  • Learn to make an easy Lentil Soup for Two in the Instant Pot®

    This
    1 small sweet yellow onion, finely chopped
    2 medium carrots, cut into 1/2-inch pieces
    3/4 cup chopped roasted red bell peppers
    1/4 cup liquid from roasted red bell peppers
    1 garlic clove, minced
    1/8 tsp dried thyme
    3/4 cup Spanish Brown Pardina Lentils
    2 1/2 cups water
    1/2 tsp Colgin liquid smoke
    pinch ground bay leaf
    2 Tbsp chopped fresh cilantro
    1 tsp balsamic vinegar
    Set iPot to [Sauté] with [Normal] heat setting. Cook onions and carrots for 5 minutes. Stir in bell peppers, bell pepper liquid, garlic, and thyme; cook 30 seconds. Add lentils, water, liquid smoke, and ground bay leaf. Lock on lid; turn steam release handle to SEALING.
    Reset iPot to [Pressure Cook] for 4 minutes; cancel Keep Warm mode. Wait 10 minutes after cook time then turn the steam release handle to VENTING.
    Serve individual portions with cilantro and a spritz with vinegar.

    I have been watching your videos for at least 6 months now. Basically i am thinking about going more plant based n my diet because of some medical reasons. In a nutshell I am 50 yrs old and I had weight loss surgery in 1996 that is now causing me all kinds of issues. 2 weeks ago i had to have all my teeth removed and fitted for immediate dentures all from complications from this surgery. I have allways had trouble with digesting meat so thats a no brainer for me. I have been experimenting with lots of different whole grains and dried beans whicch for some reason beans are easier for me to digest and to tell you the truth I love all the different things you can do with them. But anyway I wanted to thank you for letting me know that there i no judgement here on your site. You have given me the encouragement to try new things and I really have needed it. Because I have had so much trouble with chewing food and digesting y old diet my weight dropped to near 100lbs. My normal weight is a thin 145 at 5 foot 10. DANGEROUSLY LOW, But with some of your soup recipes (which I can eat on all day) I have managed to bring it up 17lbs in 6 weeks. So tytyty very very much for the love and compassion you show all who visits your site!

      @@vitazgal9933 Thank you so much for your kind words! I wish that the internet had been available when I had weight loss surgery. I may have been able to change the way I ate with all the resources and wonderful people I have been help by. Yesterday I made chickpeas and Quinoa for recipes today. I also bought my first pack of extra firm tofu! I cook all the time it is my hobby and I am looking forward to creating with more beans and PLANTS!! My husband is super MEAT EATER so he laughed a little but is willing to try some meals with out meat. I don't know if I can give up my butter, eggs, and olive oil but I am eating and it feels good! My body is so deficient that when I looked at the pack of Tofu my mouth was watering and I hadnt even tasted it LOL! But I hope you have an amazing day because I am and all is great!

    I agree about the thickening up factor. My lentil soups always get very thick to the point I have to add a bit of water to thin it out. Soooo delicious!!!!

    So enjoy your video!!! You had me at lentil....lol I am new to a plant based lifestyle so I decided to do a search on Amazon and found you IP cookbook. Read through a ton of reviews that lead me to UA-cam. After watching two of your videos on UA-cam I just had to order the cookbook. I love all three of my IP's., and will put them to good use with your cookbook. You are such a godsend to me.....you don't know!!!!     The best part was your ancient grinder! I have one exactly like yours. Mine was also a wedding gift THIRTY years ago and it's still going even with a broken lid. Can't say the same for the marriage though... it's all good! I replaced it with a much better model Haaha! 🤣🤣🤣

    Jill i I just wanted to let you know that you have helped me so much! I miss seeing new recipes but your library is so large I still have lots to work with. While I am not completely vegan yet my journey is a work in progress. I can't digest any meat because of a 24year old weight loss surgery that now is causing severe problems. But I can eat beans and legumes. I think it's the texture that allows it to pass into my system. But without you I don't know what I would have done. My weight ( for a woman of 5'10" ) plummeted to 103lbs. And learning how to incorporate beans and grains was instrumental in me by starving to death! I struggle to be anywhere between 113 and 120lbs but greatful. My goal is 145. I hope someday you return and we see that beautiful and inspirational face again. I wish you good health and happiness in all that you do and once again thank you for all to help!

    Wow..never put red roasted peppers in my lentils...sounds good. I added 1/2 bag of kale to mine last week along with carrots and onions and celery..that was good but kale was lost..Lol

    I *TOO* own an OLD coffee grinder, the top part also broken but the parts fit and stay together.. ...no "effs" are given, the motor still works and I got it about 20 years ago. I use it for grinding flax seeds, coffee and I might just try grinding up whole bay leaves!

    I love these two serving recipes. I am single, and in two years when I retire planning on moving into my class B camping VAN, yea you got it, I am planning on traveling throughout the country in a van....lol...Anyway, to say the least I gotta downsize and am considering getting the 3 quart instapot. However, I have dropped and broken two 8 quart instant pots....clutz that I am....lol...but anyhoo, this time I got one of the new retro looking Pioneer Woman 6 quart instant pots from Walmart.com. I just loved the retro look of it, but only 6 quarts. And, I am having difficulty , constantly overloading the 6 quart when I make my soups and stews, and that does not really work out well....ask my cieling. When you release the pressure.....well....not a pretty sight...So, for me anyhoo, trying some recipes specifically for two servings seems like just the ticket. Thank you for doing this. Think I will go ahead and get a 3 quart.

      Thank you 😊 next time I make this I’ll try it with spinach. I don’t cook with any type of oils for my health. It’s actually not good for us and contributes to heart disease, despite the marketing. I’m a big fan of cardiologist, Dr. Caldwell B. Esselstyn, Jr., who has spent his career researching the damaging effects of all processed oils and the standard American diet and healing his patients by putting them on a whole food plant-based oil-free diet. Look him up if you’re intrigued. His book, Prevent and Reverse Heart Disease, has changed lives, including mine. 😊 He’s not the only cardiologist or practitioner to back up the research, but he’s definitely a pioneer in the research.

    I thought the reason for removing the bay leaf when making a big pot of something was because it starts to have a bitter taste if you leave it in? I don't have an ipot, just use an old pot on the stove. Maybe because you're making only 2 servings & not freezing for later use?

    Do you rinse the lentils and soak them before you cook them?

      Rinse, yes. Soak, no. Lentils do not require soaking. They do have differently cooking times and textures. They are not created equally, so take care to follow lentil recipes carefully for good results.

      In indian cooking they are always grinding up Bay leaf - so no worry on eating it - Jill was genius for thinking of that!!
