Hi! I really love your videos. Fun and there is much happening. I am myself a Swede interested in building - and I find it interesting that you have choosen to live quite near to lively road. I heard you early explanations with the dirt roads - And snow removal in the winter, which is a major issue for many living in a less urban place in Sweden. Regarding the greenhouse, I guess that replacing one of the plastic panels with Glass (or simply adding a section looking like the others) with glass roof - with a hole for the chimney(s) would do the trick. Buying aluminium guerders would be an easy thing to do at your local Bauhaus (for an add-on) - and to find a local glazier woun´t be a match for you, just make a template where to put the chimneys (like in board or so..) And for the outhouse, just add a socket for incoming wire, and then you could use a connection wire in the mean time...
A pizza oven sounds amazing. I love pizza too. I got very sick and couldn’t eat pizza for ten years. I started again a few months ago and wow I forgot how good it is.
I seriously doubt that you will find a mountain in your yard - but there might be bedrock and/or stones of various size. You'll probably need a mini digger to make a ditch deep enough for the electric cable.🙂

You can see on the top of the house that the cracks in the ceiling leaks hot air into the attic because there is no snow on the ridge.
