I made this about a decade ago. It required so many ingredients, I never made it again. However, I sure love this soup. I always thought it was Vietnamese, now I know it's actually Cambodian. No wonder I have a difficult time finding it in Vietnamese restaurants. Will be on the hunt for a Cambodian restaurant now. BTW, I love it with egg noodles. So yummy!
In Vancouver, and this video helped me figure out the menu at a Cambodian/Vietnamese restaurant (Hủ Tiếu Hồng Phát). So even if I never take the time to make these more involved dishes, I do appreciate each video.
Go for it, Helen! Us non Vietnamese (or part, in my case) have nothing to compare it to so 'twould be delicious either way! (and mind you, I don't believe anything you ever made to be less than heavenly) :)

True story: I tried to make it and after a few times I was happy with the results. My baguettes looked very close to the ones in Vietnam. Then I went back to Vietnam for Tet Holiday, and gosh, for the very first time, I felt how GREAT the Vietnamese baguettes are! LOL! Mine were nowhere to compare T_T So, I am very reluctant now if I should share my bagguette recipe hehehe

Hi Helen, very nice touch with the radish, I actually use dried seafood a lot to add a layer of complexity to my stocks, I am going next month to Ho Chi Min, Danang and Hoi An to go EAT!! esp Noodles! I will look for these noodles in Ho Chi Min, though I am pretty sure yours taste better

you can add some corn starch (1/2 tsp), stir to dissolve and simmer on low heat till thickened
