      @ketoserts I gotta say the custard is my favorite. It's so good! I made the Boston Cream Pie as well because I wanted more custard to eat 😄. It turned out so delicious too.

    This is very similar to a Filipino dessert, it’s called Brazo de Marcedes. I think the only difference is that we use Vanilla instead of lemon. I’m definitely going to try this. Thank you😊

      Wich comes from the traditional Spanish _Brazo de Gitano_ or _de Reina_ (queen in Spanish). Surely it has to do with the fact that in 1878 died the queen Mercedes soon after turning 18. The story behind her wedding with the king was very romantic and her tragic end after less than a year of marriage, being so young and pretty, impressed all the Spanish society a lot.

    So soft and pillowy I might say. I had this before way back in 2015 when we had our vacation in Southeast Asia and one of the countries we visited was the Philippines. There was a popular bakeshop in malls and I always order this whenever I had a chance. 😋 So delicious! I’ll be making this keto version tomorrow. So excited.     This looks so amazing. I can’t tolerate any sweetness, sadly. The only one I can is raw honey. Do you think if I replace the erythritol with honey will work?

      Hello Judith, unfortunately honey is not keto friendly. And if you’re not doing keto, I also don’t think honey will work in your meringue.

    Perfect timing. I was working on this type of cake . ill try your recipe. Question , will the erythritol powder crystallize after refrigeration? Also, How many minutes should you wait to cool the meringue so that it wont crack when you roll it? Thanks

      Hello dear, I always use powdered erythritol in all my pastry cream recipes and I don’t have any problems with it.☺️ For the meringue, just let it cool for 5-10 minutes. Enough time to generously dust it with powdered erythritol, flipping it, piping and spreading the pastry cream then rolling it.🤗

      I'll bet that your meringue cake will brown quickly, you should keep an eye on it and be ready to put a sheet of parchment over it if it starts to get too dark.

    I let my cake cool too long now the browned top is uhm...crackley(?)
    Any suggestions how to get the top to resoften so I can roll it? Otherwise I'm just gonna slather the custard on and serve it open face.

      @@ketoserts i baked it for 24 min, and it came out soft, but I had to run an errand and by the time I returned, the browned top had become stiff. I wrapped the entire cake in plastic wrap, and it softened up again, but not enough. I cracked when I tried to roll it. Also I didn't thicken the custard enough so it was still runny even after chilling overnight. But, it still tasted good.
      I think I may use less sweetener next time. It didn't seem that sweet in parts but altogether, Wow! Its powerful. I think my tastes have changed to enjoy less sweet now.

      You can use powdered gelatine to thicken up the pastry cream. Around 1 to 1.5 tsp. ❤️

    The vanilla custard is disgusting - xanthum gum made it have a super slimy texture and it did not thicken like in the video. The bottom egg white part turned out great and rolls beautifully

    Hice el bizcocho exactamente como indica la receta incluso con el mismo molde, el bizcocho quedó duro y bajó mucho se quedó plano, cuando iba a enrollarlo se agrietaba y rompía por llevar erithrytol. El relleno rico como cualquier otro pero el bizcocho un 0.

      ИНГРЕДИЕНТЫ
      4 больших яичных желтка
      1 чайная ложка (5 мл) ванильного экстракта
      цедра 1 лимона
      ½ стакана (100 г) порошкообразного эритрита
      1 ¼ чашки (300 мл) горячих густых сливок для взбивания
      3 столовые ложки (45 г) соленого сливочного масла
      ½ чайной ложки (1 г) ксантановой камеди
      Постепенно добавляйте горячие густые сливки, чтобы смягчить смесь яичного желтка. Варить и продолжать помешивать на медленном огне, пока не загустеет. Дайте остыть и поставьте в холодильник до необходимости.
      7 больших яичных белков
      1 столовая ложка (15 мл) лимонного сока
      ½ стакана (100 г) гранулированного эритрита
      порошок эритрита для присыпки
      Взбейте яичные белки сначала на слабом, а затем на среднем уровне до жестких пиков.
      Выпекать при 330°F (166°C) 20-25 минут, пока верх не станет золотисто-коричневым.
