    Today we are making Xin Jiang Style Lamb BBQ skewers. Just saying the name makes my mouth water. It is the number one popular street food when you visit Xin Jiang. So, let’s get started.

    INGREDIENTS
    2 lbs of lamb leg meat (at least 15% fat)
    2 cups of onion slices
    4-5 cloves of crushed garlic
    1.5 tbsp of cumin seeds [Amazon Link: geni.us/WZzrS]
    2 tsp of Sichuan peppercorn [Amazon Link: geni.us/JXgSYD]
    1 tsp of white pepper [Amazon Link: geni.us/uApkA]
    1 tsp of fennel [Amazon Link: geni.us/xWdgUsH]
    2.5 tbsp mild chili flake (optional)
    1 tsp of spicy chili flake (optional)
    2 to 3 tsp of salt or taste

    This takes me back to my trip through China and Xinjiang, 2bucks would get me 2big kebabs, a plate of lagman, some sugar sprinkled yogurt, and endless tea, oh man.

    I have followed other recipes to make Xinjiang lamb skewers. Lamb is always tasty... Then I stumbled on a few other recipes, and this one. I like the simplicity of using just a few key spices (versus using a range of things, even bottled pastes). I've just grilled Mandy's skewers today. The result is astounding, simply delicious.     0:58 It is because the lamb is not local but shipped in from Australia or New Zealand. The lamb meat on Publix's website are all Australian lamb.

    Thank you!! Super clear specific instructions and well shot video makes this excellent!! Summer nights in China out at BBQ drinking a cold beer is one of the best things in life. I’m curious about a video of all the variety of things they bbq because plenty of it is not things anyone BBQs in America (gizzards, welsh onions, but I’m not sure what else?)

    Hey Mandy. I live in Ohio and I get my lamb from a middle eastern grocery store. Much better quality than the big grocery stores. I hope you find one close to you.

    Lamb seems expensive to rich for a student like me. However these look amazing Xingjiang is the western most area of China so maybe one day I’ll go.

    Unfortunately, having worked in a couple US supermarkets, most of the meats, if not all, are frozen for transport (especially for less popular meats). Not true everywhere, but certainly for most chains. Have to find a good local butcher for the fresh stuff, but that's harder these days.

    P.S. the fluid = water-injected meat. Hence the black absorption pad.
    Selling water for meat prices is very profitable. You just have to guess the percentage of water (if written on the label). Sometimes your local butcher is better as he doesn't have water injected meat.
    ...As water-injection into the meat is mostly forbidden.....they now tumble the meat onto the needles...

    Added to that your most of the recipes are easy to cook with optimal ingredients.
    This kebab recipe is really innovative by the way, adding the "salt and masala" while roasting on the fire. 👍

    Meat sold in major chain markets arrives already packed in cryovac and is usually frozen. However, meat that is slaughtered and eaten the same day more than a couple of hours later can go into rigor mortis, stiffen up, and become very tough. Most beef in the US is aged 2-3 weeks. This tenderizes it. The wooden bamboo skewers can be soaked in cold water for 1/2 hour and this will keep them from burning. Personally I love lamb, but don't like the fat. It gives the meat its strong taste. I use olive oil to coat the meat before grilling.

    Looks and sounds amazing! Wondering if using puréed onions and the spice with thin slices of lamb (first spanking the lamb with the side of the cleaver to tenderize it) to marinade the meat, and then stir frying it in a well-seasoned wok over high flame would also work, trading wok hei for wood charcoal smoke?

    Beautiful recipe. Can you recommend what type of beef, pork & chicken to buy to substitute?

      Hey, so for chicken I would use dark meat which is the thigh and leg meat which is much juicier than chicken breast. But make sure you cook it well done.
      For pork I would use pork shoulder or pork chop (tough than shoulder) both will work.
      And lastly the steak I would use whatever to your preference. Anything in the line of steak will work. Just don't burnt the steak.

    If you can locate a local butcher or even a farm that raises lamb for meat, the quality will be much much higher than grocery stores. It might be a little more expensive, but then again it might not. Either way, it will be much fresher and of higher quality.

    I have a question? There is a Chinese restaurant I go to and they make dry chili chicken. There is a fermented bean in it but it's bigger than soy beans... Any idea what it is?

    If I was to attempt to make this with seitan, would you recommend I marinate with the rub?

      the rub will get burned while grilling so I don't recommend that.
