We make something similar to this only we make pancakes instead and smother it in maple syrup. Pancakes, eggs sunnyside up, bacon and maple syrup. All stacked. Thank you for your recipe. :)
In high school I cooked in a mexican fast food restaurant. The first time I brought home tamales, my dad tut took one out of the wax paper wrapper and bit into it. Then said,"Hi ow the heck are you supposed to eat this thing?"😂 I had to tell him he had to peel the corn husk off first. He loved the spicey foods just like me.
instead of dealing with the cheese sticking to your spatula after you flip, you can instead toast, flip, cheese, cover. the cover will make it a sort of oven to help melt the cheese, much easier on your spatula.
...Mr. Kent....I have had something very similar to this, but it had Homemade Refried Beans on it, ... and a bit of Salsa ... ..and that is delicious with this. A well seasoned cast iron skillet and a scary sharp knife, that's a well equipped kitchen 👍 i would have used 2 eggs and i actually got the seasoning on a 20 year old lodge skillet to where i can usually flip the eggs restaurant style it took some cooking to get it there
I've been eating homemade breakfast burritos lately. Bacon, sausage, or ham (whatever I have available that day), with onion and bell pepper, some hot sauce and seasonings in the scrambled eggs and topped with cheese before rolling up in a burrito tortilla shell. Watching this, I might need to add this recipe to my rotation!
Going to state this upfront, I'm just a country boy from Mississippi that enjoys trying new foods and learning other food cultures but this reminds a lot of a huarache I've had in the past. If someone with experience cooking huaraches could either confirm that its the same or explain the difference, I would be grateful.

I'm thinking that I'm too lazy to make the chalupa base for breakfast. But I can see making up a batch and putting in the fridge. Then warming it up with the toppings. That would be an incredible breakfast. Or getting out the griddle on the week-end to make a big batch for the family.
