3 INGREDIENT NO-COW'S MILK DULCE DE LECHE⎜VEGAN TOFFEE!

  • Do you miss dulce de leche? I know, so my simple no-milk dulce de leche (toffee) is so amazing, wholesome, rich, and yet velvety that you're not going to believe it's vegan! It tastes pretty close to the traditional milk dulce de leche only this one is much healthier and definitely much more affordable!
    3 INGREDIENT NO-COW'S MILK DULCE DE LECHE⎜VEGAN TOFFEE!
    INGREDIENTS:
    3/4 cup rolled oats or oatmeal
    1 1/2 cup of water
    A pinch of salt
    7 tablespoons of coconut sugar
    1/4 teaspoon vanilla extract (optional)
    METHOD:
    Add the oats into a small bowl, fill with water, cover and allow it to rest for at least 8 hours or overnight in the fridge. Alternatively, you can boil the water then pour it into the oats, and wait until the water has cooled enough so you can handle it.
    After the resting time, take a medium size pan, lined with a cheesecloth, then pour the rested oats along with its water into the cheesecloth, squeeze the cheesecloth as much as you can, and discard the oats - but don't throw them away, you can use it for smoothies, cakes, bread, fritters, etc.
    take the pan with the oat milk to the stove, over medium heat, then add the sugar, salt, and optional vanilla essence.
    Stir until it thickens up considerably, transfer to a clean and sterilized jar and enjoy it!
    CUPS CONVERSION:
    1 cup = 250 ml / 8.45 oz
    1/2 cup = 125 ml / 4.22 oz
    1/3 cup = 85 ml / 2.87 oz
    1/4 cup = 60 ml / 2.02 oz

    It's how I make my pudding. I use the same method for the oat milk and then cook it with a bit of sugar, cocoa powder and a pinch of salt 😊

      I have never tried dulche de leche. Can you spread this, with a knife maybe? I was thinking of using it as a fatfree cake topping (only top, not sides) and wondering if that would be at all possible?

    Love a recipe where the 3rd ingredient is water! I was very pleasently surprised because I thought that you were going to use your self made condensed milk that I can never be bothered to make so this is much better. I am trying to stay away from sugar for a few months to improve my health, once I start eating sugar again this will be one of the first things I am going to make!

    I use a couple of alternative sweeteners that are brown for many things, looks very much like the coconut sugar. I prefer this since I’m diabetic and I don’t want my blood sugar to be affected like sugar will… I must try to make this using it… 🤗💚🌱🍀🌱💚

      @@ChefJana I tried the recipe and I think the water to oats ratio does not work correctly if you use boiling water - the oats absorbed all of the water! I had to add so much more water to get some kind of oat milk out of them 🙂 I think the soaking overnight method would have worked much better - I will certainly use that next time. The caramel was great though, what a great invention! ❤

    I was looking for this recipe!! Thank you! I was tempted to try it with sugar that I heat up for making caramel and then add the milk. Have you tried this? Coconut sugar is very expensive where I live.

      Pancakes, for cake filling, you can put it inside the croissants, with bananas, you can mix it with peanut butter (and vainilla, cacao) and tastes like nutella!

      Not really... have you noticed how think and sticky my oat milk was? We actually need this thickness and creaminess. This happens because the oats pressed only once and the store-bought oat milk are usually waaaaaay too thin for this

    Someone told me, a long time ago, that she made caramel or dulce de leche by putting a can of sweetened condensed milk in a pressure cooker filled with water and pressure cooking it for about 40 minutes. Could a can of coconut cream be pressure cooked the same way to make dulce de leche? Do you think the procedure is dangerous?

      Yes! We use to do that in Brazil, and in the future I will show you guys how to do that properly, using canned vegan condensed milk, both using regular pan as well as a pressure cooker. Stay tuned ;)

      @@janetwunder3000 I used to make the non vegan version like that, put cans in boiling water. But there needs to be sugar in the product to caramelize so unless there's a lot of sugar in the coconut cream it won't happen. My non profesional opinion 😊

    I think your ratio is off. Shouldn't there be more water to make the oat milk? Usually it is 3 parts water to 1 part oats.
