The top part of the hat seems smaller than what I needed it to be. Do I just keep increasing (from 11 sc, 1 dc, do I move forward with 12 sc,1 dc, 13 sc 1 dc... ?) Thank you!

Hey! Try not to hold your yarn too tight. Relaxing the stitch will prevent the folding. A larger hook does help but relaxing your grip is the key! Happy Crocheting!!

Use a smaller crochet hook, you may need to make a couple of swatches to see what fabric you like the best from the different hooks. Look at the label on your yarn to see what size hook they suggest. If your guage is smaller than hers, then you will problably need to continue increasing beyond the stitch counts that she has.
Can you please explain why we need to count rows even if it's just repeated stitches? I'm absolute beginner so I have very little idea that's why I'm asking.............
If you don't count the rows the hat may end up too shallow to cover from the top of your head to your ears, or the brim will be too short to keep the sun out of your eyes. Also, if you make too MANY rows the hat might end up too big 😉 Counting stitches is also a very good idea because it is easy to forget to do the increase stitches and end up with too few - or to do too many increases - and therefore the width of the hat will be affected.

Probably it will become bigger if you continue increasing numbers
You have to let people know what size yarn you use. Especially in a beginner video
It doesn't really matter as long as the yarn says it uses that size hook

What is the stitch counter for? I don't have one and usually count the stitches myself.
When working the rounds in the beginning, my hat is not flat it’s kind of got this slightly wavy look. Could I be making my stitches too tight?

At the end of round 5 is 42 stitches, round 6 is 56 stitches.

Maybe you did an extra stitch on the chain stitch or ship stitch

Use a magic circle at the beginning instead of the slip knot and chain 4 if you want the hole to close
