    I made this tonight and it was EXACTLY the kind of teriyaki sauce I've been looking for for years and years and YEARS! The whole family lost their collective minds when I served this tonight.
    No off-the-shelf teriyaki sauce will compare to how perfect this recipe is. I know, because I've been looking for something like this for many years, ever since moving away from Western Washington where there's a fantastic teriyaki place on every corner. No restaurant or teriyaki sauce I've tried in the last ten years was right until this one.
    The only changes I made to the recipe was adding a splash of mirin here and there while cooking. The other change was to set aside a bit of the sauce before adding the corn starch thickener. I then marinade and cooked the chicken thighs in this thin version of the sauce. And BAM, super-awesome-deliciousness! Thank you for this recipe!

    I'm too lazy to get fresh garlic/ginger so I just used powdered and also added red pepper flakes to spice it up a bit. Parents are religious zealots, so I subbed the sake with mirin and added a bit more sugar. Glazed some over fried salmon with rice and it was fucking awesome if I say so myself, thanks!

    I made up a simpler recipe which I always use:
    You will need:
    Soy sauce
    Sugar
    Flour
    You take the soy sauce and pour it it a bowl. Add the desired amount of sugar.
    Then microwave for 30 seconds and add flour or cornstarch to thicken. Microbe again and mix. Now it’s ready! P.S. I made it up and it WORKS, try it!

    You can use white wine as a sake substitute. Also for thickness, you can use 1 tsp of cornstarch mixed in 60 ml of cold water first and add to the sauce while its cooking to help thicken it quicker then refrigerate.

    1) we never put sesame oil in teriyaki sauce. 2) you first put in the Mirin and Sake, let the alcohol evaporate, and just then add other ingredients 3) in Japanese teriyaki there is no garlic, the version with garlic we call in Japane Western Teriyaki sauce. 4) we do not reduce down teriyaki sauce because in Japan teriyaki sauce is reduce when cooking the dish

      Thanks for the input. Where I live, you don't really get "home cooked food" and if so it's not affordable. It's very convenient to have sauces and gravies that you can just add to cooked meat and vegetables. It's also a great dip. In america, ethnic gravies are often turned into sauces to be eaten with snacks like chips. In fact, it's such a good concept, I often eat noodles with Indian curries slightly sweetened and with some cream.

    Recipe looks amazing. Going to make it today. FYI, I suspect the garlic and ginger cutting has nothing to do with Russia. It is a technique used to release the flavors of the ginger and garlic.

    You don't need corn starch because it was a reduced sauce with sugar...had he used starch it will break later. Cool video and sweet induction range!

    Not bad chef, but you need loads more garlic and ginger! Grate your garlic and ginger finally - 4-6 cloves of garlic for this quantity; a large piece of ginger 1.5x1.5 inches; 2 small green chillies, finally minced; and use honey instead of sugar...

    I mix 1 tablespoon of cornstarch and 1 tablespoon of water and it thickens the sauce immediately :))))

      boil 1/2 cup water, 1/2 cup sugar (dont stir until sugar dissolves) then add 4 teaspoon of rice vinegar and a pinch of salt. that can be a substitute to mirin

    an easy way to make sweet Teriyaki sauce is to buy Kikkoman already made teriyaki sauce and add brown sugar to taste half a teaspoon at a time .. I'm an avid chinese food lover and this did the trick..

    How long does the sauce keep for in the fridge in a sauce dispenser?? :) im pregnant and want make bulk for al lthe homemade chicken sushi im cravi ng

      considering your pregnant I would not want to take risks with keeping a homemade sauce too long since we really dont want you to get food poisoning.
      We gotta keep that oven of your running smoothly so you can bake that bread loaf well (jokes)😂
      anyway, back on topic if you pour the hot sauce into a sterilized container and let it cool down with the lid open before placing in the fridge it should be able to keep for 2-3 weeks but since you're pregnant let's not push it to the end date, for you 10 days.

    As a quick "mock" teriyaki, add soy sauce and port wine to apple butter; shake in garlic powder to taste. It works.

    Tried this and it was amazing but I stuffed up I added 150 ml of each sake mirin and soy sauce but the booze boiled off and was really tastey. We (hubby n I) had terriyaki kangaroo

      Losaru yea my husband and I think so...but when you open the pack of kangaroo it does have a little bit of a game smell to it but taste is very, nearly identical to beef but you should only cook ot to medium rare and at the very most medium or it will be chewy.

      stock,chicken or veg.. any veg will do but i dont recommend tomato. apple juice, citric juice...

      make non alcohol mirin (1/2 cup water +1/2cup sugar) bring to a boil don't stir, put 4 tbsp rice viniger And some salt.

    Ginger and garlic were cut inappropriately.... That quantity is not strong enough for sauce besides you put soo much brown sugar (atleast it's Brown and not white sugar).... not good enough

    Tip: If you add a Tbsp of potato starch or corn starch, those can also help thicken up your sauces a little

      Go At.. Where do you purchase Sake?? I’ve Necer had it or used it before in any recipes.. So I’m Not familiar with that ingredient!!😳Thanks!!🙌👍👍

    You just wasted a lot of ginger man! You can peel it even with a spoon! Those small details can save a lot and use every ingredient as much as posible

      I agree with you. Bad sauce. It’s a joke sauce made by some white guy with no respect for Japanese tradition or real flavor. Not enough ginger. Not enough garlic. Thick teriyaki sauce isn’t real anyways.
