He has THE perfect balance of giving background info and practical tips for the matter at hand. His delivery is incredibly soothing, but lively. I don’t have enough praise for Lucas. Every other on-screen cooking personality on UA-cam should be studying this.
Yes, everything about this presentation is excellent. Even the slight background music. So many cooking videos have a distracting background. This low level background sound works for me on a cooking show.
I'm going through a slow binge of Lucas videos and I can't believe I get to watch these videos for free. It's not just about the quality communication and knowledge for me - as a diaspora Asian with HK immigrant parents I never felt super connected to my heritage, but seeing someone on screen explaining the techniques that my mum taught me to use and (also in other videos) explaining why she prepares food the way she does provides so much of that unspoken context I just don't know about and it's refreshing to feel this validation. Hope to see many more videos with Lucas in the future!
Even as a white guy, without the heritage aspect...Chinese cooking is so deep and so very different from western styles that it is absolutely wonderful to pick up the techniques and flavors! It really opens a whole new world of experiences. He just explains things so well it can make you feel nostalgia for a life you've never even lived.
China has such a long and ancient history with thousands of years of refining cooking techniques and flavors from different regions and ethnic groups. I'm glad Lucas is able to introduce even just a little bit of that.
Tried Lucas' technique this evening with kale. Kept it simple, no egg drop just single aromatic (ginger) and equal pinches salt/sugar/msg. Literally said "wow" when I tasted it. Incredibly tasty. The sugar and msg add dimensions beyond just using salt, and the ginger was surprising in how well it came through This literally has changed how I'll now braise greens.
@@wongilank msg is just a quicker way versus slow boiling a pot of deep chicken broth that needs hours of boiling. typically restaurants use this chicken broth to give the dish umami instead of msg
Lucas is a personality that needs his own show. This video should be a staple for anyone who only makes salads to get their leafy greens. Asian culture knows what’s up when it comes to veggies, Western culture, not so much.
absolutely love Lucas especially when he breaks down the basics and compares restaurant techniques vs more accessible home cooking techniques. it's so nice to watch him cook food which I've grown up eating but have never learned to cook. also love the comments section of all Lucas videos, pure love and support for this man and his buttery voice.
I just love the way Lucas explains the science behind the cooking so that you can apply it to other vegetables. It’s not just one recipe. He’s the best! I learn so much every time. Thank you!
He's surgical in his instruction yet charming in the way he sprinkles in the storytelling. And the cadence of his speech is so soothing. I want to try cooking everything he makes, it looks so yum.
I love the way you provide foundational knowledge and frameworks that are DIFFERENT from western cooking. This is an important point to begin with because otherwise the lens that westerners use to understand Chinese cooking is off. And, they don’t even realize they are using a framework that is western rather than accurate to Chinese cooking.
Every video with Lucas Sin is a dang master class. I always learn some fascinating esoteric info, not to mention authentic and practical tips for his style of cooking. I'm so grateful for his explanations and his methods for adapting the techniques to a Western home kitchen. Another commenter mentioned they would watch anything with Lucas in it. Second!
Lucas: Don't know if you ever read these comments yourself but you're one of the best food educators there is in the world for home cooks and chef's alike. I'm hoping you'll consider writing the *Chinese* version (in English) of _The Food Lab_ meets _On Food and Cooking_ meets _Brilliant Food Tips and Cooking Tricks_.
I love yam leaves. My mom just boils them and we eat them with tomatoes and fish sauce and some plain white rice. I've used them in pasta in place of spinach, and you can't even tell the difference.
Finally a chef who actually deserves the fame and a platform to share what he does best. The internet is filled with talent-deficient fakes who make it through flashy personality and clout. Lucas is uniquely talented and incredibly knowledgeable; a breath of fresh air and a pleasure to learn from.
The sheer amount of new to me information per second of this video is insane. And so casually delivered. Lucas is fantastic and the style and substance is that of a natural teacher. Thank you.
"Because of tradition" Yes, Chef! I agree with all the other commenters. Lucas Sin is a master and I feel lucky to learn from him. For free?! Unbelievable.
I’m not a big vegetable eater, my diet needs to change, greens are on the menu. Now these greens I could manage, my wok needs to come out of retirement 😉 Thank you, great job I enjoyed this video.
Just love how meticulously Lucas prepare his food, particularly how he compensates for the imperfections of nature’s vegetables’ forms. Such important attention to details that make a huge difference in result. Love, love, love this channel.
Hong Kong Food Culture. For many people in Asia. Hong Kong has traditionally been known to have the best food; major cuisines of the world are all very well represented in HKG. Not surprised culinary excellence is built-in with Lucas . Now, America and the world benefit on UA-cam.
This content is really so fantastic! The type of staple home cooking skill that people can benefit from, as HK diaspora hearing him say Gai lan on screen was so nice for some reason, that's probably my favorite leafy green
I could live off of the hand torn cabbage dish with a steaming bowl of rice. Loved eating veg dishes in China.. everything just tasted fresh and crunchy. And sooo many veg options
I grew up with stir-fried greens, but I'm here for Lucas Sin -- just love the way he demonstrates cooking and talks about food. Yam leaves are delicious, and so are pea shoots!
This guy is the BEST. I love his style and how informative he is. It's also the perfect level of cookery for most people on cooking youtube videos. It isn't beginner but it doesn't assume you are familiar with Chinese cooking techniques.
I think I’ve mistaken MSG with Szechuan Peppercorn my entire life. Last night I used the Peppercorn I threw a handful in and was surprised by the “zing” it made my mouth numb, a flavour I’ve always attributed to too much MSG… but there was no MSG. Don’t get me wrong, I love MSG and SP I just realised I don’t need to use that much. Thank you Lucas you have made me a better cook this last year my diet has changed completely… just brilliant. ❤
This is an absolutely fantastic tutorial. Perfect delivery. Thank you so much. As an avid vegetable gardener, I think it would be very valuable to learn to stir fry well. This will go a long way. 💚
Thank you Lucas, we absolutely love you! Seriously the best chef & educator on UA-cam! We always learn, not only how to cook but the reason behind it 🤗😘🤗
Chef Lucas is so amazing in explaining and describing a dish or technique and the reason why it’s cooked a certain way and understanding to steps and in cultural sense and seasonality as well thanks Chef I love watching u wish u had more vlogs with u cooking
These videos are brilliant - love to learn about the techniques and not just the recipes themselves. Also lovely to hear about the background and traditions these ideas come from.
I just watched your video for the first time, and I find it extremely impressive and familiar. Your cooking is delicious and very easy to do. I really like your channel and I will follow your channel every day so I can learn your cooking. I hope you will make more videos, and be loved and watched by everyone. I wish you much success in life.
I love Professional cooks, i follow a handful on you tube. and this guy Lucas, especially for Asian cuisine, you are amazing, just the facts and why, Kenji knows, I am enjoying this and have now a new subscriber. Great content.
love this!! this is all the ways i grew up eating vegetables, it used to baffle me why fellow american non-asian kids didn't like vegetables, they always tasted good to me
I really enjoyed this video! Lucas has a calm, clear voice with great delivery of the detailed info about why you do things this way and what happens when you do. I look forward to trying some of these dishes and looking for more of this videos! Thank you Lucas!
Lucas you need to maybe spend more time with American southern cooking. I was raised on Collard, Mustard and Turnip Greens, Cabbage, Okra, Spinach, Green Beans, Snap Peas etc. Plenty of Green Veggies over here.
Yes! I love watching Lucas's videos. The comment in this one, though, about coming here and only having greens in salads? My parents are from the South, but I grew up in the Pacific Northwest. We cook greens all the time, of all varieties. I also have access to great Asian supermarkets, so I've been buying the same greens he's showing in this video for years.
Lucas's a a master educator with a respectful and easy going style that is point on and worth watching and learning from. Educational and entertaining. The "lobster sauce" was a standard and popular sauce with stir fried shrimp in SF in the 60s and 70s (using a little black bean sauce added for that umami lobster flavor). His eye opening explanation on vegetable stir fry is illumination especially having lived in HK for 11 years and finding so many inconsistencies in vegetable preparation. Found out that watercress is a superfood and which I use in healing soups, but have not found a credible way to stir fry this. A possible future video?
Uh oh...found a teacher I will end up binge watching. I studied real Chinese cooking during the lockdown. Lucas Sin is going to take my skills to a much higher level
This guy's great! He's succinct and efficient with his "clinic". I've taken up Indian and Asian cooking these past few months and am subscribing to him along with the Thai woman from Vancouver. I made his tofu the other night and what a great result I had.
I'll watch anything with Lucas in it.
He’s yummy!
Word 👊
Same he’s why I subscribed
Me, too
Can’t get enough of him
He has THE perfect balance of giving background info and practical tips for the matter at hand. His delivery is incredibly soothing, but lively. I don’t have enough praise for Lucas. Every other on-screen cooking personality on UA-cam should be studying this.
Agreed. He is an excellent teacher!
I love Lucas!
Oh, I am. And I completely agree with everything you've said here

I love Lucas Sin’s calm voice and elegant precision. He’s a natural educator. Thanks for this.
I’m a high school teacher and I was just thinking the same thing. Then I saw your comment. Totally agree.

This man really understanding how to convey his technical knowledge of cooking without making it boring. A truly natural teacher
This is like a masterclass in cooking Chinese vegetables. Lucas is just excellent!!!
My exact thought: he needs a Masterclass
China has such a long and ancient history with thousands of years of refining cooking techniques and flavors from different regions and ethnic groups. I'm glad Lucas is able to introduce even just a little bit of that.
I love this man I will follow him into the steamy vegetable abyss.
lol. x

I'm sure that's mostly because of msg ;)

The devil is a liar!
My frig is FILLED w/green leaves for DECADES.
Give this man a show. And a book contract. And love the very gentle, subtle, Kenji shade :-)

So true. If you think about it. Similar type of vegetables can be cooked the same way and the ingredients can be whatever you like, to a point.
He's surgical in his instruction yet charming in the way he sprinkles in the storytelling. And the cadence of his speech is so soothing. I want to try cooking everything he makes, it looks so yum.
Lucas breaks it down the way my Cantonese mom has never been able to - now I want to try these techniques on ALL the greens! What an awesome video…

Chef Sin is the BEST cooking teacher on youtube! Good instructor with explanations of why a step is done.
Luacs is quickly becoming one of my favorites to see on any cooking channel!

I’m not a big vegetable eater, my diet needs to change, greens are on the menu. Now these greens I could manage, my wok needs to come out of retirement 😉 Thank you, great job I enjoyed this video.
Lucas is an excellent contemporary ambassador to Chinese cooking. He's like a hipster Yan Can Cook.
I love Lusas’s presentation. I truely enjoy listening to his stories and all the information about WHY things are done a certain way :) kudos
Just love how meticulously Lucas prepare his food, particularly how he compensates for the imperfections of nature’s vegetables’ forms. Such important attention to details that make a huge difference in result. Love, love, love this channel.

The best greens I’ve ever had have been at Chinese restaurants. I never knew greens could taste that good.
