This recipe should have millions of views over the other popular teriyaki sauce video on UA-cam that does have millions of views and IMO shouldn't. This is very close to Seattle Sticky Teriyaki Sauce! It's amazing and NOT too salty.

Thank you…your comment about this being not too salty is what made me try this amazing recipe, now I’ll never go back to anything else! Hubby doesn’t like too much salt, so I did a trial run with regular and “less sodium” soy and to my surprise, the lower sodium won both our votes, but I loved both options versions!

THE WINNER! UNBELIEVABLE! You will NEVER GO BACK to the expensive store bought when you discover 1) this tastes better, 2) it costs pennies to make a bottle’s worth, 3) and it’s so fast, it takes less time then running to the store. 4) It’s so good…I kept “taste testing” it. 🤣
    5) so…I did a taste test with hubby using six options. I did a small batch of this recipe using regular soy sauce and another using ‘less sodium” soy and had him rate his favorites. The “less sodium” won first, the regular won second place. These were his favorites “by a mile” and he ended up not liking the other four very much after tasting these…I had included Yoshida’s and Soy-Vay, my favorites…to my surprise…they weren’t nearly as good compared to these.
TIPS: Boiling it does improve the flavor so do that, but in a time crunch, you could skip if you use powdered spices (I used 3/4 tsp granulated garlic and about 1/2 tsp powdered ginger). Also, I did NOT have time to wait for the marinade to cool. Plus, my chicken was cold and I was pouring on a thin layer, not making it a soup. I only had 30 min to let it soak, I bet overnight would be amazing. Tonight it’s for the chicken…the leftover sauce will be for salmon next week.

Add a little COLD water until a slurry is formed as you stir. Make sure you mix until lumps are gone before adding to the saucepan.
Not only does the cornstarch slurry thicken the sauce but it gives the finished sauce a nice shiny appearance. Just don't go overboard as you will taste it in the finished product. Add little by little until you see sauce begin to thicken. The sauce will also thicken up as it cools.

He didn't use sake or Mirin either.....but make it the way YOU like it. Add a little at a time and record how much you added. When I forget to record how much I add to recipes I tend to forget.... and then next time have to do it all again. 🙄
