I will be Honest to Say Taco Bell is Not Mexican Food. I do use Their regular ingredients for additions, but they are Way cheaper than just Doing it Yourself. Bottom line it's for Lazy people who don't want to Bother in the Kitchen. My best takeaway was Cowboy Kent adding Butter, with Sour Cream and a little Taco seasoning to the can of Refried beans...👍 I will definitely be trying that simple mix.!!!

Here in Mexico we do have a "Mexican pizza" variation/especialty, which actually has very similar ingredients: a bean sauce instead of tomato, cheese, Mexican chorizo, pickled jalapeños and bacon, more or less depending on the region3

I just made this again for my daughters, one of whom is a senior food scientist for a major flavors company. She gave it a 10 out of 10 and wouldn’t change a thing. I made this for my family this weekend and even my Texan wife raised an eyebrow in respect at how good this came out. Wow! Every element was individually like a better version of the Taco Bell ingredient, whether it was the tortillas or beans or sauce or meat.
TB has been shrinking their portions for years now. The Mexican Pizza really did used to be awesome, but they started lowering the quality, then took it off the menu and only recently brought it back, but it's in the form you found it. They did the same thing with the Enchirito also.
Years ago we accidentally discovered how to precisely duplicate the taste of Taco Bell taco meat. Brown your ground beef with some onion, pepper, chili powder, whatever. When it’s done, dump it in a food processor and grind it into a paste. Instant fast food taste! I guess it’s the fats distributed through the mix, but a few seconds of processing completely alters the flavor.
Please Please Please make the "Southwestern Eggrolls" from "Chili's"...I can't be the only one that loves those. Excellent video by the way, can't wait to recreate it!

My wife loves the Mexican pizza from Taco Bell, but she loved this recipe more. I made a couple of changes. I got a can of Rotel tomatoes and used some of the juice in the beans and did a layer of the tomatoes before adding the cheese on top. I also used sliced black olives and some fresh cilantro . The sour cream and butter made a big difference in the beans. One pizza was very filling.
The trick to refried beans in a can (or any solid stuff in a can like cranberry sauce or dog food) is to open one end and then use the thing on the other end of a bottle opener (the pointy part that you would use to open a tomato juice or something similar can with). That lets air in behind and it just slides out. You can also just open both ends and use the bottom to push out the top.

I make a breakfast version of this dish but on top I put scrambled eggs, crumbled chorizo, three blend cheese, Jalapeño or Green Chiles and if I'm in the mood some fresh home made Pico De Gallo if not just regular Medium or Hot Salsa. I also put cheese on the refried beans between the tortillas.

#1. You can get the big 12 inch tortillas at Walmart. #2. You don't have to fry the tortillas in oil to make them crisp. Using a microwave and a stick of butter (rub on the tortilla both sides after warm then cook till browned) does a better job and is tastier. #3. Use Chiletepins (official Texas state chili pepper) in sauce for "clean" heat (none of the overwhelming taste of chlorophyl like habanero peppers)
I actually like the crispier tortillas. I made them with the packaged flour tortillas and they were just too thick and not crispy enough for me. To me the crisp is what sets itself apart. So to try and get a crispier flour tortilla, I ended up buying the raw store bought flour tortillas and just rolled them a little thinner and fried that and they came out great. Have also made them with homemade flour tortillas rolled nice and thin, and that gave me a good crispy tortilla too. Nice video! I do agree with you on the size needing to be bigger. =) Thanks for sharing
That thing taco bell call maxican pizza same as the hard shell tacos and all they sell is a tex-mex contracción, in México we don't eat that, however yours looks so good and will try to make it.

I don't know if it was mentioned before, but my youngest son taught me a trick about getting the refried beans out of the can- poke a hole in the bottom of the can, it breaks the 'vacuum' and they slide right out. This recipe was awesome, as are all of the ones I tried. Thank you for your spin on this!

I’m finished with supper, and just relaxing for a bit before I go and clean up my mess. Tried to make the taco pizzas, I had to swap out a couple of items I didn’t have. I made a mistake, by mixing up the instructions, I made a mistake in adding the ingredients for the sauce into the bean😢 but it worked out well and was really good. I didn’t have a fresh jalapeño so I used a fire roasted one that was frozen and I covered the top with a generous helping of sliced black olives 🫒 it was delicious. Thank you Mr Kent for your inspiration. I wish I could add a picture here. God’s blessings to you and your family.
Being a former TB employee (from 1994-96 I have made my fair share of Mexican pizzas! I'm embarrassed for TB and what they served you! But my friend you definitely showed them up with your pizza! I was salivating watching you cook haha
Just made this and it was so good! My hubby really liked it. I didn't have any of that corn masa so I sprinkled jiffy mix cornbread on the tortillas, gave them a sweet flavor. Thanks for this fabulous recipe! ❤
My hat is off to you and your wife for all the outdoor cooking you bring to all of us. We live in Oregon at the end of the trail and we cook outdoors all the time. Elk, deer and fish is on our menue most often in our own outdoor kitchen. I use my grandmothers cast iron in many of our events events and the smokehouse is over 100 years old. I made them with ground chicken tonight rather than ground beef, because my kids like chicken better. It was actually pretty good. There is so much flavor in the recipe that the difference between beef and chicken is pretty minimal. I made the ground beef version a couple of days ago. Both are amazing. I had a little trouble getting the corn masa to stick to the flour tortillas so I rubbed a little peanut oil on the tortillas before adding the corn masa and it helped a lot. Another home run by Kent and Shannon!
This is homemade. Of course it will be better than anything from a fast food place. Kent adds love to his recipes, just like your mom would. Taco Bell in the past was better. Something has changed. Maybe cheaper ingredients. It does not taste like it did. They could learn a thing or two from cowboy Kent Rollins. I will be trying this recipe for sure.
33 years ago I used to work for Taco Bell when I was pregnant with my daughter. And it used to be really really good Mexican pizza that black olives on it Some lettuce on the top but they put less and less in it. They used to go to the edges. They don't do that no more and they used to use taco seasoning in their meat. They don't do that no more. They don't put black olives on it. They're putting less and less on that Mexican pizza so it's not really a pizzas. Just something warmed up lol. You did a great job. I'm going to try your version because it looks yummy. Great job! In our CA area Del Taco competes with Taco Bell. Del Taco wins in most of the menue categories. Not only that, their various "taco sauce" packets are much better too.
You’ve definitely made some good looking tasty food there. I’ve eaten a lot of those Mexican pizzas and for those folks that don’t know, the Mexican pizza was discoed for a while. They brought it back recently and it was never quite the same as it was before. They’re now smaller, and they have less fillings, and they are very expensive for what you’re getting. … However, I really do like their light and flaky flour tortilla shell. The pizza tomato sauce is good enough for mild tastes and it’s not intended to be too spicy. The taco sauce that they carry in the little packets is pretty much the same as it’s always been, except the “Diablo“ flavor is the hottest one. You should try that the next time you go and ask for Diablo packets. Because, it’s very good and hot. … Now, Mr. Rollins, you may want to go down to Jack In The Box and get some of their 2 for a dollar tacos and smother it with the taco sauce that they have in the little packets. That taco sauce is my favorite. I wish they bottled it. …Your next video?
As a Taco Bell fan, I can attest to this. The Mexican pizza 2.0 is not as good as the original. Also @Deanna Walsh They do bottle all of their sauces, including the Diablo (though I've found it to be the hardest to find in the wild. Target online got ya covered for $1.99). I keep a Fire on deck at all times when I need me a mild hot sauce and I'm not looking to go for one of my "regret level" ghost pepper hot sauces. Also, they bottle all of their cream based sauces, too, like the Baja and the Chipotle. I highly recommend those on pretty much any home tex mex.
I have eaten Mexican pizzas for 55+ years. I brown ground beef with all the seasonings, Warm a can of refried beans. I warm a flour tortilla, then spread beans and add meat, sprinkle as much shredded cheddar to your liking, then put in oven or microwave until cheese is melted. Add onion, tomato, lettuce or any topping you would wantl. Add salsa (I love the very warm salsa) Then we enjoy We don't care for the crunchy tortilla. I really enjoy watching your show from East Texas
I've never tried to recreate the Taco Bell Mexican Pizza, so I learned a lot from this video such as the tortilla part. And how to make those canned refried beans better if I don't have time to turn Kent's charro beans into refried beans. But I want to contribute something. First, the "red sauce" on top of the mexican pizza is the same they put in their bean burritos. This is 100% different than what comes in the packets. All it is is red enchilada sauce. Use it where Taco Bell puts their "red sauce". Second, I have spent a lot of time and have perfected a Taco Bell taco meat recipe. Here it is. For 1lb of ground meat: 1 tbsp chili powder 1 tbsp paprika 1/2 tsp cumin 1/2 tsp garlic powder 1/2 tsp onion powder 1/4 tsp cayenne pepper 1/4 tsp salt 3/4 cup water Brown the meat. Add all the dry powders and water. Mix well, bring to boil, then simmer until most of the liquid evaporates off. Not too dry, though (refer to taco bell tacos for consitency). If you want to get fancy and make it "better", then use real onion instead of powdered, and consider adding a touch of coriander and Mexican oregano. Last note: if you want to go old school Mexican Pizza, Taco Bell used to put sliced black olives, chopped green onions, and a dollop of sour cream on top.
We're like the same person! I was raised on a ranch in noble county, I use cast iron almost daily, I make oklahoma sushi out of smoked salmon, and mexican pizzas!
Damn, I love me some Taco Bell and the Mexican pizza is a favorite for sure. Plenty of people say it's bad food all around, give you the bubble guts (never once happened to me in 36 years), but it's a weekly thing for me. A tip, if you'll allow me: get rid of them nasty canned beans. If you're tryna keep it all at the grocery store, get you some Isadora steam bag beans. They look just like the Uncle Ben's steam bag rice and should be right above the canned beans. I heat them on the stove, personally, but they beat the hide offa them canned catastrophes
They took that off the menu years ago and brought it back. That used to have green onions, olives and sour cream on it, but they got rid of that stuff. Cheap bastards. Corn tostada shells not flour. I won't eat taco bell anymore so I don't know what the heck they have now. I just know that they used to really deck that thing out. Cost like 2 bucks. I think its more like 5 bucks with less stuff on it.
I made these for my family last night. They were a hit. The only change I made is that I used ground bison as I found some on discount at the store. Love the recipes.

One little tip to keeping the tortillas from bubbling up, but staying crispy... Poke holes in it with toothpicks or the tip of a knife. Otherwise Great Video & Recipe 😊
While I worked at TB during my high school years I came up with a chicken Mexican pizza. Shell Beans Grilled Chicken Pico de Gallo Shell Red Sauce Cheese Throw in the broiler for 45 seconds. When it comes out add lettuce. It was freaking good 😊

I made one recently by accident. Had some leftover ground beef, flour tortillas, shredded cheese and hot sauce. So, I fried up the tortillas into a tostada and piled it on. Sometimes it's just about making food from whatever you got around.

I'm always grateful for a fast food restaurant when I'm away from home, have skipped a meal and can't otherwise get some food. And as I used to work at a Kentucky Fried Chicken about four decades ago, I know what hard, hot work it is in those fast food kitchens. But I agree - your Mexican pizza looks way more substantial and delicious than Taco Bell's. Nothing ever beats a home-made meal!
I'm gluten free & have yet to find a decent gluten free tortilla that doesn't fall apart. So I made these with tostados. SO GOOD!! My whole family loved them - from my husband to my 2-year old!!

That’s delicious. I would use Rotella tomatoes with chilies instead of regular tomatoes 😊

That thing taco bell call maxican pizza same as the hard shell tacos and all they sell is a tex-mex contracción, in México we don't eat that, however yours looks so good and will try to make it.

I don't know if it was mentioned before, but my youngest son taught me a trick about getting the refried beans out of the can- poke a hole in the bottom of the can, it breaks the 'vacuum' and they slide right out. This recipe was awesome, as are all of the ones I tried. Thank you for your spin on this!

I’m finished with supper, and just relaxing for a bit before I go and clean up my mess. Tried to make the taco pizzas, I had to swap out a couple of items I didn’t have. I made a mistake, by mixing up the instructions, I made a mistake in adding the ingredients for the sauce into the bean😢 but it worked out well and was really good. I didn’t have a fresh jalapeño so I used a fire roasted one that was frozen and I covered the top with a generous helping of sliced black olives 🫒 it was delicious. Thank you Mr Kent for your inspiration. I wish I could add a picture here. God’s blessings to you and your family.
Being a former TB employee (from 1994-96 I have made my fair share of Mexican pizzas! I'm embarrassed for TB and what they served you! But my friend you definitely showed them up with your pizza! I was salivating watching you cook haha

Just made this and it was so good! My hubby really liked it. I didn't have any of that corn masa so I sprinkled jiffy mix cornbread on the tortillas, gave them a sweet flavor. Thanks for this fabulous recipe! ❤

My hat is off to you and your wife for all the outdoor cooking you bring to all of us. We live in Oregon at the end of the trail and we cook outdoors all the time. Elk, deer and fish is on our menue most often in our own outdoor kitchen. I use my grandmothers cast iron in many of our events events and the smokehouse is over 100 years old. The Mexican Pizza is the only reason I go to Taco Bell. They took it off their menu a little while ago and brough it back. 🤣
I made them with ground chicken tonight rather than ground beef, because my kids like chicken better. It was actually pretty good. There is so much flavor in the recipe that the difference between beef and chicken is pretty minimal.
I made the ground beef version a couple of days ago. Both are amazing. I had a little trouble getting the corn masa to stick to the flour tortillas so I rubbed a little peanut oil on the tortillas before adding the corn masa and it helped a lot.

This is homemade. Of course it will be better than anything from a fast food place. Kent adds love to his recipes, just like your mom would. Taco Bell in the past was better. Something has changed. Maybe cheaper ingredients. It does not taste like it did. They could learn a thing or two from cowboy Kent Rollins. I will be trying this recipe for sure.

33 years ago I used to work for Taco Bell when I was pregnant with my daughter. And it used to be really really good Mexican pizza that black olives on it Some lettuce on the top but they put less and less in it. They used to go to the edges. They don't do that no more and they used to use taco seasoning in their meat. They don't do that no more. They don't put black olives on it. They're putting less and less on that Mexican pizza so it's not really a pizzas. Just something warmed up lol. You did a great job. I'm going to try your version because it looks yummy. Great job! In our CA area Del Taco competes with Taco Bell. Del Taco wins in most of the menue categories. Not only that, their various "taco sauce" packets are much better too.
You’ve definitely made some good looking tasty food there. I’ve eaten a lot of those Mexican pizzas and for those folks that don’t know, the Mexican pizza was discoed for a while. They brought it back recently and it was never quite the same as it was before. They’re now smaller, and they have less fillings, and they are very expensive for what you’re getting. … However, I really do like their light and flaky flour tortilla shell. The pizza tomato sauce is good enough for mild tastes and it’s not intended to be too spicy. The taco sauce that they carry in the little packets is pretty much the same as it’s always been, except the “Diablo“ flavor is the hottest one. You should try that the next time you go and ask for Diablo packets. Because, it’s very good and hot. … Now, Mr. Rollins, you may want to go down to Jack In The Box and get some of their 2 for a dollar tacos and smother it with the taco sauce that they have in the little packets. That taco sauce is my favorite. I wish they bottled it. …Your next video?
As a Taco Bell fan, I can attest to this. The Mexican pizza 2.0 is not as good as the original. Also @Deanna Walsh They do bottle all of their sauces, including the Diablo (though I've found it to be the hardest to find in the wild. Target online got ya covered for $1.99). I keep a Fire on deck at all times when I need me a mild hot sauce and I'm not looking to go for one of my "regret level" ghost pepper hot sauces. Also, they bottle all of their cream based sauces, too, like the Baja and the Chipotle. I highly recommend those on pretty much any home tex mex.
I have eaten Mexican pizzas for 55+ years. I brown ground beef with all the seasonings, Warm a can of refried beans. I warm a flour tortilla, then spread beans and add meat, sprinkle as much shredded cheddar to your liking, then put in oven or microwave until cheese is melted. Add onion, tomato, lettuce or any topping you would wantl. Add salsa (I love the very warm salsa) Then we enjoy We don't care for the crunchy tortilla. I really enjoy watching your show from East Texas

I've never tried to recreate the Taco Bell Mexican Pizza, so I learned a lot from this video such as the tortilla part. And how to make those canned refried beans better if I don't have time to turn Kent's charro beans into refried beans.
But I want to contribute something. First, the "red sauce" on top of the mexican pizza is the same they put in their bean burritos. This is 100% different than what comes in the packets. All it is is red enchilada sauce. Use it where Taco Bell puts their "red sauce".
Second, I have spent a lot of time and have perfected a Taco Bell taco meat recipe. Here it is.
For 1lb of ground meat:
1 tbsp chili powder
1 tbsp paprika
1/2 tsp cumin
1/2 tsp garlic powder
1/2 tsp onion powder
1/4 tsp cayenne pepper
1/4 tsp salt
3/4 cup water
Brown the meat. Add all the dry powders and water. Mix well, bring to boil, then simmer until most of the liquid evaporates off. Not too dry, though (refer to taco bell tacos for consitency). If you want to get fancy and make it "better", then use real onion instead of powdered, and consider adding a touch of coriander and Mexican oregano.
Last note: if you want to go old school Mexican Pizza, Taco Bell used to put sliced black olives, chopped green onions, and a dollop of sour cream on top.

Damn, I love me some Taco Bell and the Mexican pizza is a favorite for sure. Plenty of people say it's bad food all around, give you the bubble guts (never once happened to me in 36 years), but it's a weekly thing for me. A tip, if you'll allow me: get rid of them nasty canned beans. If you're tryna keep it all at the grocery store, get you some Isadora steam bag beans. They look just like the Uncle Ben's steam bag rice and should be right above the canned beans. I heat them on the stove, personally, but they beat the hide offa them canned catastrophes
They took that off the menu years ago and brought it back. That used to have green onions, olives and sour cream on it, but they got rid of that stuff. Cheap bastards. Corn tostada shells not flour. I won't eat taco bell anymore so I don't know what the heck they have now. I just know that they used to really deck that thing out. Cost like 2 bucks. I think its more like 5 bucks with less stuff on it.
I made these for my family last night. They were a hit. The only change I made is that I used ground bison as I found some on discount at the store. Love the recipes.

The most politest way of putting down Taco Bell and more specifically their Mexican Pizza I have ever seen. Absolute truth. Didn’t even comment on the absurd price. He didn’t just hold back punches, he held back shotgun blasts.
Former TB employee here. The sauce they use on the pizza is enchilada sauce/red sauce. I absolutely agree ingredients need to be spread out.

One little tip to keeping the tortillas from bubbling up, but staying crispy... Poke holes in it with toothpicks or the tip of a knife. Otherwise Great Video & Recipe 😊

Throw in the broiler for 45 seconds. When it comes out add lettuce.

Second, I love me some Taco Bell Mexi-pizza, and I always thought that's the way it should be, but I'm sure I am going to love yours more. Love what you and Shan do you have taught me alot.
I made one recently by accident. Had some leftover ground beef, flour tortillas, shredded cheese and hot sauce.
So, I fried up the tortillas into a tostada and piled it on.
Sometimes it's just about making food from whatever you got around.
Even in a challenge Kent is still kind, humble, and respectful. Love it.
I poke a few knife tip pin holes in mine. helps to keep them from bubbling up too. makes enough fixings up to have leftovers the next day. Mmm!

I'm always grateful for a fast food restaurant when I'm away from home, have skipped a meal and can't otherwise get some food. And as I used to work at a Kentucky Fried Chicken about four decades ago, I know what hard, hot work it is in those fast food kitchens. But I agree - your Mexican pizza looks way more substantial and delicious than Taco Bell's. Nothing ever beats a home-made meal!
I'm gluten free & have yet to find a decent gluten free tortilla that doesn't fall apart. So I made these with tostados. SO GOOD!! My whole family loved them - from my husband to my 2-year old!!
