If you don't want to pay the high price for these "miracle" noodles, you can visit your nearest Asian market and they sell them in larger bags at a far less expensive price. just ask for Konjac Shirataki noodles.

    Hi Kristie,
I adore your videos and thank you for every one of them! One thing about this video, though, is that you say that shiratake noodles have tofu in them as opposed to Miracle noodles, which don't. Shiratake is the generic name for noodles made with konjac flour, and I have been buying them for 15 years from my local Asian market and from Konjac foods. None of the shiratake noodles that I buy have tofu or soy in them. Tofu shiratake is just that, shiratake that has added tofu to make them more palatable to the Western palate and it is plainly labeled as "tofu shiratake", not just shiratake noodles. I would hate for people not to try these because they think that all of the shiratake noodles found in the Asian markets or local health food stores all have tofu in them. Miracle Noodles are more expensive and harder to find than other brands of plain shiratake noodles, which can be found at most local Asian markets and health food stores, and even at some Walmarts. That said, I love, love, love your wonderful videos, and this one is spot-on about how to prepare these somewhat daunting noodles!

+Diana Barefoot Hmmm.....I should have advised folks to look at the ingredients and make sure it's ONLY konjac. Thanks for letting me know that.

I was literally going to comment to suggest using vinegar but I see you already did. Yes, I found out that a splash of vinegar after rinsing them well totally eliminate any odor of fishiness.

I used to make some soup to take to work. I would heat the soup up. Then cut corners on the bottom of the miracle noodle to drain and cut the top off and run water through. Add it to the hot soup and heat another minute. It was a great portable lunch. Great video. I love all your ideas!

A minor correction. Shirataki noodles ARE konjac, or glucomannan. There is a product called Tofu Shirataki that mixes tofu (soybean curd) and yam flour (konjac).

I don't boil them. just rinse real well, I kind of dry fry them. I spray pan with a little coconut oil spray and fry them to get water out, then add them to whatever sauce I'm using. It seems to help them absorb the sauce better to me. last time I sautéed with my vegs and then added tomato sauce for spaghetti.

My sister and I have been purchasing these in bulk from Konjac foods for years, since they are not available in our area. I bought about 6 bottles of the Glucomannan powder, which is from the Konjac root. I needed some for a bread recipe, plus read about it giving you that full feeling. I haven't used it yet, but was wondering if I could make my own noodles. Yeah, Like I really feel like doing that, but I'd like to try. My dad use to make all the homemade noodles with the pasta machine, but that was with the ole white flour, we don't eat anymore. I wonder if they expand in your stomach, like taking the powder would. I read about a guy that lost so much weight from eating this powder in different ways.

+Cooking Keto with Kristie Hi Kristie! I did finally try the kelp noodles and think that they are definitely worth checking out. They are the size of angel hair or rice noodles (in fact the look a lot like rice noodles). Out of the package there is no fishy smell, but they recommend rinsing them as I guess they can be a bit salty initially. They don't require cooking and just as is, have an al dente texture. They don't have a flavor but pick up whatever they are cooked in. I've been using them in these make your own instant noodles and they are wonderful www.seriouseats.com/2014/09/diy-instant-noodle-cups-food-lab.html. They also seem to lose the al dente bite once slightly cooked. Anyway, wanted to share that update. :)

Why dry them off? They are NOT dried noodles. They are already cooked so simply add them to your other wet ingredients, ie, sauces, soups, etc. They are like flat rice noodles meant to be silky and add bulk to a meal. I have no idea how you get them hard.

Maybe that fishy smell you say is from the fact that glucomannon is made from the bulb of the corpse plant.

I made some of the fettuccini ones yesterday with ground beef and tomato sauce,i didnt smell fishy smell they didn't smell like anything?I drained and rinsed them than put them in boiling water with salt cause i heard the salt gets rid of fishy taste or smell so did that just in case.Than i rinsed them in cold water and boiled for 2 more mins and added to meat and pasta sauce cooking it all together, they tasted like mango mixed with brine to me a bit limey not like noodles and the pasta sause didnt get absorbed with the noodles just sat on top of them.Wasnt a big fan of them
    :/
