Watching the joy and contentment on Paul's face as he assembled that Dutch Baby made me smile and made my heart happy. I so admire his style of really letting the wild ingredients shine.

There's plenty of wild foods here in Aus, you just can't go wading into the long grass to get them unless you have a death wish.

@@GuantanamoBayBarbie2 (and others): AH! Les Hiddins' show (Bush Tucker Man) ran three years. The first two years were almost entirely about wild edibles (hence the name, "bush tucker") in the Outback, the third year was entirely about survival stories in Australia.

I hate the fact my parents never bothered with this type of survival. They rely on grocery stores and gas stations. My uncle does the more primitive living but since stopped. I wanna be able to hit my back 3 😂 and find stuff Mother Nature has to offer. I want that connection. I’ve appreciated Les since my early years as a kid I’m in my 30’s now. This I know isn’t to go by guide but the chance to be able to have an idea what’s what in the woods I’m so great full for. Thank you Les.

I love how as this series progressed, you could see Paul using the info he's learned from Les to improvise and add new plants that Les didn't even suggest. I'd love to see more of that in the next season. And you can see Les learning from Paul, too. I feel like this show is slowly changing from one forager and one chef to two foragers and two chefs.

Honestly Les I'm enamored with this series, in many ways it's your best work. Leaves me feeling refreshed and inspired; Physical issues ended my outdoor lifestyle, and I did study wild edibles out of interest, but now I'm refreshing my knowledge and looking for instructors bc even if I can't climb a mountain these days, I can go for a day hike in the natural beauty of my area and interact with nature in a spirit of appreciation, and not the attitude of conquest of my youth.

    Thank you for considering it.
I've only watched one video so far because I just happened across your path today. I'd seen Survivorman so many times, but was unaware of Wild Harvest. BTW, I like your show so much better than the one with Bear Grylls. Survivorman doesn't feel hokey. It feels sincere and real, not like a scripted reality series. Never cared much for the celebrity guest aspect of B.G.s show, either.

As a footnote to those who wish to try wild harvesting one thing Les seems to leave out of his teachings is the fact that you should always do a skin test of all edibles youve never had before (shows if you are allergic by causing skin irritation). I grew up eating wild edibles in the adirondack mountains of upstate NY most of my childhood thanks to my grandother being into botany and horticulture. The one thing is I never tried lambs quarters in the harvests my grandmother would teach, and im glad I didnt... Through allergy testing I found out im allergic to them, not severely but enough to cause a rash or skin irritation. So always be aware you can be allergic to foods youve never had. Ive never had lambs quarters and they grow all over my yard, and in my knowledge of being allergic to them I steer clear. Ive never been around cockroaches either, and yet im deathly allergic to them according to my allergy test, and the allergist said its quite a common allergy. So wont be eating cockroaches when they nuke the planet, lol. Its just more a forewarning, I think its great Les is trying to educate people about survival, and I know he can only teach so much. But I feel its needed for him to also teach any plant can be dangerous to an individual and not the masses. Just my 2 cents :). Keep up the great teaching Les.

(POACHED EGG TIP): Put some lemon juice in the hot water to get the egg/s to stay together, otherwise instead of poached eggs, you may get egg soup (I'll spare you the chemistry for why it works).

@@jeffbeerkens5286 - yep, it's usually cooks/chefs who know that trick (not a chef, just into cooking and survival). Sure vinegar, like lemon juice, is acidic, which not only keeps the egg together in the water, it cooks the whites first, making the egg cook faster overall.
