  • NIGERIAN Cooks Halloween Pumpkin. This is how i would prepare Halloween pumpkin with a Nigerian recipe. This recipe is how we prepare a look-alike vegetable (anyụ) from Igboland Nigeria. Just replace anyụ with halloween pumpkin and voila, you have a delicious vegan recipe.
    ❤ Ingredients
    - 1kg (2.2 lbs) Whole Pumpkin
    - 800g (1.8 lbs) White yam
    - 1 red onion
    - Habanero pepper (to taste)
    - 1 cup shredded Oil Bean seeds (use mushrooms as alternative)
    - Red palm oil
    - 300g (10 oz) Spinach
    - salt

      It's so simple: boil the pumpkin with same level water, carrot, onion, olive oil, salt, black pepper. When soft, blend and add milk while blending. Then warm it up again if you want it piping hot. Serve with baguette.

    Hi aunty flo, i have some questions.
    I was wondering if anyu is the same plant that produces the ugu leaves.
    Also is anyu same with what some igbo people call ugbogulu?

    I did prepare it like porridge with a lot of water when I was on keto diet. I wish I had known this recipe with ukpaka. Thanks for showing us alternate to ukpaka cos mine has finished since I was like how did you take out the things inside and still use the pumpkin to dish out the food 😂😂. Then you started peeling off the skin. It now dawned on me that you bought two lolll

      😂 Yes, I used two. I later used the serving one to make pumpkin soup for Nnedi, she wanted pumpkin soup just like they served them in her school cafeteria.
      It's definitely great for keto, I was surprised when I saw how low the carb content is.

    Presentation is everything as well as taste. This stuffed pumpkin looks devine! What does ukpaka smell and taste like? btw - I'm vegan

      Thank you. ❤ Ukpaka mostly has a neutral taste. It adds more of texture to food than taste actually. The more fernented it is, the stronger the taste yet still a mild taste compared to other ingredients with a strong distinctive taste. So mushrooms are close.

      The leaves is used to make soup. Very delicious 😋. I missed that soup
