Roman-Jewish-Style Artichoke: Original (Kosher) vs. Gourmet with Marco Sed and Angelo Troiani
- One of the oldest Jewish community in Europe has lived in Rome for over 2000 years. The Jewish-Roman culinary tradition has had an enormous impact on Italian cuisine, with many original recipes becoming national heritage over time. Among these culinary inventions, the most recognized is undoubtedly the artichoke "alla Giudia" (Jewish style). Marco Sed, from the kosher restaurant Yotvata, tells the story of this vegetable dish along with the tricks for cooking it to perfection. The word then passes to Angelo Troiani, a Michelin star at the Convivio, who broadens the horizon with his "artichoke strike", a dish that includes all the artichokes of the Lazio tradition - Roman style, Marticella style and of course Giudia style.

Super consigliato!!
Thank you for such a wonderful video. I am researching my Jewish Italian ancestry, including the food and this video is a gold mine of information.❤ Beautiful channel.
yuck
@@nurlagrandeyou’re right, yuck. Jews belong in Israel and should never have been taken as slaves to Italy.
why yuck? @@nurlagrande
Makes me want to go to Rome and eat at your restaurant.
Thank you for highlighting a kosher restaurant! I love your videos and have your cookbooks, but always need to adapt to kosher. This was so rewarding for a long-time, kosher keeping fan of Italia Squisita

Incredible channel, marvelous chefs in the word, specially the italians. So beautiful
La mia verdura preferita dopo le melanzane. Adoro vedere nuove ricette con esso!
Great video! I’ve been making simple artichokes for 40 years, but never knew of these recipes! I’m intrigued here that every part can be used, in some form or fashion. I never deep fry because IMO it’s too dangerous and messy. But the second recipe shown seems to require much less oil than the first. Late winter early spring artichokes are just coming to market where I am, so I’ll give it a go! Thank you!
fabulous thank you

I am always amazed how the first human being looked at an artichoke and said, let's try this!
Bravissimi entrambi!
Bravo 😊
Una domanda: come si chiama la canzone in sottofondo utilizzata durante la preparazione del secondo carciofo? Grazie
Comimos ahí absolutamente excelente
Grazie
omg, that looks ridiculously delicious!!!!!
Chef number one! Quanta energia!👍👍👍👍
Molto interessante
Yes. His hands give people cancer.😂
gorgeous weather
Here in Rome we are facing a dramatically good winter.
It is very warm just like spring and all the mountains in the center of italy, that go up to more than 2000 m., are completely free from snow.
Maybe you need to abandon your car and go by bicycle. Bicycle saves the climate !
@@14rocks93 totally agree bro

stupendo
Molto interessante.
Io coltivo i carciofi in Brasile! 🇧🇷 🇮🇹
Ma la seconda ricetta è seria?
Grazie, molto interessante, ora finalmente conosco la procedura giusta...👍🏻👋
Marco Sed è un'istituzione. Un grande.
Troioni miticoooooo!!
Quanti lavoro! Santo Dio!

@@carlorobotti5572no the farmer, the makers of the spoon do not have to be Jewish. Everything you said is false.
@@Kukulkan_Tours My source is our public TV interviewing a wine j producer (in italy) for kosher wine, explaining that even the machinery for the grapes where done by j.
@@carlorobotti5572 That is only the case for wine, and only among extremely observant Jews who are a minority even among the Orthodox. Even most Orthodox Jews only buy this kind of wine for Passover. Fresh produce does not even require kosher certification according to most mainstream Jewish authorities; you must only make sure to wash it well and check that there are no insects before cooking or eating. I'm not sure where you got the idea that the farmers must be Jewish - you must have misunderstood something.
Ristorante ottimo!!!
Fritti pazzeschi, pasta fatta in casa.
Davvero consigliato.

Strike....👍👍👍👍👍🙏
Boh...
Buonissimoi.
😋👍
Thank you for celebrating Jewish cuisine in your country and sharing its story❤
Che spettacolo! 😋😋😋

I think cardoon is a different plant, though very similar

You can not eat fish and meat together, but it can be in the same restaurant. A kosher restaurant will not have dairy and meat however

well, maybe except for the grana padano supermarket cheese you can easily spot at 1:27
kosher marketing
He said that they are produced by them by other cheese factories. Basically they have agreements to produce kosher cheeses using traditional but adapted recipes.
@@0xFAB10 which basically means that the cheeses are not produced by them, but by others.
the fact that they gave those factories the kashrut (the procedures that need to be followed so as a food could be classified as kosher - in this particular case we're probably mostly talking about the strict separation of the ustensils, as any other "adaptation" of the recipe is impossible, or that grana padano is not grana padano anymore) and hired a mashgiach to supervise that the rules are followed doesn't make them the producers of the cheese.
by the way, from what I know and have experienced, in most if not all cases, the medium-scale industrial production of cheese in Italy basically follows (not willingly, but simply because that's how it's done) the kashrut, so that most of those cheeses could be considered kosher, except that there was no mashgiach there to certify it. this might actually explain that piece of grana in their refrigerator, the exact same grana I could bet I spotted yesterday at coop.
Semplice e geniale

Venice the tourist trap
Yes basically, approximately 2000 years ago when Jews were brought as slaves to Rome from Israel, they brought the food they were eating in Israel

Such an overrated dish. Greasy, overly soft… meh. Never had a good one… ever.
