Cranberry Orange Loaf With An Orange Cream Cheese Glaze | Easy One Bowl Quick Bread

Recipe:
1 ½ cups flour
1 teaspoon baking powder
¼ teaspoon cinnamon
1 teaspoon salt
⅓ cup melted butter
1 cup sugar
2 eggs
1 teaspoon vanilla
2 teaspoons orange zest
2 tablespoons orange juice
½ cup milk
1 cup cranberries
1 tablespoon flour
Cream cheese orange glaze:
2 ounces cream cheese
2 tablespoons melted butter
½ teaspoon vanilla
¼ cup icing sugar
2-3 tablespoons orange juice
1. Chop cranberries into smaller pieces and set aside.
2. Zest and juice one large orange into a bowl.
3. Add the eggs, melted butter, vanilla and sugar into the same bowl and mix until combined.
4. Add the flour, baking powder, salt and cinnamon into the wet ingredients along with ½ cup of milk. Mix until just combined.
5. Add 1 tablespoon of flour to the cranberries to prevent the cranberries from sinking to the bottom of the loaf.
6. Fold the cranberries into the batter and mix until just combined.
7. Spray a loaf pan then pour the batter into the pan.
8. Bake in the oven at 350°F for 35-40 minutes or until a toothpick inserted into the center of the loaf comes out clean.
9. To make the glaze, mix softened cream cheese together with the melted butter, vanilla, icing sugar and orange juice.
10. When the loaf has cooled, take out of the pan onto a wire rack, then pour over the glaze. When the glaze has set you can slice the loaf.
