no bake-easy & healthy granola bars | heavenly hunks copy cat recipe

  • These are 2 granola bar recipes you need to make. I have these on hand at all times. The perfect healthy snack to hold you over. The first recipe is a heavenly hunk copy cat and trust me, you won't miss the store-bought ones. Second, is a chewy granola bar with dates as the base. It's delightful and customizable.     Heavenly hunk copy cat
    Ingredients:
    2.5 cups rolled oats
    1 cup oat flour (I made my own in food processor or you can buy)
    2/3 cup almond flour
    1/2 shredded coconut or toasted coconut chips
    1 tsp salt
    1/2 cup melted coconut oil
    2 TBL brown sugar (optional)
    1/2 cup honey
    1/2 cup peanut butter
    1/2 cup mini chocolate chips
    In a large bowl, combine all ingredients and mix well. I used my kitchen aide and mixed until it formed a dough like substance. Line an 8x8 with parchment paper. Pour mixture into pan and press into pan.
    Place in freezer for 1hr, then cut into squares. Store in refrigerator for later.

    Chewy granola bars
    Ingredients:
    1 cup pitted medjool dates (make sure and use medjool)
    1/4 cup honey or maple syrup
    1/4 cup peanut butter ( I use smooth)
    1 cup old fashion oats
    1 cup loosely chopped almonds
    Optional add ins: crasins, chocolate chips, flax seeds, pumpkin seeds
    Directions:
    Process dates in a food processor until small bits remain. It should form a "dough" like consistency and roll into a ball.
    Optional step: Toast your oats (and almonds if raw) in a 350 degree oven for 10-15 minutes or until slightly golden brown (I prefer the toasted flavor).
    Place oats, almonds and dates in a large mixing bowl - set aside.
    Warm honey and peanut butter in a small saucepan over low heat. Stir and pour over oat mixture and then mix, breaking up the dates.
    Once thoroughly mixed, transfer to an 8x8-inch baking dish lined with parchment paper.
    Press down firmly until flattened.
    Cover and let firm up in fridge or freezer for 10-15 minutes.
    Remove from pan and chop into bars. Store in the fridge or freezer.

    I made the heavenly hunks but i used my sugar free honey, swerve brown sugar and sugar free chocolate chips, they taste amazing. Thank you for the recipe.

    Make sure to NOT add too much brown/white sugar otherwise the entire "healthy" idea is out the window

    I’m going to cut the sugar in half and see how that turns out. Trying to cut those calories down some. Cause that’s a lot of calories for just one hunk. Ouch
