    Making the broth:
    6 quarts warm water
    3 lbs neck bones
    3 oz dried shrimp
    10 small dried squid
    6 inches daikon radish, peeled
    4 cups pork broth
    1 Tbsp salt
    2 Tbsp sugar
    3 tsp chicken powder (Lee Kum Kee)
    1 tsp black pepper
    2 Tbsp fried shallot, garlic oil ( • How To Make Fried Shal... )
    Minced pork:
    1 lb tender loin
    1 Tbsp minced garlic
    1 Tbsp shrimp paste with soya bean oil
    1 Tbsp vegetable oil
    1 tsp chicken powder (Lee Kum Kee)
    1 tsp black pepper
    Dry noodle sauce:
    1 can Coco Rico soda
    2 Tbsp Sriracha
    1/3 cup hoisin sauce
    1/3 cup less sodium soy sauce (Kikkoman brand)
    1 Tbsp sugar
    2 tsp chicken powder (Lee Kum Kee)
    1 tsp black pepper
    1 Tbsp sesame oil
    2 Tbsp fried shallot, garlic oil
    Noodles & Protein
    1 package dried Alimentary paste
    (Malony Harusame)
    1 lb shrimp 16/20
    2 lbs. pork leg skin on
    Squid tube
    Fish cakes
    Garnishes:
    Chinese celery (tan tau)
    Bean sprouts
    Chives (he)
    Chrysanthemum (tan o)
    Green onions and cilantro
    Jalapeño
    Fried shallot, garlic in oil

    Oh Mai,
    This looks like another great recipe. It looks like a clear or white Mi Quang. Can you explain the difference or why you like the alimentary vs tapioca noodles? I like that you share the name brands of some of your ingredients, that's helpful. When you're shopping for the fried fish cake is it bánh chiên that you look/ask for?
    Mai are you a professional chef or just the most amazing home chef on UA-cam?

    Hi Mai, thanh lam Trung hap tom thit roi ngon lam.., Mai oi theo cong thuc nau nuoc leo nay neu minh khg co 4 cups pork broth, Thanh chi nau xuong va nuoc thuong thoi thi nem nem nhu the nao? Mai chi minh nem se ngon hon vi minh nem nuoc leo do lam..tk Mai nha.

      +Thanh Nguyen Nau khoan 7 quarts nuoc di roi theo cong thuc cua Mai neu hoi lac thi nem them bot nem ga va muoi thoi.

    What are those pork bones called in Vietnamese . I want to get the right ones. Last time they give very very big bones. I like this size.

    Hi Mai, minh xem video nay luc 9:45am, tk Mai nhieu lam nha, minh se lam cho buoi hop mat gia dinh sap toi..., Mai oi neu minh luoc hu tieu nhat nhu Mai chi thi de hu tieu vao nuoc soi bao nhieu phut vot ra duoc? Và co rua lai nuoc lanh khong? Nguyen xin Chua chuc lanh cho Mai...mon moi nho goi cho minh nha, tk.

      Cam on Thanh nhieu nhe! Neu dung hu tieu giong Mai thi luoc nhanh lam tu 2-4 phut khong can rua nuoc lai, chi cho dau toi vao la duoc. :)

    Hi Mai! if I were to skip the shrimp paste with soya bean oil for the ground pork will that change the flavor of the dish? or is that one recipe that is required for this dish?

      You don't have to use it and it wouldn't change the flavor:)
