Just finished making a vegetarian version of this dish, which was faithful to the original recipe and paste, with the exception of the chicken, chicken stock, Thai basil, Thai egg plant and palm sugar (substituting green and red bell peppers, respectively, for the green peppers in the paste and red peppers in the dish, sweet basil combined with some star anise for the Thai basil and honey instead of palm sugar). The vegetables I used were aubergine, green beans, baby corn and broccoli (using vegetable stock instead of chicken stock), along with mushrooms. I was very happy with the results and, in spite of the effort needed to source and gather all of the ingredients, consider the whole experience to be a win. One more string to my bow, and all that. Thank you!

I just made this and it is so delicious! I didn't have fish sauce, so I used the oyster sauce. We are diabetic, so I replaced the palm sugar with stevia. Thank you Spoon Fork Heart! I will make this recipe again!

I always make it myself plus I add ginger galangal shallots green chillies garlic terasi - shrimp paste, Cumin, coriander, lemon grass, lime tree leaves, lime skin, chicken stock, white pepper and turn all of it into a paste... when I cook my chicken n curry is simmering I add 2 spoons of fish sauce, juice of half a lime, grate a bit of its skin and omg... the taste is sensational.

Great question my friend. You can use cauliflower as a good substitution for Thai eggplant. DON'T use a normal western purple eggplant, it won't turn out the same.
Or use the long purple Asian Eggplant sometimes called Chinese eggplant, also try using the long Asian green beans goes good with this. Also use a combination of both.

IveI've done a green curry today using green curry paste from a can and it's extremely spicy. 😢 But it is still as good as the Thai Restaurant I usually go.

Sorry for the slow reply. This time of year is always busy for me. You can substitute the Thai eggplant with zucchini. It will be very similar :-)
Or use Asian Eggplant(long and purple)if you have to have eggplant. Or the real long Asian green beans work with this dish.
