Looks amazing!! I've been trying to recreate this dish at home. Is there a difference between Black soy Sauce and Dark soy sauce? I bought Chinese dark soy sauce and it was not the same!
The two terms are used interchangeably when translated into English, so there's no practical difference. However, Chinese black soy sauce is considerably saltier than it's thai counterpart, which is considerably sweeter. To make something that approximates Thai dark soy sauce, mix equal parts Chinese dark, and Shaoxin wine (regular western cooking sherry or even sake will do in a pinch).

Can you use dark soy sauce instead of black soy sauce?
I think it's probably the same thing, maybe I just used the wrong word.
