    I'm a big Coravin fan... using my Model 3 quite often... I just recently had a problem with triple puncturing a cork on an Auslese from the Mosel, in my experience the needle does not hit the cork in the centre but slightly off. How many needle insertions have you been able to do on average on a cork?

      Yes, the needle punctures the cork slightly off-center. I am normally doing 1 to 3 insertions and then I pull the cork. I have done more on some bottles and in my experience the more times you withdraw wine from one bottle, the shorter the time you can keep storing it.

      One other thing you can do is keep a candle handy and if you notice a drip, light the candle and drip a little wax over the hole. But once you do that I wouldn't coravin that bottle again - just pull the cork when you are ready for that bottle again so you avoid getting wax in the needle side holes. If you want to prevent this you can buy the narrow needle that is for particularly old/dry corks (if you can find it in stock), but that needle pours REALLY SLOW, but it is easy to switch it out. And definitely avoid the large needle - that is really for restaurants/fast pouring and it will often let a drip or two out before it reseals.

    My favorite bubbly bar in my state uses a coravin made for sparkling wine. Absolutely amazing how it can preserve sparkling wine for a long time.

    Certainly a smart device and of course good for your trade. But the war is over and either I want to share a bottle or I drink water. Same with that discothequeformats like half bottles...;)
    It is fun to see how the wine develops in the glass, it is a pleasure to share and its over when it is finished. I would hate to have some bottles in my cellar in different states of withering away.
    I like the content you publish, this is good work well done and interesting. We do not have to agree on everything.

    It's interesting to see how many constant years of persuasion needed to made the Coravin system accepted in the wine distribution industry! Eleventh generation today, and maybe now it is possible to introduce similar conserving system for sparkling wines too, also from Coravin!

    At an estate sale, I got a special edition Coravin for $20 "brand new" I know Coravin and respect the brand, but I could never drop over $300 for one of these units. As someone who would have a glass of white wine pre-dinner and a red with dinner, this is prefect. My wife and I often have different proteins for dinner, Fish for her and a steak for me. We can now pair our wines to our meals without wasting any wine or having to kill a bottle. We have added an aerator to use with this unit and it comes with a learning curve. With average performance, I purchased a fast flow needle to maximize it's potential and you can taste the difference when using it. I suggest using the aerator on higher value wines because of the drain on argon gas coupled with a fast flow needle. Konstantin, Thank you for the review

      @@KonstantinBaumMasterofWine So far so good! I enjoy the auto pouring mechanism of the Model 11. It also looks very nice. I've had it less than a week so I can't comment on how well it preserves wine, though it was easy to use with the few bottles I have tried with it so far! Have you continued to use it since this video, or do you still reach for the Model 8?

    While in Burgundy last year, many cafes and restaurants used a Coravin or similar device. Or they used sealed test tubes with a measured pour inside. Here in the United States, I’d say most restaurants serve wine from a half-bottle that’s been opened for days. Ugggh🤮.

    Hi Konstantin, really love the content. This is something I’m quite familiar with; I’ve noticed sommeliers offering tiered pairing with tasting menus thanks to the system. Innovation in the wine community always tough but for restaurants/bars to offer an experience above competitors it’s a real attraction IMHO. Really excited by all innovators elevating the consumer’s experience/journey through wine. What else is out there that you’re excited by?

    A few of things I would consider before buying one. 1. At £1,000 do I want one of these or a case of really nice wine? 2. How good is my cellar? Whilst I have a few nice bottles, I lack the real high quality end stuff from say Bordeaux, Burgundy and maybe Napa. Tasting these types of wines as they age would lead me to purchase one. So maybe I need to invest in my cellar first. 3. I tend to open nice bottles with friends so the bottle in nearly all cases would only last 1-3 days or so. 4. I would need to be much more serious (and organised) to record notes of when I first tasted it, and record all the details. Apart from that I do see all the advantages so who knows...maybe a less expensive version one day! Great video!

      The thing is, these aren't really all that expensive! Sure this silly battery powered Bluetooth one is, but the functionality is the exact same between all models aside from some ergonomic and build quality differences (and the silly unneeded technology in this one). I grabbed a coravin model 2 for 100 euros the other day, and for 100 euros I do really think it gives you something quite valuable

    I've had my Coravin for a few years, bought as a gift (what you call Model 8 but I know as Model 1) but tonight is the first time I've ever used it. Based on the fact everyone seems to endorse it I think I'll be using it much more. Not sure the new model really adds anything although would really appreciate the auto function of taste or glass as I always really envisaged using it for vertical or even horizontal wine tastings but now I'm more inclined, like this evening, to enjoy a couple of glasses of a white Burgundy followed with dinner with a somewhat disappointing glass of a much more expensive red. The disappointment wasn't from using the Coravin

      @@sheldoncollins6541 the best way to withdraw from wines with sediment is by leaving the bottle undisturbed on its side in a rack or a wine cradel. Then put the Coravin on the bottle without moving the bottle two much.
      When you have withdrawn half of the wine you have to pull the cork and decant as usual.

    Interesting, thanks for the demonstration. I'm thinking this would be very useful for fruity whites and lighter reds. But for a grand? That seems a hefty price. JMO.

    I recently found your channel and enjoying it a lot!
    I mostly drink Spanish wines in the 15 to 40 euro range. Do you think a (more affordable) device like this would be a good thing to get? I do find myself in the situation occasionally that I don't open a wine because I/we likely won't finish it that night.

    Loving Coravin, but don't see the value add of model eleven, in particular in light of the much higher price point. What works extermely well mechanically now gets much more complex and potentially error prone. I'm sure pretty no one will use the app after a few times of playing around, and who knows whether in 10 years the app will still be maintained, or whether bluetooth still will be the choice. Seems to me a bit like moving away from their core competency, with both the company and the clients not better off...

    Thinking about getting one for a while by now but it surely won't be that version (maybe model three) because I think also this one might be pretty cool 1000 € is definitely to expensive. Anyway, thanks for showing it to us!

    Hi Konstantine, good video. I have used Corovin and I think it's a great tool. But in my experience all wines start losing some their qualities after the second week of accessing them with Corovin. Some wines last more than others. Which is why I find hard to understand how a wine has not changed at all after 8 months..? Where am I going wrong? Thank you!

      Do you purge your coravin with a little push of argon everytime before you insert the needle into the cork? And also, only the Timeless models in combination with natural cork work for long time preservation, the screw caps and the pivot model preserve only for a few weeks.

    Love the review, Konstantin! Quick question for the Model 11 and Coravin in general - if I pour from different bottles on the same night, is there any risk of wines mixing with any residual wine left in the needle? Do I then have to rinse/clean the system in between pours?

      Thanks! The needle self cleans by pushing a little argon through the needle after every pour. If you want to be sure you can rinse it under water too. I never had an issue with mixing wines or contamination but it could happen.

      Yeah, maybe there is residual wine in the needle say about 0.01ml, but all that will flush away with a hint wiff off argon before a next wine shot!

    vielen Dank für das schöne Video.Ich benutze Coravin auch schon länger; für Weisswein perfekt, problematisch doch bei Rotwein älteren Jahrgangs, sei es ein Bordeaux oder ein Burgunder. Durch das einströmende Argongas wird das Depot immer aufgespült und gelangt das über die Nadel in das Glas. Das beeinträchtigt natürlich sehr den Geschmack. Wie hast Du dieses Problem gelöst?

      Danke! Bis jetzt sind die Erfahrungen gut, aber es gibt auch ein paar Dinge die stören. Wenn man das Gerät nicht permanent benutzt und dann ist der Akku leer nervt es und ich hatte Probleme mit dem Ausschank, wenn am Ende noch etwas Wein rauskommt. Insgesamt benutze ich weiterhin das Original am liebsten, um ehrlich zu sein. Ich sollte vielleicht noch ein Video darüber machen.

    Great content! I've been meaning to get a Coravin for a while now, but have yet to pull the trigger. I'm in the restaurant industry and I'm interested in the Coravin for my personal home use. Would you recommend the model 11, 3, or 6 for my purposes?

    How would you compare the current Model 6 vs the Model 11? Is the 11 worth the premium? Also, the 11 uses a different needle system and it appears that the premium needle for the Model 5/6 is not available for the Model 11. Do you know why the two different needle systems and if the premium needle for the Model 5/6 is comparable to the fast flow needle for the Model 11?
    Another things I haven't really seen many details on is the software? Is it at all useful? Looks like all it really does is give you stuff like pairings, which I could take or leave. Are there any software features you found valuable that I've overlooked?
    It's also been several months since you reviewed the Model 11. Anything new to add?

    I have a Model 2 and a Pivot, but this Model 11 looks so fancy that now I have a new earthly desire keeping me from reaching Nirvana. I saw that you mentioned in a more recent video that you still prefer your trusty Model 8, so after owning the Model 11 for a year how do you feel about it now? Do you still like it and use it?

    I dont understand what this is for, why would anyone have extra wine? A Reidel sommelier series glass holds 32 ounces, a bottle holts 24 onces, so there is no need to save extra wine.

    few times i've noticed a little cork bleed after placing the bottle back on its side. this is after it sat and rested for a while after poking. not flowing but a trickle of wine stain that felt sticky. does this mean the cork did not seal back and i need to drink the bottle soon? thanks for your content!

    Wondering if not being able to purge gas before needle insertion on the model 11 causes degradation issues?

      Good question. It might have an impact but I have not noticed any problems so far.

      I emailed Coravin about this and this is what they told me:
      "I have followed up with our engineering team to get the exact method the M11 auto purges.
      When you first turn the M11 on you can hear the hiss of gas as the needle auto purges. Also Model Eleven has an automatic purge that will activate if the device has been sitting idle for more than ~ 10 minutes. There is no separate action that you need to take.
      Thank you for the suggestion, I have also passed your feedback to our engineering team to consider for future modifications."
      I had suggested, perhaps to give others peace of mind, that a quick "double tap" of the button release a bit of argon gas to purge the chamber, though according to the information he provided, such a feature would likely be unecessary.

    Man, I bought the model 11 last year in the US on ebay for 350$, completely new, probably "fell out of the truck" or something, haha...however, its a bloody great device and I caress it as it was my own child. I spoke to one of the guys who helped inventing this model and he said that they havent hardly sold any of those models. Probably too expensive...nevertheless, I highly recommend it! Good content BTW!

      Good deal! Yes, I like it too. A bit more tech than my old model 8. I am not sure how well it sells though... I have not seen it much in the wine world so far.

      @@KonstantinBaumMasterofWine it seems to be more gas-efficient than the older models as well. If you set the 'pour-speed' on low via your smartphone, the capsules seems to last a very long time. Depends of course how much cases you drink per week!

    Hello Konstantin - First time viewer and I appreciated your video! I have a client who would like to open a large format bottle for an event and wants to be able to save wine not used. Of course holding up a huge bottle will be challenging for the period of time it will take to empty a few liters worth of wine. Do you recommend trying this? I figured it won't hurt to decant for a bit before serving. Can you estimate how many bottles can be poured from one gas capsule? Thank you for any advice! Kristen

    I have never had a wine that has remained unchanged under coravin for more than 6 weeks plus blunt needles very Quickly. The screw cap option is useless .

    I am not sure why, but I noticed that a couple of times after using coravin the taste of the wine worsened a lot in a week or so, giving it this strange aroma which I will define as rotten orange. Any idea what's happening? Since then I am scared to use it on good bottles😭

      That is not good. Are you rinsing your Coravin after every use and cleaning it with warm water every now and then? Hygene is very important and residue from the previous wine can spoil the next.

    The first coravin model (1000 or eight) was the best coravin ever made. All the newest models feel cheap and they are in fact cheaply made. I have used almost all of them and I always come back to the very first model. The model 1000 or eight feels just right, nice weight, solid construction, Almost all made of metal, it looks and feels a high end product. The model 11 is just not worth the $$ they went too far with the bluetooth, apps. is plasticky, big and you can only use one type of needle instead of swapping to the vintage needle.

      I often find bluetooth apps a bit gimmicky in general. I don't really want to take out my phone, go to the app, wait 5 seconds until it opens etc. If it only shows the level of gas and lets you adjust it, then a small LCD display would have been enough.

    I don't understand the part that the cork seals itself.

      Cork is an amazing substance. It is capable of withstanding pressure and maintains it flexibility even after years. The needle only creates a small hole in the cork and within seconds the cork seals the hole by expanding. You can normally put the bottle in a horizontal position right after you used Coravin. In some cases you should wait a bit before putting the wine back on the shelf.

    Oh, big question: Does it work and preserve wine for days, keeping the wine fresh tasting? How does this compare to a vacuum wine cork that costs $5.00 U.S. dollars??

      It preserves wine for months or even years. A vacuvin could not do this.

      The foodsaver vacuum cork is the best one I've found but it doesn't keep wine as well as the Coravin. I'd use the former for wines that you'll drink within a week or two or are under $20/30.

    Hallo Konstantin, für meinen Freund der ein absoluter Weinliebhaber ist möchte ich gerne einen Coravin kaufen unser Keller ist mittlerweile zum Weinkeller geworden :D da darf der coravin nivht fehlen. Ich bin am hin und her schwanken zwischen dem von dir vorgestellten Modell oder dem Timeless 6+ . Ich kannst Du mir helfen ?

      Ich bin zwar nicht Konstantin aber auch langjähriger Coravinnutzer und von der reinen Konservierung ist das Modell 6 wie auch die früheren Timeless Modelle dem Modell 11 ebenbürtig. Ich persönlich nutze auch lieber meine mechanischen Coravins (2 und 6) als das Modell 11, bei letzterem ist z.B. gerne mal der Akku leer wenn man ihn nach längerer Zeit mal wieder benutzen will, es ist mehr dran, was kaputt gehen kann und irgendwie habe ich auch bei den Mechanischen selbst mehr Kontrolle.
