The EASIEST and FASTEST Balti Chicken Curry Recipe You'll Find ANYWHERE!

  • No joke, this is the quickest way to make a Balti Chicken Curry - and, as I'm a curry loving English chap, rest assured that it's authentic too. There's something magical about this iconic British/South Asian dish and I've captured it here with just the right amount of heat, a perfect spice mix and, of course, the green bell pepper. I've also got Ron Atkinson's autobiography which details his time in Birmingham - but sadly it's a dour read. It was, however, just about enough to offer some light comic relief while I was making this video.
    Full Balti Chicken Recipe (serves 4):
    2 large chicken breasts
    Butter or ghee for frying
    1 medium onion
    1 large fresh chili
    1 green bell pepper
    6 cloves of minced garlic
    25g fresh ginger
    3 tsps curry powder
    3 tsps coriander powder
    1 tsp cumin powder
    1 tsp garam masala powder plus extra for sprinkling at the end
    150ml cold water
    1 standard sized tin of chopped tomatoes
    1 tsp salt
    1/3 tsp pepper
    1 tablespoon lemon juice
    Stock
    Fresh herbs and more butter to finish

      My partner likes coriander, so I add it as a garnish for her afterwards just for her portion. And so harmony reigns

    Try adding a half teaspoon of bicarbonate soda to your meat it makes it extra tender like a takeaway

    Much as I hate to question the ideas of my favourite Smoggy bon viveur but.....I thought that certain ingredients in curry powder (turmeric for example) are fat soluble only and it's pointless prepping them in water in an attempt release the aromatics contained within them. Better to use ghee and/or olive oil would be a better catalyst (keep away from that overprocessed Ukrainian "vegetable oil " crap in any event)

      You're absolutely right about the spices being fat soluble. I like to put ground spices in water first to prevent burning as they hit the hot pan. I do use butter in the recipe which will help dissolve the fat soluble compounds in the spices.
