HU TIEU - Rice Noodle with Pork and Seafood Recipe | Helen's Recipes

- Ingredients (6 servings)
1.5kg (3.3 lb) pork bones
500g (1.1 lb) minced pork
500g (1.1 lb) pork lean or shoulder
200g (0.5 lb) pork liver
1 dried squid (size of your hand)
1/2 cup dried shrimp
1 onion
5-inch daikon (cut into 1-inch thick slices)
1 cube rock sugar (double size of your thumb)
5-6 liter of water (for the soup pot)
1 large garlic knob, minced
2-3 shallot, minced
1/2 cup preserved radish, minced
a dozen quail eggs
600g dried noodle (Hu Tieu Dai)
Fresh greens: garlic chives, lettuce, Asian cellery ( rau can), Chrysanthemum (rau tan o), beansprouts...
Black sauce: 3 tbsp oyster sauce + 3 tbsp soy sauce + 1 tbsp sugar + 3 tbsp water. Simmer on low for 2 minutes.

1 viên đường phèn (chừng 3 lóng tay)
5-6 lít nước
1 củ tỏi lớn
2-3 củ hành tím
1/2 cup củ cải muối
chục trứng cút
2 gói hủ tiếu khô (loại 300g)
hẹ, rau cần, xà lách, tàn ô, giá ..vv...
Tương đen: 3m dầu hào + 3m xì dầu + 1m đường + 3m nước. Đun lửa riu riu chừng 2 phút.

True story: I tried to make it and after a few times I was happy with the results. My baguettes looked very close to the ones in Vietnam. Then I went back to Vietnam for Tet Holiday, and gosh, for the very first time, I felt how GREAT the Vietnamese baguettes are! LOL! Mine were nowhere to compare T_T
So, I am very reluctant now if I should share my bagguette recipe hehehe

I made this about a decade ago. It required so many ingredients, I never made it again. However, I sure love this soup. I always thought it was Vietnamese, now I know it's actually Cambodian. No wonder I have a difficult time finding it in Vietnamese restaurants. Will be on the hunt for a Cambodian restaurant now. BTW, I love it with egg noodles. So yummy!

Hi Helen, very nice touch with the radish, I actually use dried seafood a lot to add a layer of complexity to my stocks, I am going next month to Ho Chi Min, Danang and Hoi An to go EAT!! esp Noodles! I will look for these noodles in Ho Chi Min, though I am pretty sure yours taste better

hi Helen, i tried the "dried" version with black sauce. it's great. 1 quick question though, my black sauce is very runny and liquid, how can i make it look thick like yours? Thanks
you can add some corn starch (1/2 tsp), stir to dissolve and simmer on low heat till thickened

Go for it, Helen! Us non Vietnamese (or part, in my case) have nothing to compare it to so 'twould be delicious either way! (and mind you, I don't believe anything you ever made to be less than heavenly) :)
