Keto "TATER TOT" Battle - The BEST Low Carb Veggie Tot Recipe!
Join me for a low carb "tater tot" battle! No, you can't really enjoy potatoes on a keto diet, and that includes the ever-popular "tater tot" we know and love in the US. Many companies have started to make veggie tots with cauliflower and broccoli, but they also include lots of starches and binders that make them just as carb-laden as their actual potato counterparts! We test two of the most popular "veggie tot" recipes that are truly low carb. Which comes out the winner? Let's find out!

Might give these a try-I’m usually disappointed in the cauliflower potato replacement options, but those actually look more like potatoes-and when Wesley’s eyebrows head north, you know it’s good.

Just sharing a tip I learned from an old low carb recipe book - if you press as much liquid out of cooked cauliflower as you can (and I mean until it's pretty much bone dry), the cauliflower flavor isn't nearly as strong in any recipe you use it in. Plus, for a mashed potato substitute, with butter and cream, not only does it taste much closer to potatoes, but the texture is a lot closer too.

That's how I am with pizza. To me, the crust is what makes a pizza and no keto options make the cut. Rather just save real pizza for when I'm off-keto or a treat.
FWIW, radishes instead of potatoes in my beef stew have been a satisfactory substitution.

It's not clean keto, but I use my mama's recipe for funeral potatoes (it's a Midwestern Thang), and just swap out the crumbled tots for a couple bags of raw cauli rice, and the original recipe's cornflakes for pork panko.
      So,
      - 1 can cream of chicken and mushroom soup
      - 16 oz sour cream
      - 16 oz shredded cheddar, divided
      - 30 oz raw cauli rice
      - 1 cup pork panko crumbs (or crushed pork rinds)
Stir all together with half of the shredded cheese, then press into greased 9×13. Top with the other half of cheese, and the pork panko. Bake at 375°F until cheese is deep golden across the top.

Hi Wes, I just received the cookbook and it is wonderful. It would be a great resource for someone just starting out and needs ideas, and for anyone else who needs the same. Radishes are a great substitute, and have I used them shredded for a breakfast side and as a component in a casserole to give it that potato feel. It's now regularly in the grocery store already sliced up or as matchsticks. I grew some in my garden but could never grow enough to do all there is to do with them. Hopefully you are getting well settled in, unpacked and finding your way around your new neighborhood. All the best to you and your family!

Hi Wes! About the overload of onion in the first recipe; Carine from the Sweet as Honey website is French and in Europe in general the onions are much smaller than they are here in the US.
I am European, born and raised, but I moved to the US almost a decade ago. One thing that blew my mind when I got here is how ridiculously large the onions are in the US. One average onion here in the US weighs at least twice as much as the average onion back home in Europe, if not three times more.

Ha! We lived in Pensacola for 16 years! Originally from Alabama. We hated to leave but my spouse's dream job called us first to Indianapolis for a 2-year stint. And now, I'm typing this comment in a hotel as we are currently moving cross-country to San Diego where we will call home. I miss my dear Pensacola beaches and friends terribly though! 💜💜

@@HighfalutinLowCarb All my extended fam is from Dolomite Alabama!!! You’re practically KINFOLK!!! My sister/cousin lives in San Diego so please let me know if you need any tips, advice or recommendations! You’re gonna love it. The weather is simply perfect there and the grocery stores are phenomenal! They are very keto friendly! Happy transitioning to Cali my Bama Brother 😘

I’m laughing at “one speed, go!”
My trusted Cuisinart is an older model, nothing fancy. So, Wes, how long did you need to pulse the ingredients?

Wes, do you think you could make the second recipe in a batch style and freeze? I wonder if they would freeze better before or after cooking. I am a working mom with a busy family so convenience is key.

Thanks, Linda! I have this small one and larger one I got from Amazon. You can check my amazon store, or just search for "portion scoop." 🙂❤️

I knew I’d probably like the second recipe better just by seeing the ingredient. Even not as a tater tot alternative it just seems really tasty.

Just a thought--work out an exchange of onion powder instead of all the water in an onion.

I'm wondering what would happen if I subbed a bit of oat fiber for the coconut flour - not all, but enough to get a fiber offset of the carbs on both recipes. And maybe Daikon radish (peppery!) instead of onion for the first recipe?
