  • Black Pepper Beef
    Ingredients
    Beef+marinade
    * 1.5 lbs beef filet mignon(cute into bite sized cubes)
    * 2 tbsp Shaoxing wine
    * 1 tsp soy sauce
    * 1/4 tsp salt
    * 1 tbsp cornstarch
    * 1 tbsp neutral oil
    Sauce
    * 1/2 cup beef stock
    * 1 tbsp light soy sauce
    * 1 tsp dark soy sauce
    * 1 tbsp oyster sauce
    * 1 tbsp ketchup
    * 1 tsp sugar
    * 1/4 tsp msg
    * 2 tbsp black pepper
    * 1/2 tsp Sichuan peppercorn powder
    * 1/2 tsp white pepper
    * 2 tsp cornstarch
    Rest of ingredients
    * 4 tbsp neutral oil
    * 1 red bell pepper
    * 1 green bell pepper
    * 1/2 onion
    * 3 cloves garlic(minced)
    * 1 tsp ginger(minced)
    * 1 tsp sesame oil
    Instructions
    1. Cut beef into cubes and marinade with ingredients.
    2. Prepare vegetables by chopping bell peppers and onions into petals and finely mincing ginger and garlic.
    3. Combine sauce ingredients in a bowl.
    4. Heat 2 tbsp of oil in a hot wok and sear beef for 3-4 minutes making sure the beef has a nice crust.
    5. Remove beef and add more oil to the wok. Sauté the garlic, ginger, and vegetables until slightly translucent(2 minutes) then add back the beef and the sauce.
    6. Once thickened finish with sesame oil and enjoy.

    Great dish, just a little change will make the overall eating experience better.
    When u marinade the meat, don't use the oil as it will coat the meat and disencourage all the seasoning and liquid from entering the surface level of the meat. Just marinade it without oil and add the oil, stir it around to form a coating right before cooking. The oil coating also keep water from evaporating, helping the meat not going dry

      Great advice. Another to is to add a little baking soda to the marinade to velvet the beef

      the reason here you add oil is to prevent the beef from getting dry, thats why you add oil last (its a very common chinese cooking technique called oil sealed)

    Ive watched some of your videos and I just don't get how most people can have all these ingredients or can actually get them? 30 minutes isn't simple nor cheap. It's like a $100 grocery list, sometimes visiting more than 1 grocery store, then hoping you bought the right asian brands and stuff of right quality... There's like some entry list. I think you should make a video stapling all the necessary ingredients for all the meals. Like spices and sauces and stuff, the must have stuff.

    Is there an alternative you could recommend to the wine? I'm really not confident cooking anything with liquor/alcohol, and as much as possible I'd like to avoid wasting food 😭 also, you have good content, it'd be much appreciated if you could please share any 30-minutes or less dishes that you may have :)

      If your ok with just the trace amounts, you can use red or white wine vinegar and just dilute it with a little water. Lemon juice works as well and you can also dilute with water depending on the acidity level you prefer. But if you're fine with it, you don't have to add water.

    Dark soy sauce is also sweet and so is oyster sauce and tomato ketchup/sauce . Like that wasnt enough sweetness you had to add sugar as well....

    There is no way in the world, absolutely no way, this dish, as good as it looks, takes less than 30 minutes to prepare. If the clock starts when you get out of your chair to start the meal most if not all of those 30 minutes will be taken up with gathering the ingredients from your pantry/fridge, measuring them out and cutting and chopping the meat and aromatics. All that before you even think about applying heat. I’ve been cooking as a serious hobby for many years and I’ve found almost without exception every recipe takes longer than the overly optimistic time estimates stated in the recipe. I’m not saying people shouldn’t make this dish, I might try it myself, but they should be prepared to spend a bit more time getting it done than this vid promises. But that’s not a bad thing.

      I don't know what you do during cooking that could possibly stretch this recipe out beyond 30 mins. This is one of the few recipes where 30 mins is 100% realistic.

My comments were off the mark. If not, I challenge you to try. Let me know how that works out for you. In answer to your question I don’t view cooking as a race but rather take a leisurely approach. Like I said, it’s a hobby. I don’t rush just to prove a point.

    I work shift hours and only have few hours in between my shifts but i really enjoy cooking at home, it's the highlight of my day. This is my go to recipe, but i always add some potatoes and shitake mushrooms. Oh and some chilli 😁

    Fantastic recipe. It was delicious. Very easy to follow your recipe instructions. For my personal preference I’ll leave out the light soy sauce because sodium in the stock etc.

      I typically just leave it out, it still tastes good. To add some tartness you would get from the wine you could try adding some vinegar
