That pasta and mushroom sauce looks fantastic. The next time I come across some CotW I'm going to make it.
I came across some chicken of the woods while hunting a few years ago. I never tried it before so I harvested some of it and took it home. Wasn't sure how to cook it so I just threw strips into some butter and fried it up. I couldnt believe how good it was and how much it tasted and felt like I was eating chicken breast. I gave some to my neighbors and they were surprised as well.
That farm is such a neat operation. I believe that is the first time I've heard of a woodland farm.

I thought they genetically modified all American chestnuts to supposedly protect them from the blight. Are you sure you have non-GMO American chestnuts?
