I did the red wine sauce tonight because I had all the ingredients on hand. I did it just like in the video but I didn't measure - just eyeballed it from video proportions - and it was bomb! Thank you :D
It all looks delicious! So far, I've only tasted béarnaise sauce (in a restaurant), and it was scrumptious. I want to try my hand at making all of these. If only fresh tarragon were available where I live. The stores here only carry dried, but I'm guessing it won't have as much flavor.
Sorry, but bearnaise sauce is made with a mix of vinegar and white wine (2/3 wine for 1/3 vinegar). The vinegary flavor is a stepstone for bearnaise...

the only missing part of the sauce is using the fond from searing the steak. And as many people has pointed out, better to cook the flour with butter (roux) to avoid the raw taste.
Everyone loved the be'arnaise sauce and peppercorn sauce Thank you! I couldn't get the red wine sauce to thicken. Not sure if I didn't let it simmer long enough. Any suggestions?
Yes, it does. The white whine gives it a very savory taste, whereas the white wine vinegar lends it acidity. Also if you were to do the same --without lemon (which a typical hollandaise has)--and also without the vinegar it would probably be too hearty!

Once you heat flour with water it already converts to alpha flour, you do not need a roux if your using water later 😉.

alcohol evaporates during cooking. At the end there is 0% alcohol content, jyst flavour of wine.
you have to bring the bearnaise sauce to heat 150C to pasturize the eggyolks or else you wont kill the salmonella. Put it on heat iso double boiler

You can prépare your roux in another sauce pan if you have a hard time mixing every thing at the begining
