OMG I whole roasted a butternut squash today and I literally just ate half of it plain with salt and pepper he's right IT CARAMELIZES AND THE SKIN IS AMAZING! how lucky I always hated peeling the skin off of these things such a hassle

sweet pulpy fleah squash (buttercup/butternut) .....eat the skin... watery varieties, like pepper squash the skin is not very good.
Gennaro, I cannot say it enough, you are such a light and the best antidepressant ever. Your recipes are great. I already imagined making that hummus, but with roasted garlic instead of chili. Part of my lunch for tomorrow is set.

I had a soup in Germany with little crispy leaves strewn on the top , didnt know what it was! My German is limited but after a little back and forth with the server I found it was crispy fried sage absolutely delish!

I tend to stay away from the big hard squash because I no longer have the strength to cut them and it frightens me. So.....now the door is open again. Thank you!💕

I like that you demonstrate that you can use just about anything to get the same affect. Some might not attempt a recipe if they don't have the correct tools. I agree with Teddi P doing things on the fly is refreshing, and REAL.

Every fall I love making a butternut squash and apple soup! Years ago I bought a carton of butternut squash and apple soup from the supermarket and it was... underwhelming, to say the least. So I made my Own!
Equal parts butternut squash and a mix of apples, along with 1-2 onions and 2 carrots. Chunk it all up and roast them in the oven so they get all brown and smell amazing. (I roast the apples with the onions and the carrots with the squash, because everything takes different times.) While that's roasting, I grind up and toast a handful of mulling spices. then I put everything in a pot, with the spices, all the roasty everything else, toss in some dried chilis and bay leaves (if you can find fresh bay leaves those are incredible), then I top it off with chicken stock (or, keep it vegetarian and use veggie stock) and let it do its thing on the stove for a bit. At least an hour. Then I blend it all up and strain it through a mesh strainer to get out the tiny bits of spices and to make it extra creamy. Back in the pot, I add some heavy cream. Bowl it up with some tasty sour dough bread and a dollop of sour cream. It's autumn in a bowl and the whole house smells incredible all day!!

I've made the last recipe - squash + chickpeas + chilli + lemon etc. I forgot the coriander leaves, but the thing turned out so delicious I got iffy about even adding the leaves! I used to be stuck with just boring roast chunks of squash. this recipe is opening new horizons - Jamie, thank you!

These are the kind of videos I like most! I can do other things and listen/watch at the same time! I added this video to my Sage and Squash video playlists.
I cook up many sweet potatoes at one time too! Unlike butternut squash, the flesh below the skin of the sweet potato, if it is grown in loose soil, tends to be more "stringy" beneath the skin and above the flesh. It grows long and skinny but I like them the best so I just remove the strings, :)

One of the things that make Butternut Squash so GREAT is the shelf life once you harvest them.
I picked 18 B.N. SQUASH from 1 plant Oct.2018 and I have 6 left in my pantry March 3,2019.
These will probably last 2-3 more months. Thats a pretty damn good shelf life for a vegetable.

Tried this out today. Was really delicious. We used a teaspoon of rice flour and a 4 teaspoons of corn flour... it turned out to be nice and crispy...

Hello! I am so looking forward to baking my 2 butternut squash-all the recipes on this premium show have encouraged me to do something new!!! At 71 years of age, cutting a butternut squash seemed almost loss of finger threatening!!!! Thank you for the show!!! terrific!
