@@jdopera My Dad called them Cackleberries when I was a kid 75 years ago. I was so used to that name that it went right over my head when you said Cackleberries. I was jotting down the recipe when it struck me you meant eggs from a chicken. We had other fowl that Dad just would say check under Wilma see if she left us an egg. Wilma was a duck that didn't like men Dad or my brother who named her. She pooped on me more times than I care to remember and I think that's more why Dad didn't reach under her.lol. She was a dead ringer too!

Love adding mayo to scrambled eggs, have always done that....but I also add sour cream instead of heavy cream. Light and fluffy every time. And I beat them the old-fashioned way, with a fork!! 😂

The best thing about living in Mexico is that you can buy freshly made chorizo from every neighborhood “carnicería” or butcher shop. It is by far the best chorizo you can get anywhere, With all due respect to Shannon, Basque chorizo included!
P.s. the two best smells in the world are bacon and Mexican chorizo.

I loved the whole video, but the best part was you saying take your time with scrambled eggs. Your right too many people try to rush them and they end up dry and over cooked.
I cook my scrambled eggs low and they take some time. I have had people confused that my scrambled eggs weren't done yet.
Your explenation spot on. They should be a nice curd consitency, and if they aren't a bit wet when you take them off the heat than they will be overcooked on the plate.

Thank you for taking me back to my roots.
I lived in Bandera, Texas for 8 years. I ate tortillas instead of bread or biscuits. i ate tortillas from every Mexican joint in fifty mile radius. The majority of my friends warmed them in a skillet then saved them in a styrofoam covered container with a lid to keep them nice and warm and soft. So I would say they are really all you need and they're made from recycled plastic. I paid $1 for mine at Boyles Store. I left It in the kitchen for the next tenant in the house I rented.I cleaned it with a drop of dishsoap, a capful of bleach and some hot water. Swirl a clean dish cloth around inside and outside to wash it, rinse well in cool water and air dry it. Ready for another month of tortilla warming. There ya have it Kent...the styrofoam tortilla warmer. Works with any color cornmeal...white, yellow, red, blue...etc.
That's not Styrofoam it's recycled plastic

@@pharoahdust I didn't drive so went with friends shopping in SA. Visited Mexican friends there and enjoyed real Mexican food and real hospitality. I love the River Walk with the Mariachi bands. Beautiful harmonies. Never did the paddle boats, but did take my late husband on the tour boat. He liked the El Markado. We had a great time. One of my Bandera friends served as guide. It was so hot we had a whole pitcher of sangria with lunch. My husband left the drinking to us girls...designated driver.... I still love Bandera and have good and a couple bad memories. Some really funny ones too... Thanks for commenting... do they still have that giant cowboy boot in San Antonio? It was in a shopping mall. There was some controversy about it breeding mosquitos. I used to go to an Irish Pub for great Italian Pizza. They had these Greek statues in the ladies room and if a lady tried to peek under the leaf all these lights would flash telling everyone downstairs what you'd done. You of course didn't know about the booby trap and humiliation. I never peeked...I'd seen plenty of Greek statues...lol. Plus my friend clued me in, she'd peeked her husband told me later!!

Hell yeah!!! Love Peyton's chorizo. My wife got me hooked on it. I let a couple of sticks and a few pounds of ground beef sit and warm to room temp. I then hand blend both together in a metal mixing bowl. I then form up a few patties and make some chorizo burgers. Started doing this back in 2010.
I just do a hodge podge of stuff for my breakfast tacos.. it's a "whatever I have in the fridge" mixture with scrambled eggs.
My scrambies tip is in regard to timing. Don't cook them til they look done. Turn off the heat when they look 3/4ths of the way done. Once the heat is off, remove the pan from the burner as well, keep stirring them as you go. Get that steam under control. As you do this, add whatever mix ins you desire such as scallion or cheeses.

My wife used Garcia chorizo it tastes really good.We don't get it in Al but when we lived in Texas it was readily available. My mother in law used Rodriguez brand it had a great taste too. It started to get hard to find that's when my wife started to use Garcia brand. Thanks for the wonderful fine dinning you create

Chorizo is big around here. I'm "just ok with it"...I prefer homestyle sausage, or vension/onion/fennel sausage
But remember, in am in a southern FL...it's a second world country here, i'm surprised they aren't eating iguanas and free range chickens crossing the street .. or even the other people.

Mayonnaise is more or less an emulsification of eggs and oil, so I suppose the net effect is adding oil without frying the scramble.

It never ceases to amaze me how much cooking a corn tortilla in oil makes it so much stronger and more flexible. I tend to cook mine in olive oil or vegetable oil, for health reasons, but you need that oil. Plus, you really don't need very much oil.

Cute little pooch, reminds me of the Shihtzu we loved for 14 yrs before we had to say goodbye. Very good looking Tacos Kent, I bet the taste is scrumptious. Them there cackle berries sure came out fluffy. Burnt garlic and burnt beans are a big turnoff for me.

I love, love chorizo. I cook chorizo then mop up the grease with some paper towel and fold in some eggs and mix together and put in a large flour tortilla with cheese and toast it in a pan with some butter on the tortilla and serve with shredded lettuce, tomatoe and more cheese on top with a side of sour cream. Truly sublime with Pica de Gallo, Guac, and more cheese on top and some chopped green onion. Bueno! 🌯

We would mix in a hand full of grated cheese when the eggs were about half done. Our kids liked them "uber cheesy" so sometime 2 handfuls. I'll have to try mayonnaise.

I absolutely love your videos! I have used many of your recipes as is, but I have also found ways to put my own spin on them after trying them. I like to think of how someone cooks as the personal signature of the soul. Sometimes, they might add an extra loop in there. I've added many loops to a BBQ sauce I had made before, with only it's good many times to an "OMG" that is good. I still wasn't done. I modified it even more added some heat as well with Jalapeño, Serrano, and Habanero peppers seeds and all for the first time. Surprisingly to not just myself but everyone else, it tasted just like the unspiced sauce. Then, the heat creaped in but was comfortable to those that can handle basic spicy. The heat was just enough to wake you up and not last longer than a minute or two. I actually have my secrets to that part until I can duplicate it multiple times as this is the first time and without actual measurements.
I used that Chutney for the first time.. WOW!! That stuff is awesome!!!!
