Austin does have good vegan/vegetarian options in just about any restaurant, but we still eat at home. We rarely eat out. My family prefers home cooked meals over restaurant fare every time.
@@JillMcKeever that's what I'm saying. In this area of Texas there isn't much, not even in stores. We rarely eat out anymore, especially not in this area. When you lived in SS were there many vegan options in stores? If so do tell plz cause I have to either order online for things like vwg, nooch, no meat base bouillon, etc or I have to travel to Rockwall, Rowlette, Garland or Mesquite. There just is not much in Greenville & I've exasperated asking in all of the local stores...they are no compliance, except for neighborhood mkt but they still will only do certain things & in small quantity.

Made this tonight. It tasted better than it looked, mine was not as green. Oh... I already had some cashew cream in the fridge, so I just added 3 spoons! I did add salt, smoked paprika and a bit of cayenne pepper after tasting, and highly recommend the smoked paprika! We had it with half a vegan grilled cheese sandwich. Good dinner! Thanks!

I made Broccoli Soup in my iPot. last week...used odds & ends of veggies (carrot/celery/spinach/red bell pepper/garlic cloves that looked funky) that turned out really tasty. I love that this is such a versatile "recipe" to clear out the fridge. Thumbs Up!!

Made this today, Jill. I was having some major dental work done, and I thought it would be perfect for dinner. It was even better than that. I followed your recipe to a “T”, except I may have added more cashews, simply because they were the last I had left, and I used frozen broccoli and frozen baby spinach I use for smoothies. But, yum, it was delish. So healthy...it’s going to be a long time favorite, for sure. Thanks so much!

Hilarious! You have a great family. I suggest perhpas adding some cooked broccoli at end to “float” in the soup? Seeing broccoli is believing! Or how about this? I learned a long time ago that if you buy whole broccoli and peel the stalks, there is way more flavor in the stalks. I used to peel the stalks and cut them up to add with the florets in a pan which I baked with butter. (That was my Colombian mother-in-law’s recipe before I gave up butter). My plan was that my kids would eat the florets and the stalk pieces would be all mine! Yum! Imagine my shock when the kids preferred the stalk pieces over the florets because they were so flavorful. The stalks would work great pureed in the soup! Keep up the good work! Just ordered your OMGee Soy Curls book and my first bag of soy curls to try!
