Sir aviyal you did is superb.. but i like to convey one thing, aviyal is not only meant for Kerala, down south say tirunelveli and tenkasi side also they used to do.. the name 'aviayal' itself meant to say to boil the vegetables, no need to add more oil for thalippu, moreover thalippu is not necessary, it's optional only. Coconut oil itself we will add when the stove is off. Basically vegetables should not cook in oil should cook in little water.

Sir please don't mistake me this is not the correct way of making avial the vegetables are okay first add the vegetables by adding salt a ND sprinkle water the vegetables should be half boiled then add the coconut paste to the vegetable and mix well after five minutes add the curd then mix well then after five minutes switch off the stove add a handful of curry leaves and two table spoon of raw coconut oil and mix well the avial is done close it with a lid and use it after ten minutes this is original Kerala avial never use any thalippu before or after for avial
