- We're an Aussie family of 4 doing our best to make ends meet with the rising costs of living. Today I show you how I cook butter beans (also known as lima beans) from a can using food I received in a recent food pantry haul and greens that I have grown in my garden and turn it into a healthy and filling meal to feed my family.
My Mediterranean inspired butter bean pasta is both delicious and affordable and the perfect comfort food. I hope you give my butter beans recipe a try!

Just found your channel and have been binge watching your videos. I'm glad you have these resources available. It's shocking when i shop and my food bill is almost double for the same stuff. It's great that you are able to up the nutrients by adding greens from the garden. Here in Canada, the garden is buried in snow in winter. The pasta and beans look tasty!

I make something similar but everything goes into the same saucepan. It saves washing up and the pasta really absorbs all the flavours. I also add loads of vegetables. If I use long pasta such as spaghetti or linguine I cook the pasta separately and swap the butter beans for lentils. Yum! X
That sounds great, one pot meals are the way to go! Spaghetti with lentils sounds tasty too!😋

Is that kale, basil and parsley left over from your summer garden? It’s nice that you’re able to access fresh greens all winter. I’m so happy for you. It’s so nice to have fresh ingredients on a limited income. I always enjoyed it.

Hello MEM. For many years I was not able to eat onions, because they really upset my tum, but I found I could eat leeks, and I discovered they worked really well instead of onions, in many dishes. I can eat onions now, just not a lot of them or every day. I do remember when I was a child, my mum would roast onions along with the potato's and (the dreaded) parsnips, and the onions tasted wonderful. I did miss those in my not able to eat onion days.

That looks really good, I am going to try it! I have used the sugar trick before and it does work to reduce overall acidity. A pat of butter will do the same thing and make the sauce a bit richer, but of course butter is dear these days!

Beans are such a great staple food and so healthy. I also love broad beans. Delicious simmered with onions, carrots and a bay leaf in a bit of chicken stock. You can add rice or fried potatoes to make a full meal.
I totally agree-beans are fantastic to add to meals, we love them here! Your broad bean recipe sounds really delicious, adding fried potatoes or rice to it is a great way to make it a hearty meal. I'll have to try that sometime! Thanks so much for the great suggestion🥰
Looks delicious. Would be a great recipe to use up littke bits of leftover vegetables or vegetables that need to be used up before they go bad.
