We visited Peru late October 2023, I tried all the food you mentioned except acevichada. I also tried their famous Cuy and Alpaca, very delicious indeed.
It is also because you change your diet, usually I do not eat ceviche or any other dish that is not cooked until a couple of days (1 week at least), because my stomach need to get used to the new food.

Lomo Saltado has the fries mixed with the meat, anything different than that and you will know the restaurant sucks.
My son got Salmonella after eating Ceviche. We choose restaurant very carefully, and still got hit.
