    Pasture raised eggs are the best way to go if you can afford it. Cage free eggs, not so much. 😊 cage free means the chickens are not in cages but they are still cramped in together like sardines in the barn eating the same thing as caged chickens.

    Edited to update!
    I no longer weigh out my 2.0 flour, I just scoop and level (biscuits were coming out like hockey pucks! 🤣),
    I also don’t add any more flour or cut them out. I use the exact same recipe below, but I spray a 1/4 cup measuring cup with cooking spray and drop them onto a silpat. They have been coming out perfect!
    Wes, try another version of biscuit using Victoria’s 2.0 bamboo/almond flour, they are so good! I bake in a 425 convection oven for 12 min and have also subbed homemade Greek yogurt for the sour cream. I also mixed every bit of it in the food processor with the dough blade, super simple. I do weigh my “flour” at 84 gm/per cup needed as it always seems light when I scoop the flour. *I no longer weigh this, just scoop and level 3 cups*
    recipe by Brett Railey.
    3 cups New Standard 2.0 flour (almond/bamboo)
    4 1/2 teaspoons baking powder
    3/4 teaspoon salt
    1 cup sour cream
    3/4 cup heavy whipping cream
    Additional flour (maybe 1/8 cup in a sifter) to dust my working surface and the biscuit mix as I "worked it" by patting it out and folding it over onto itself (4 times).
    Mix dry ingredients together in a bowl with a whisk, then fold in the sour cream with a spatula until mostly incorporated. Begin pouring the heavy whipping cream into the bowl while using the spatula to incorporate it until there are no more dry crumbles in the bottom of the bowl. The mix will be tacky at this point.
    Dust your working surface with flour blend and scrape out the biscuit dough onto the surface. Dust the top with flour blend until you can pat it into a 1" tall round without it sticking to your hands. Fold, dust and pat the dough over onto itself (like closing a book) 4 times finally ending up with a 1" tall round of dough.
    I used a 3" biscuit cutter (you can use whatever size you have or the rim of a glass dipped in flour) and got 7 and a half biscuits if you count the ugly biscuit I made from leftover scraps (waste not, want not) at roughly 3.2g net carbs each.
    I baked them in a 450 degree over for 12 minutes but watch yours until they are appropriately browned as ovens vary.
    I didn't use nor need any sweetener for browning
    Both sour cream and heavy cream are cold.

    I love Victorias 2.0 flour it work wonders the only thing about keto recipes is how many eggs go into them and with her flour with the egg whites protein things can be to eggy tasting, so I went to my old recipe box and made ginger snaps substitute flour for the 2.0 flour and sugar for (in this case I used Alouse) and they came out wonderful my hubby ( a die heart sweet addict) was shocked when I told him they were sugar and flour free. So now I am having a blast with my old standard recipes.

      Just a quick reminder: If you want cookies (and other things) to be crispy, you need to use an erythritol blend as allulose doesn't crisp up - it might brown up - but it doesn't crisp up. (Victoria has a vid on her channel about the "ultimate" sweetener for baking.

    I no longer support Amazon and so many UA-camrs rely on this marketer for products they promote. I prefer searching for smaller companies (US) or any company but Amazon. I research company philosophy and business practices and Amazon has completely turned me off. So, I will investigate other places to shop for these great recommendations. Love your channel!!

    It's Wes Shoemaker day for me. I tuned in to watch the Biscuit Recipe again...cuz I finally had time and ingredients. Just ate two, warm from oven, did not disappoint! Now I'm ready to try making something with the remaining flour...thinking popovers!     I too made those ATK biscuits after seeing your video. Wow. Sold. Victoria has since moved on to Einkorn flour. Since I am quite happy with the bamboo fiber flour 2.0, maybe the crowd will go forward with 3.0 and I can start finding the bamboo fiber again. Thanks for suggesting these smaller items.     Thanks for the great info! Learned about some things to help on the journey (Splenda Magic Baker, NutPods, Oxo pastry brush). Saw a nice Spiral Whisk at HomeGoods for $2.99. Looked to be good quality. Oh, the parchment!!! I usually get the Kirkland but the tear off is really bad, and it's too big for the sheet pan, so will look into your rec! Best wishes!

    I'm always so excited when i see you created a new video. I've been on a diet break since November. Now I'm getting back on track. But I'm not sure that i want to lose much more weight. At 170 i feel very small because i was in middle school the last time i was this small. Lol

    Good luck on your ride! I use to also do the rides - I have friends living with HIV and I lost a cousin who had hemophilia when we were around 11 years old. It was the early 1980's and he wasn't allowed to return to school.

    I use bamboo fiber for almost all my cooking. I can not use any almond flour do to my son's allergy. And bamboo fiber has been awesome. I make mug cakes and brownies with it when we want something sweet.

      Have you checked out the bamboo flour from India? After buying some that cost a pretty penny, l had found it for sale by an Indian company for dirt cheap. Thought I'd try it next time.

So, l kept looking through them and found some very cheap ones that came from India. That was after l already bought that experience German brand. If by chance you purchase some tell me how you like it. It would be interesting and cost effective to know.

    Hi there, newbie to your show. I have seen about 6 episodes and am having fun with you! Regarding the handmade spoon, I believe it was Sunny Anderson from the Food Network who first mentioned it and I THINK it was on the show called The Kitchen. I am a big fan of Sunny, I love her because she is such a real person and always upbeat. She is also very approachable and will respond to her audience. I try not to stalk her so she won't think I am weird. HAHA! Her food is delicious, though it's not low carb or keto. P.S. Sunny is a lefty!

    If you are ever in the Ojai area check out Ojai Olive Farm. They grow organic olives and make their own oils. They have a tasting room on site plus partner with a balsamic vinegar producer. Really fun to visit the farm even though it’s a bit tricky to find it. Just give them a call to get directions. I visit them once a year to stock up. It’s the only oil I use.
    Fun to visit the area. Ojai is a low key small town and close to Santa Barbara. Might be a fun weekend getaway for you and your sweetheart.

    Thanks for the tips. I agree about mixing different types of sweeteners. Adding a little stevia to a predominantly erythritol based recipe (and vice versa) makes a more natural sugar taste for me. Just recently started using allulose and found the same thing.

    i got some useful info from this video, thanks!
    I saved a Fry Daddy scoop when I tossed the appliance about 40 years ago. It’s great for removing bones from stock. It doesn’t have a wooden handle like the Kitchamajig, but I prefer the wire handle. And that handmade spoon is cool, but I just use a flat tipped silicone spatula to scrape the pan when I stir thick liquids.

    I use the Wholesome liquid Allulose to make my whiskey sours. Lemon juice, Wild Turkey 101 and Wholesome liquid Allulose and I'm ready for bed. LOL

I think you should do a keto pizza crust video review using Victoria's New Standard Keto Flour 2.0! I have personally made a pizza crust with her flour and I can say hands down there is no other crust that can compete. The pizza is amazing.     Cooking with Mel in Australia has made her own bamboo fiber and CK flour blend with bamboo, almond and beef gelatin. Affordable but for those who live in that part of the world. Shipping to U.S pricey

    I just found your channel this week and absolutly love it. We are new to the low carb way of eating. My wife and I are both in our late 60's and pre-diabetic. We have started baking with almond flour but quite frankly don't mind the taste, it's the texture we dislike. Can we run the flour through the food processor to make it much finer and still expect the same results in the recipes? Thanks Dave

      You need a research oxalates, you definitely don't want to overdo almonds in your diet.

    I really like the sauce whisk from pampered chef because of its silicone coating. I can use it in my nonstick pans without worrying about scratching. If I am not using the nonstick skillet, it still works but I prefer the ones you mentioned since they are better at getting the stuck particles that increase flavor.
    It took me awhile to get used to the silicone brushes but it’s all I use now. They’re great!
    The stir spoon looks interesting. Never seen it before.
    Your suggestions are great. Learned much of this by trial and error. Your info is great for others who are starting out in the kitchen.

    Question, do you store your nut flours in the refrigerator, also do I need to store things like oat fiber and baking items in the refrigerator?

      Great question. All of them are shelf-stable, but I have always stored my coconut flour and almond flour in the freezer. They contain fat, and I find it stays fresher for longer in the freezer in an airtight ziplock bag. I keep the oat and bamboo fiber in the pantry, because they don’t contain fat that can go rancid. Hope that helps!

    Publix has a low carb 1g per serving creamer. Trust me its good. Carmel and hazelnut. Very flavorable. It has the Starbucks label on it. Its 1g carb for 1 Tbsp compaired to 5g for reg creamer.

      NO, NO, NO! LOL. I *sometimes* put a cheap wooden spoon in the dishwasher, but it truly ruins them. This spoon is a $40 handmade work of art. I quickly hand wash it after each use and oil it with cutting board oil a few times a year when I oil my boards. 😊

    I have made Keto Upgrade cinnamon rolls with it, so good! Have not tried Victoria’s blend yet to make the biscuits.

    1. Pastured eggs- vital farms and organic if you can afford them. 2nd choice is organic eggs when I can’t afford the pastured. Cage free eggs is a gimmick. 2. ButcherBox for grass fed and finished is the most economical way I have found. 3. Stevia glycerite and allulose. Sometimes Swerve brown sugar or confectioners. 4. Egg whites and or egg white powder. 5. Butter vital farms or otherwise organic. Or ghee. Goat milk butter as an occasional treat. 6. No sucralose because if I have it - I will binge on carbs about an hour later. Monkfruit sweetener raises my bg about 20-25 points. So that is a No for me.
