I made this tonight and it was EXACTLY the kind of teriyaki sauce I've been looking for for years and years and YEARS! The whole family lost their collective minds when I served this tonight. No off-the-shelf teriyaki sauce will compare to how perfect this recipe is. I know, because I've been looking for something like this for many years, ever since moving away from Western Washington where there's a fantastic teriyaki place on every corner. No restaurant or teriyaki sauce I've tried in the last ten years was right until this one. The only changes I made to the recipe was adding a splash of mirin here and there while cooking. The other change was to set aside a bit of the sauce before adding the corn starch thickener. I then marinade and cooked the chicken thighs in this thin version of the sauce. And BAM, super-awesome-deliciousness! Thank you for this recipe!
Nice kenny, i love this guys version all i do is add 1 teaspoon of sesame oil give it a go see what you think, link ua-cam.com/video/t-Hj2pILMz4/v-deo.html ps i add a tad of brown sugar like 1/4 cup
Still the best sauce recipe since 10 years. I've been doing both thin and thick versions, and we were never deceived. Many thanks again, 10y after ! :)
You can use white wine as a sake substitute. Also for thickness, you can use 1 tsp of cornstarch mixed in 60 ml of cold water first and add to the sauce while its cooking to help thicken it quicker then refrigerate.
boil 1/2 cup water, 1/2 cup sugar (dont stir until sugar dissolves) then add 4 teaspoon of rice vinegar and a pinch of salt. that can be a substitute to mirin
Recipe looks amazing. Going to make it today. FYI, I suspect the garlic and ginger cutting has nothing to do with Russia. It is a technique used to release the flavors of the ginger and garlic.
I'm too lazy to get fresh garlic/ginger so I just used powdered and also added red pepper flakes to spice it up a bit. Parents are religious zealots, so I subbed the sake with mirin and added a bit more sugar. Glazed some over fried salmon with rice and it was fucking awesome if I say so myself, thanks!
considering your pregnant I would not want to take risks with keeping a homemade sauce too long since we really dont want you to get food poisoning. We gotta keep that oven of your running smoothly so you can bake that bread loaf well (jokes)😂 anyway, back on topic if you pour the hot sauce into a sterilized container and let it cool down with the lid open before placing in the fridge it should be able to keep for 2-3 weeks but since you're pregnant let's not push it to the end date, for you 10 days.
Hi there, thank you for your recipe. In my country which I stay in, I could not find any Mirin and Sake. Can you please suggest me is there any other ingredients that i can replace it
I made up a simpler recipe which I always use: You will need: Soy sauce Sugar Flour You take the soy sauce and pour it it a bowl. Add the desired amount of sugar. Then microwave for 30 seconds and add flour or cornstarch to thicken. Microbe again and mix. Now it’s ready! P.S. I made it up and it WORKS, try it!
1) we never put sesame oil in teriyaki sauce. 2) you first put in the Mirin and Sake, let the alcohol evaporate, and just then add other ingredients 3) in Japanese teriyaki there is no garlic, the version with garlic we call in Japane Western Teriyaki sauce. 4) we do not reduce down teriyaki sauce because in Japan teriyaki sauce is reduce when cooking the dish
Thanks for the input. Where I live, you don't really get "home cooked food" and if so it's not affordable. It's very convenient to have sauces and gravies that you can just add to cooked meat and vegetables. It's also a great dip. In america, ethnic gravies are often turned into sauces to be eaten with snacks like chips. In fact, it's such a good concept, I often eat noodles with Indian curries slightly sweetened and with some cream.
The comments are very encouraging.......want to try it on some cauliflower wings......... I really enjoyed your no nonsense approach. New subscriber ....thanks again
PS. Do you remove the ginger & garlic pieces after the sauce is made?? It looks Delicious!! But do you have a Recipe for the “Ginger Dipping Sauces” For Shrimp & Chicken from the Hibachi Restaurants??!! InNESD Especially That one!! Thank You!! Loved your Clear Precise Instructions!!🙌🙌🙌❤️🤗🥢🥢🥢
Not bad chef, but you need loads more garlic and ginger! Grate your garlic and ginger finally - 4-6 cloves of garlic for this quantity; a large piece of ginger 1.5x1.5 inches; 2 small green chillies, finally minced; and use honey instead of sugar...
Dont use the American Measurement please. Only 3 countrys in the world use it, so why should he use that instead of the metric system which is way better?
I know this video is old but whats the difference between using brown or white sugar (I see lots of recipes for both). We are looking to make Tokyo Teriyaki that's less sweet and more Savory like House of Tsangs Tokyo Grill Sauce. Ty so much if you respond.
we only have sweet soy sauce and salty soy sauce here which one u suggest i use? and what are non-alcohol substitutes for mirin and sake? thanks in advance
Hey where did you learn to make sushi, maaaaann, you're the BOSS here... I started by the sushi rice, man delicious...The teriyaki sauce that's heaven. I love the Dashi stock n the mayonnaise too. Thanks for all your beautiful meal you make n all look so delicious.
Ginger and garlic were cut inappropriately.... That quantity is not strong enough for sauce besides you put soo much brown sugar (atleast it's Brown and not white sugar).... not good enough
@joe jitsu this is MrCutePotato. Im on another account. I am actually a muslim, but I admit that I overreacted there. My apologies, but it's just that I react very strongly to this kind of things. You know, with the racism and stuff. Again, my bad
I agree with you. Bad sauce. It’s a joke sauce made by some white guy with no respect for Japanese tradition or real flavor. Not enough ginger. Not enough garlic. Thick teriyaki sauce isn’t real anyways.
I'm sure I mentioned this in the video... the sauce will thicken as it cools down (because as the heat energy leaves the molecules will slow down), you have to compensate for this by thicken it to just a little less than where you want it to be, takes a little practice, if you have over thickened it add a little water back in the sauce (very little) and then warm up again.
I made this tonight and it was EXACTLY the kind of teriyaki sauce I've been looking for for years and years and YEARS! The whole family lost their collective minds when I served this tonight.

finally I've been looking for this sauce, because it's expensive to buy in large amounts...thank you
I made this years back and this is still my favorite!
Still the best sauce recipe since 10 years. I've been doing both thin and thick versions, and we were never deceived. Many thanks again, 10y after ! :)

hello, can you suggest any non-alcohol substitutes instead of sake and mirin
The alcool evaporates with the heat so there is no alcool is the sauce
boil 1/2 cup water, 1/2 cup sugar (dont stir until sugar dissolves) then add 4 teaspoon of rice vinegar and a pinch of salt. that can be a substitute to mirin
Brenton Akoname Do you have to bring the water to a boil before you add the sugar?
Derek Harris you can put the sugar to water even if its not yet boiling
Thank you.
Awesome video. Never realized it wast that simple to make. No more store bought teriyaki sauces anymore. Keep the great videos coming!
how long can you keep this sauce in the fridge?
Nice
Did you find out?
Recipe looks amazing. Going to make it today. FYI, I suspect the garlic and ginger cutting has nothing to do with Russia. It is a technique used to release the flavors of the ginger and garlic.
I usually put waymore garlic and ginger and chop it up finally. Makes for a great sauce
I'm too lazy to get fresh garlic/ginger so I just used powdered and also added red pepper flakes to spice it up a bit. Parents are religious zealots, so I subbed the sake with mirin and added a bit more sugar. Glazed some over fried salmon with rice and it was fucking awesome if I say so myself, thanks!
why not add both of the oils straight to the pot?
same question here, but that what happened!
cooking show stuff. Trying to make it look nicer.
You never cook with sesame seed oil. So it should be added near end. And olive oil? How do you mix Italian (olive oil) with Asian. Smh
That's really funny!
CUZ ITZ FANCY
Any idea how long would I be able to keep it in the fridge?
You don't need corn starch because it was a reduced sauce with sugar...had he used starch it will break later. Cool video and sweet induction range!
How long does this sauce last for and whats the best storage
This is my go to teriyaki recipe I don’t even waste my time on other videos! Thank you so much!!!!

Yes that's a magnetic spice rack, you can get one half way down this page: makesushi.org/store/sushi-utensils/

Hey, great recipe, can we just leave out the sake or put something else in? Maybe rice wine? I had a look for sake and the only they had was $22

Is brown sugar another name for turbinado sugar? That's what the substance in 1:35 looks like.
Can we use something else (non-alcohol) instead of sake and mirin?
No
+Dennis Steenssens Non Alchoholic Sake and mirin can be made
stock, chicken or veg.. any veg will do but i dont recommend tomato. apple juice, citric juice...
make non alcohol mirin (1/2 cup water +1/2cup sugar) bring to a boil don't stir, put 4 tbsp rice viniger And some salt.
oh, okay. thanks Sumaiyya Baalawi :D
The comments are very encouraging.......want to try it on some cauliflower wings......... I really enjoyed your no nonsense approach. New subscriber ....thanks again

Is this guy Elon Musk's long lost brother or what? xD
Exactly what I was gonna say! He kinda sounds like him too!
Nah... even this kid knows pretending that a Mars colony is a great idea is fraud, and the most retarded thing anyone could ever waste money on.

Dont use the American Measurement please.
Only 3 countrys in the world use it, so why should he use that instead of the metric system which is way better?
+Riley Rain american measurement? as i know, just one american country uses this imperial nonsense, USA
Rakku He'll be missing the largest audience without American measurement. USA is IT..
Riley Rain And how do you know that?
That sounds like assumption, not fact.
Dude, only America uses those. Just cuz ur an american, doesnt mean everyone has to do everything according to you

BJ JR thought so as well, probably costs even more to make some yourself. Not worth it for a one time use.
BJ JR jjggg
i think many people have those 2 ingredients
not everyone is a weeb
I always have mirin and sake😂🤔
Wonderful video, chef. Will be wonderful with some chicken! Also I really like your spice 'rack', on your left.

Ginger and garlic were cut inappropriately.... That quantity is not strong enough for sauce besides you put soo much brown sugar (atleast it's Brown and not white sugar).... not good enough
I am doing my sauce and I forgot the alcohol so I used martini and it smells really weird so I added water. Idk how it's going to turn out.

@@AutorouteMaroc well that kind of rules us out, huh you lil racist? Why cant we make teriyaki sauce?

I made a dipping sauce based on this video and not only me but even friends loved it. Thank you for sharing all this info!
You just wasted a lot of ginger man! You can peel it even with a spoon! Those small details can save a lot and use every ingredient as much as posible
its true, I did do that in more recent videos like this one: ua-cam.com/video/1P2vAn6hplQ/v-deo.html
Love your videos - thanks. For how long can you store these teriyaki sauces?
lol what kind of teriyaki sauce is this. This is a disrespect for the hard working chef from japan
no
Prenzipe Phzype LoL😂😂😂😂😂😂😂

I agree with you. Bad sauce. It’s a joke sauce made by some white guy with no respect for Japanese tradition or real flavor. Not enough ginger. Not enough garlic. Thick teriyaki sauce isn’t real anyways.
It's ovisiously a real thing ;)
i am so glad i found your site. I love japanese foods and you just helped made my own so thanks!
The thicker sauce looks like what I buy. We call it a glaze in the US. Is it a little sweet?
My sauce came out way too thick. It solidified quickly after it cooled. Did I over reduce it?
