私の趣味は読書と映画鑑賞とアクションフィギュア収集です。
watashi no shumi wa dokusyo to eiga kansho- to akusyon figyua shu-shu- desu.
Or you can also say 私の趣味は本を読むことと、映画を見ることと、アクションフィギュアを集めることです。
watashi no shumi wa hon o yomu koto to eiga o miru koto to akusyon figyua o atsumeru koto desu.
Collecting action figures:
アクションフィギュア収集( akusyon figyua shu-shu-) or アクションフィギュアを集めること(akusyon figyua o atsumeru koto)
