I have replaced that sensor before on my own 325, it took me longer to drain the coolant, than swapping out the sensor itself, as for the fan shroud & fan, I did not have to remove neither

You could of just squeezed the radiator hose to stop coolant coming out

Just pull the sensor out and put the new one in, don't have to worry about coolant at all.

This is the cooling fan temp sensor not the engine temp sensor

I think both sensors have control of the aux fan

Nope. This sensor controls the electric fan. Other sensor gives the reading for the gauge cluster.
