Stephen Yan was actually a comedian who's stand up routine was teaching people how to cook. He was right at home here with letterman, cracking jokes on almost every line.
I remember Wok with Yan tv show up here in Canada. He inspired me to cook Chinese at home. I've been doing it for many years and it's better and cost less in restaurants.
You wanna wok or you wanna talk? This man inspired me to cook chinese a looong time ago. I was amazed how efficient and tasty this type of cooking is. 98% preparation and 2% boom! He is a culinary god. Letterman was an a-hole, but he let's it ride, like a pro.

Letterman can usually make people look stupid, which is his trademark style, but in this case it backfired. Puns are the lowest form of humor, but Yan's charisma and up-beat attitude makes it fun.
Give me a break with the comments here, lol. Letterman is giving it to Yan because Yan is showing he can handle it. The back and forth is entertaining and landed well with the audience at the time. It only looks like something else now because we live in a time when everyone's become a little more thin-skinned, looking for "microaggressions" where no affront is intended.
David seemed kind of irritated by him and it felt like he couldn't wait for the segment to be over. I think Stephen did a decent job of trying to be entertaining in his own style, David was kind of being a cranky dink. I don't think he did anything that was racist or micro aggressive though.
Yan is just a little bit sharper and even a quicker thinker with his one liners than Letterman. If he wanted to he could have made Letterman look like the complete ass that he was acting like in this episode.

Yan brought out the platter with all the beautifully cut garnishes - and Letterman was so rude with rushing him to just dump it on. He’d already ruined the dish anyway with the salt but... just makes me sad to see the disrespect.

Dave and Yan were having fun. Maybe you don't like Dave or you think he was a bully or that he was mean, he wasn't he just turned being a smart-ass into an art form. Whether you like him or not, I do, or think that Yan got the best of him, he didn't, Dave changed late night TV and the talk show. I really think David was annoyed somewhat that he became sarcastic. He is not really trying to be funny in most part as others are pointing out. This is my analysis after watching him for some years.

Dave didn't care, didn't really have to. Hell they got paid to be on there. Wok with Yan was awesome. I don't think Letterman was being racist or condescending as much as wtf, I can't cook toast or egg waffles. Never said anything rude but yeah his body language says one thing. @@gerrydooley951 I did lol they were showing reruns of Wok with Yan up until like 2012 on CBC what’s your point, much more than just one generation grew up on this show. Not only that I used to have tons of VHS recordings from back when my mom and grandmother would watch the show.

Letterman’s loss was not just obvious but embarrassing for him. Many of his “humor” exploited the civility in the room by being classless. Even a mindless cave troll can create comebacks by breaking social norms, but it takes real intelligence maintain them while executing humor.
Letterman ruining his own show by dis honoring his guest. Bad manner and bad cooking. He can next taste the crap he cooked up himself by dumping all that salt in .
Dave's not being a douche: Yan's forcing him to be the straight man with the constant puns. They work on Yan's show because it's comic relief for the cooking but on a comedy show like Dave's, puns are a bit hacky and easy. And Dave's right: Yan's puns don't land here, with or without Dave's participation. Yan makes a non-pun joke around 3:00 and Dave laughs, so it goes to show he can share a stage he just didn't want to hear tired jokes for 7 mins.To be clear, I love Yan and that's what brought me here.
