Hello dear, I always use powdered erythritol in all my pastry cream recipes and I don’t have any problems with it.☺️ For the meringue, just let it cool for 5-10 minutes. Enough time to generously dust it with powdered erythritol, flipping it, piping and spreading the pastry cream then rolling it.🤗
I'll bet that your meringue cake will brown quickly, you should keep an eye on it and be ready to put a sheet of parchment over it if it starts to get too dark.
I let my cake cool too long now the browned top is uhm...crackley(?) Any suggestions how to get the top to resoften so I can roll it? Otherwise I'm just gonna slather the custard on and serve it open face.
@@ketoserts i baked it for 24 min, and it came out soft, but I had to run an errand and by the time I returned, the browned top had become stiff. I wrapped the entire cake in plastic wrap, and it softened up again, but not enough. I cracked when I tried to roll it. Also I didn't thicken the custard enough so it was still runny even after chilling overnight. But, it still tasted good. I think I may use less sweetener next time. It didn't seem that sweet in parts but altogether, Wow! Its powerful. I think my tastes have changed to enjoy less sweet now. Thanks for all the cool recipes BTW.

The vanilla custard is disgusting - xanthum gum made it have a super slimy texture and it did not thicken like in the video. The bottom egg white part turned out great and rolls beautifully

Hello Judith, unfortunately honey is not keto friendly. And if you’re not doing keto, I also don’t think honey will work in your meringue.
