A few suggestions. 1. A better technique if you're using less oil is to lower the heat and not stir too much to get those potatoes crispy and brown as opposed to dark brown-blackish as in the video. 2. Always add soya sauce on the sides of the pan or in direct contact with the pan. It's well known to always let the sauce sizzle/sear a bit before you incorporate in into the food. Great video!
@@samysdefer Nothing wrong with unsaturated/veg oil from a health perspective, but it is high in calories, so it might not be good in large amounts for people who want to reduce weight.

Now that the weather is starting to turn and become more cold where I live, I'm in the mood for a nice hearty warm breakfast. This is perfect for those cold mornings. Awesome.
Definitely my favorite breakfast to make. Instead I use bell peppers and garlic as well as onions of course. And i use coconut oil because it doesnt burn but it also gives it a very nice faint coconut taste. For seasonings, i add some rosemary and parsley. Then at the end with the eggs i top it off with some shredded cheese. Put some Tapatio on it and boom, its perfect.
Awesome! I did this with 1 whole egg, 2/3rd cup of egg white, and turkey bacon instead of ham. I saved around 100 cals on the recipe clocking in at 516 cals from my measurements and ingredients, which is perfect! It made room for my morning coffee which is 100 cals with 15g of sugar and 1/3rd cup of milk!

I use a little mozzarella at the end.. that enhances the dish to a different level. Also add tiny bit of turmeric and oregano. Just love this in breakfast!
I use steel wool to clean my starchy vegetables - potato, sweet potato, carrot. What this does is it cleans it thoroughly buy also thins out the skin slightly, so you still have some of the nutritious skin but not too much. And it saves me a ton of time.

My wife and I love this dish! I add a bit of chopped spinach to have some greens and make it an even more complete meal and vegan sausages instead of turkey
One minor hack that will make this recipe much healthier: after boiling/microwaving the potatoes, cool and freeze them. This will convert some of the starch into the resistant form, which makes this dish more ‘insulin-friendly’. The trick also works with pasta and rice.
I use a little mozzarella at the end.. that enhances the dish to a different level. Also add tiny bit of turmeric and oregano. Just love this in breakfast!

Herr Felu, thank you for your consistently concise, clearly presented, practical meals. I guess we can replace the chicken ham with turkey slices too. The microwave potatoes was a great tip.
If you have a little more time i like to parboil my potatoes, that is to boil them about halfway cooked. Then drain thoroughly and pat dry with a paper towel for maximum crispiness when frying, kinda manhandle them just a bit when stirring too to add some cracks and craggly surfaces for more crispy edges. I would maybe try lower heat than this though, the potatoes are looking a little dark for my taste at least
