    Barbecue chicken consists of chicken parts or entire chickens that are barbecued, grilled or smoked. There are many global and regional preparation techniques and cooking styles. Barbecue chicken is often seasoned or coated in a spice rub, barbecue sauce, or both. Marinades are also used to tenderize the meat and add flavor. Rotisserie chicken has gained prominence and popularity in U.S. grocery markets. Barbecued chicken is one of the world's most popular barbecue dishes.

      As for the mini grill, my only suggestion is to go with the Weber brand. I tried a knock off from "the Mart" and was sadly disappointed as it wouldn't stay lit. Weber makes a mini grill, and from what I hear, it works great.

    Never understood the purpose of indirect grilling - no fun lol. Might as well put it in the oven. I prefer slapping that chicken right over the coals at the start then check every 5,10 minutes or so. Move the food around depending on the sizes of meat. Only way to grill is right over the coals. Entertaining video though

    • @UncleBillsKitchen
      @UncleBillsKitchen  3 роки тому +4

      Hi Paul,
      Thanks for stopping by. I usually do indirect cooking to ensure that the entire piece of chicken is tender and juicy as well as cooked to at least 165 degree F. That said, if you can get ahold of some smaller pieces, I agree with you, on a gas grill, put them right over the burners and stand watch to ensure no burning :).
      On the other hand, grilling with charcoal, I prefer to cook indirectly as it allows the chicken to infuse with the smoke from the wood I add to the grill.

      So if using charcoal should I put it directly over charcoal or should I put charcoal to one side and cook it indirectly?

  • @yankeereefer

    Cross contamination. Used tongs on raw chicken, then while cooking chicken and then on the corn.

    • @UncleBillsKitchen
      @UncleBillsKitchen  3 роки тому +1

      Hi Ryan,
      Thanks for your comments. The corn is covered in it's husks, however, if you are concerned about cross contamination, then I agree, you can use different tongs for your protein and Veg.

    Yeah, unless you're slow grilling something on gas, BBQ sauce has so much sugar, it burns REAL quick! I make sure the meats pretty much done before applying BBQ sauce if I'm going to use it. It only takes a minute or two to char it up if you're going for that on direct gas grill heat, even on low.

    1.5 to 2 hrs to grill leg quarters? Its about matching your fire/heat source to what you are cooking/grilling. On a charcoal/wood fire, thinner proteins like fajitas and steaks work fine with higher temps because they cook faster than leg quarters. On a propane grill , when cooking leg quarters, just lower the temp for direct cooking. On a charcoal grill, just use less charcoal. It also helps greatly to trim the excess fat and skin which greatly reduces flare ups.
