard. At first, do not worry about the shape too much, as long as the rotis taste great and are soft. With practice, the round shape will follow. Regards Anita.

    Thank you Anita for such a wonderful video. I have been looking at a number of videos on how to make rotis/chapatis and yours is one of the best. I have a couple of questions. The first one is, why do you say it is "Fiji Style"? And the second is why the boiling hot water? This is the first video I have seen that recommends boiling hot water. Some recommend lukewarm water and some don't specify. Thanks again!

      Dear Edgard, You are welcome. I call it Fiji style, because this is how my family you were from Fiji used to make it. I was born and raised in Fiji . Boiling water makes soft rotis and even after a few days your rotis are still soft. I have tried cold water roti and there are not soft. They might be soft as soon as you make it bit as it cools down it gets hard. I know some people use lukewarm water too. My Mum uses hot water at first and finishes kneading the dough with cold water. You can try all this options and see which one works best for you. I keep my left over rotis in the fridge and even after a week ,when warmed the rotis are nice and soft. Hope this was helpful.       Dear Kitiana, You are welcome. You can use ghee as well, but I only use oil when making the dough. After the roti is cooked, then you can use ghee, butter or oil but the oil is the healthier version. Trust me they all taste great. I even use the non - stick cooking spray to lubricate the rotis after cooking when I am in a hurry. Keep safe. Regards Anita.

      Dear Sharon, You are welcome. Even if you do not have a thava , it should still puff up. I sometimes use a non stick fry pan or a pancake pan. Check your temperature as well and when rolling your roti, , press the rolling pin lightly. See if this helps. Regards Anita.

    Hai Anita just tried this . Well first few was a flat bread, but some did get a ballon three quarter way , just want another tip you mentioned about balance dough cld keep in d fridge , do u require the dough to come to room temperature first b4 u cook them or just cook it right away tq my dear

      Dear Nawarat, Great job. After a few more trials you will be making rotis like a pro. Just let it come to room temperature and you can roll and cook them. It should take about 5 to 10 minutes. Regards Anita.

    I have tried your roti recipe thrice ,and the roti came out good. Thank you. I have a question. Can you make split peas for roti in a food processor, to grind the peas. Please comment?

      Dear Sophia, Yes , you can grind it in the food processor but make sure the peas have cooled down completely. For daal buri roti you can also use half whole meal and half plain flour. I always use cold water to make my daal buri rotis because they dont split open during cooking . Most of the time I use chick pea split pea for my filling but I have also use yellow split pea with similar results. You might be lucky. Let me know how your split pea filled rotis turns out.     Thank you for making this look so easy! i have seen other people leave the dough covered for half an hour before breaking it into smaller piece to roll out. Do you think this makes any difference? i am going to try your method right now.

      Dear Alina, I am glad that my video was helpful to you. If you are going to make your rotis straight away after making the dough, you do no have to cover it. Only cover the dough if you are going to make it later or you have the air conditioning on in the room. These are the factors that will dry the dough. Dry dough means hard rotis. Also you can make your dough hours ahead as long as you make sure to keep them in the fridge in a sealed container and use it as needed. Regards Anita.

    What about baking powder? If using all purpose flour do I adjust the water?

      Dear Suresh, You can also make rotis using cold water, but they are not as soft as rotis made with hot water. The texture of the rotis made with cold water is lot harder compared to rotis made with hot water . I always use hot water because I love soft rotis and even after keeping my rotis in the fridge for one week , when warmed up, they become so soft, it feels like that I have just made them.     I followed your recipe and made the rotis with hot water but for some reason when I was rolling them out there was solid bits within the dough but the rotis still turned out nice and soft...but once I wrapped them tightly up like you showed, as I made them midday ready for dinner they became hard even though I warmed them as per your instructions 😔 can you please explain what went wrong

      Dear Alisha, When I first started making rotis, they used to be soft as soon as I made them, and later they used to get hard. Now my rotis stay soft for days. My mistake was I used to overcook them by applying ghee to my rotis while there were still on the tawa , and now I apply the ghee after I take them out. Also make sure that your tawa is hot before you start cooking your rotis. And when you wrap your rotis, wrap them in foil and paper towel to stop them from drying. You can also wrap the rotis in plastic wrap or cling wrap before warming in the microwave to keep them soft. I do not understand why you had solid bits of flour in your roti dough, the only thing I can think of is that after you added the hot water and when you mixed it the dry bits were not mixed properly.       Dear Alisha, Put your tawa on medium heat and make sure that your tawa is hot before cooking. Also make sure that the uncooked rotis are covered to stop them from drying and becoming hard later.When your tawa gets hot, put your roti on, wait till small bubbles appear, flip the roti over, wait a few seconds until the roti starts to puff, use a tea towel and gently press the roti to help it puff properly, flip the roti over, wait a few seconds and take it out on a plate before applying butter, ghee or oil. Watch the video again just to help you understand the steps. Hope this was helpful. Don't worry, never give up and won't be long before you will start making soft rotis. Regards Anita.

    Plain flour means maida, u made roti of maida can we follow the same way for making whole wheat rotis.
