    My mom is old school Mexican, from the state of Chihuahua, and when I showed her your tamale video, she gave a nod and said in Spanish
    "Huh, that nice white cowboy actually knows how to cook Mexican food properly"
    I was amazed, that was high praise
    She said the same again when I showed her this video, and your tortilla making skills
    Your Mexican approved Señor Kent, not that you needed it anyway

    ❤I love hearing Kent talk. I was born and spent the first 8 yrs of my life in Eastern New Mexico so hearing Kent pronounce words we all said and still say is precious. There is definitely a language in the southwestern US...Oklahoma...Texas and New Mexico. Guess you could call it a drawl.😊❤

    In high school I cooked in a mexican fast food restaurant. The first time I brought home tamales, my dad tut took one out of the wax paper wrapper and bit into it. Then said,"Hi ow the heck are you supposed to eat this thing?"😂 I had to tell him he had to peel the corn husk off first. He loved the spicey foods just like me.

    I’m impressed, looking good. It’s missing something on top of it, guacamole and sour cream with a little more cheese for color. Or diced red chiles in stead of the topping of cheese; or both.

    Kent ya could melt that cheese just as well, without any sticking to the spatula or dripping in the pan by just slapping a cover on the pan. I love your channel. My first cooking experiences were over a camp fire, in boy scouts.

My father, a German immigrant who experienced the Depression in Germany and the USA, NEVER discarded bacon grease. Glad to see you making very good use of it.     Add some refried beans and salsa, and you'll have juevos rancheros. I eat them nearly every day. Green chiles in the masa is perfect.

    Great sunny morning Kent, Shannon and the furbabies! Tostado is probably my most favorite with beans, cheese, onion, salsa, sour cream and fresh avocado. Sometimes lettuce. I'm going to try to add an over easy egg for breakfast. Thanks ❤

    I'am making the best corn chip EVER. Eat your hearts out Frito Lays and Doritos > BRAKE YOUR TEETH ON THERE PRODUCTS. NOT MINE> Its easy as pie. Roll out you Masa dough and thin as you wish. The thinner the more enjoyable there are! Can cut them out any size, and shape, you wish. I LIKE THEM THIN AND CRISPY and fry them. Once to a golden brown put them on a paper towel. salt them or season them > That my secret. MASA DOUGH.. Then you can season them any way you plz. salt, garlic powder, jalapeno powder > WHAT EVER YOU WISH YUM

    She 'fried' corn chips,
    then added
    chopped serrano peppers,
    onions,
    tomatoes...
    salt & pepper,
    Scrambled it all,
    on a flour tortilla.
    I would have added cheese.
    Delicious.

    ...Mr. Kent....I have had something very similar to this, but it had Homemade Refried Beans on it, ... and a bit of Salsa ... ..and that is delicious with this.

    Kent, you should look into the "Chupaqueso" invented by a webcomic artist, but it's actually a dish he cooks for his family. The webcomic is called "schlock mercenary" drawn and written by Howard Tayler. He actually posted the recipe, would love to see your take on it.

    The Mrs. got a phone call during dinner which was important so I figured well I’m gonna put on me UA-cam and she was listening in the background. What’s that thing called I said oh honey you know Kent and I can’t pronounce anything. It sure does look good when you gonna make that ! my reply was I just added favorite seasoning ( Red River, Ranch, ) on that ribeye we’re eating right now. ( crickets )

    In Mexico we call em, Gorditas "little fatties" the corn masa should have butter mixed in with masa
    By no way is it Tex-mex.... usually it's served with eggs, refried beans, salsa, and a cheese similar to Mozzarella.
    Very filling meal, the country folk eat.

    We make something similar to this only we make pancakes instead and smother it in maple syrup. Pancakes, eggs sunnyside up, bacon and maple syrup. All stacked. Thank you for your recipe. :)

    Hey Kent, that looks great and I'll be trying it! Did you know that your plate and parchment method is a great way to make hamburgers all the same size and look purty for a barbeque? I do that all the time. It works really well to make the burgers the size of the buns and especially if you're making something like a Patty Melt on rye bread. That bread is huge! Your recipe looks delicious, and I'm headed to the store! Love to you, Shannon and the woobits.

    Best Breakfast is Homemade Sausage gravy, on top of Homemade biscuits, with a couple over easy eggs! Topped with a slice of American cheese on the eggs, extra gravy and diced tomatoes on top!! Mmm Mmm!! ❤

    I tried a Mexican Tostalupi tonight for supper. It was a little different from yours, because I did not want to use Turkey Bacon so I tried corned beef hash instead of the bacon. It was really good. ...and you're right. Those chillies really made it better! Oh yes. I also added Shiitake mushrooms, white and red onions. I had to go back for seconds too. Be sure and try my version too.

    Going to state this upfront, I'm just a country boy from Mississippi that enjoys trying new foods and learning other food cultures but this reminds a lot of a huarache I've had in the past. If someone with experience cooking huaraches could either confirm that its the same or explain the difference, I would be grateful.

    I make up new words for my food mash-ups too. Things like Tost-tacos, Tostalupas, Burrellenos and the list goes on. Never can tell what's gonna come out of my kitchen, but it's most usually tasty!

    Oh, I have a couple ideas! Mix the bacon & sausage up in the to-lupa dough. Cook, top with cheese, then instead of flipping it, plate it and cover with a hot inverted skillet to melt the cheese so it doesn't stick to the spatula. I'd add hash browns, more cheese & then the egg. MMmmmmm! Maybe some ham to to make it extra special.

    Kent i want to thank you man for being you brother. I seen the Beag there at the beginning, i lost my right hand man a couple days ago, Henry was his name. That pup loved my cooking so today I'm cooking the sadness away. My family's eating good tonight.
