I'm salvi but got to work in a Peruvian restaurant in San Francisco managing the place but got to learn how to cook the food and I have to say it's one of my favorite foods in the world and I cook it one for family friends so I got them Into eating it. if anyone been to Frisco or going I really recommend "Mi Lindo Peru" check the review really good n very friendly

Ceviche is a tradition in Peru, like having a burger for lunch in the USA. Unfortunately here in the USA the fish variety is limited unlike in Peru the Ceviche is prepared with different types of fish.

Mi madre es chef y creo que no lo hace con ají amarillo pero si tomate ,cebolla etc como lo prepararon hay Masomenos ,una vez lo probé con ají amarillo y no me agrado tanto me quedé con la perspectiva que me dejó mi madre y en muchos restaurantes lo preparan igual .
Hi, Peruvian here. Just to clarify that Peruvian culture has a great influence from Chinese and Japanese culture because of the inmigrations from the XIX and XX century. Actually, it is supposed that 15% of the Peruvian population has Chinese origins. Even my great grandfather was Cantonese but changed his last name to Canevaro because of the help he had when he was working with an Italo-Peruvian family. So, just to finish, that influence is noticed on Chifa (I think it should be called Tusán) and Nikkei dishes, and of course, as you can see, the oriental salted technique and the way our ceviche is served (Almost raw, as Sashimi). There's even a dish called "Tiradito" which is like a ceviche but with thin cuts of fish just like sashimi.
*The only similarity between Ceviche and Sashimi begins and ends that both uses Fish. From that point , each one follow a different method of cooking. 2,000 years old, Moche Culture used a Citric Acid as Tumbo for preparing Ceviche. Once Spain arrived, they changed Tumbo by Lime.. I have lived in Peru for 5 years and 7 months and lived all over it. The best Lomo Saltaldo I have had is in Tingo Maria, the Gateway to the Selva (jungle) at Lori Burger. Their Chimichurri is what really sets it apart from others and they will bring you more if you need it like I do.

who wants to make ceviche, the basic Peruvian ceviche is only fish, lime juice and red onion, you can add chopped coriander if you have it.

En Peru el cebiche se hace con corvina, mero,cojinoba ...pescado blanco y firme. Tilapia es usada en USA pues no se consiguen.

The ceviche is the hole country, you found fish and lemons which come from the coast, the sweet potato and corn which come from part of the jungle and the Andes, also the best cebolla Is from Arequipa, More or less ceviche moves the economy of our country

I have lived in Peru for 5 years and 7 months and lived all over it. The best Lomo Saltaldo I have had is in Tingo Maria, the Gateway to the Selva (jungle) at Lori Burger. Their Chimichurri is what really sets it apart from others and they will bring you more if you need it like I do.

El cebiche original surgio en la costa peruana, por lo que uno de los ingredientes originales no pudo haber sido el rocoto, ya que este en la antigüedad se daba solo en zonas de la sierra del Perú. Por esta razón lo que le habria dado el picante probablemente haya sido un tipo de aji amarillo
