ONLY ONE EGG sponge cake | Incredibly simple and always turns out well

Recipe and cooking instructions for this lemon sponge cake:
✿ Dough ✿
Egg - 1 egg
Sugar - 120 g
Salt - a few pinches
Vanilla sugar - 10 g (or 1 teaspoon of vanilla extract)
Lemon - 1 piece
Unflavoured vegetable oil - 70 g
Warm milk - 200 g
Flour - 240 g
Baking powder - 10 gr
✿ Decoration ✿
Icing sugar - 2 or 3 tablespoons
Lemon - a few little slices
Make sure all ingredients are at room temperature
1. Mix the egg with the sugar, vanilla sugar (or vanilla extract) and a few pinches of salt. The mixture should turn white.
2. Add the vegetable oil and stir to combine.
3. Grate lemon zest and squeeze out the juice of the whole lemon. Add milk and mix a little more.
4. Combine the flour and baking powder in a separate bowl. Sift this into the batter and mix until smooth.
5. Grease your baking pan with butter, you can also use baking parchment.
6. Pour the batter into the baking pan and spread it around with a spoon or spatula
7. Bake the sponge cake for 45-50 minutes in a preheated to 180 °C (360 °F) oven.
Check the sponge as it bakes, you may need more or less time. It all depends on the oven.
