My first batch, three weeks ago, were just lovely. Direach alainn! The next door neighbors returned an excellent review. So I thought I would try again, using buttermilk this time, and in a mood of generousity I made a double recipe. Something went a bit wrong. Instead of 30 I turned out 44 beautiful 2.5 inch scones! I got tired of re-rolling dough, so the last 7 were triangular. Using buttermilk, I found that I needed a bit more than 400 ml, 75 to 100. Thank you for an excellent recipe and video! Looks good, ill try this recipe. The recipe ive been using has an egg aswell, but i also like to mix the sugar with the milk, vanilla and the egg and reserve a small amount to brush on top of the scones before baking.

Nice recipe John, and I noticed you cut them out the right way. I owned an Inn in Cornwall and sold thousands of scones over an 18 year period as part of a summer Cornish Cream Tea with Rodda's Clotted Cream. The Cornish 'Maid' that made the scones told me that you do NOT the twist the cutter as they don't rise as well. I noticed you did this too, push straight down and then lift. Great job, or 'Proper Job' as they say in Cornwall. 😀 I am loving all the tools and the Sourdough starter I bought from your shop. Making bread again of Saturday and I feed the starter on Saturdays as you do.

It is very interesting because in southern United States (I am in Oxford, Mississippi) we serve biscuits.......similar recipe but no fruit/vanilla or sugar.... we also use Buttermilk instead of sweet milk. mix gently dont want to handle it too much , cut out in rounds and bake. When brown we open them up with a fork to insert the butter OR open all the way and put your "thickening gravy" in it ( flour gravy made from bacon drippings) My great grandmother made very large biscuits indeed, calling them "cat head" biscuits. (basically she used an old pineapple tin to cut out her rounds)

The recipe ive been using has an egg aswell, but i also like to mix the sugar with the milk, vanilla and the egg and reserve a small amount to brush on top of the scones before baking.

Nice recipe John, and I noticed you cut them out the right way. I owned an Inn in Cornwall and sold thousands of scones over an 18 year period as part of a summer Cornish Cream Tea with Rodda's Clotted Cream. The Cornish 'Maid' that made the scones told me that you do NOT the twist the cutter as they don't rise as well. I noticed you did this too, push straight down and then lift. Great job, or 'Proper Job' as they say in Cornwall. 😀 I am loving all the tools and the Sourdough starter I bought from your shop. Making bread again of Saturday and I feed the starter on Saturdays as you do.

It is very interesting because in southern United States (I am in Oxford, Mississippi) we serve biscuits.......similar recipe but no fruit/vanilla or sugar.... we also use Buttermilk instead of sweet milk. mix gently dont want to handle it too much , cut out in rounds and bake. When brown we open them up with a fork to insert the butter OR open all the way and put your "thickening gravy" in it ( flour gravy made from bacon drippings) My great grandmother made very large biscuits indeed, calling them "cat head" biscuits. (basically she used an old pineapple tin to cut out her rounds)
