If you want that true cream cheese taste, use 1 1/2 bars of cream cheese. Do NOT let it sit out at room temp. Cream it straight out the fridge. I don’t cut mine until I let it sit in fridge for at least 16hrs after I make it. You want it to set back to the stiff/solid form of the cream cheese before cutting. I’ve been making this particular recipe for over 25yrs.

@tonyl7405 curious as to why can't you use room temperature cream cheese? How would that make it taste differently? It's a little more difficult to beat it when it's cold.
@@donnasingh5326 if you beat it at room temperature, it gets extremely soft and it will take a minimum of 2-3 days for it to go back to its solid state in the fridge. But trust me, it’s really not hard beating it straight out the fridge. I’ve been making it this way for well over 20 years that way and have made many in that time period. It won’t make it taste any different, it’s the presentation of it. When you cut it too soon after preparing it at room temp, the rest in the pan will just slide right over flat. But even when I do it my way, I still give it no less than 18 hours to sit in the fridge before I cut it. It never slump over. The extra half bar of cream cheese is what gives it that true taste of cream cheese. Try it both ways and you’ll see what I’m talking about and let me know how it turns out. I wished that I could send you a picture of mine on here for you to see.

I make a caramel cheesecake, with the same method, but I use Dulce de leche, instead of condensed milk, and I do use two cartons of cream cheese. I also use lemon juice. It is absolutely delicious, and a nice variation, of this easy dessert. If you want to avoid the cheesecake from slumping, put it in the oven for 10 minutes at 350f/180c, and then allow to cool on the counter. Then place it in the fridge. You just have to wait 1 to 2 hours for it to chill and set. Then you don’t have to wait 18 hours for it to set again.

Oh my goodness this brings back memories. I’m in my seventies and my mum used to make this when we were children. The one difference was the base, she would crush cornflakes, mix in some butter (I can’t remember if she added sugar, but if she did it would not be very much) and bake until set and crispy. This is delicious topped with blackcurrants, raspberries, finely chopped pineapple or anything tart to balance the sweetness. I used to love this, now I would definitely have to add much more lemon juice.
My mom made this for my brother & I for every birthday and holiday except she would use 1 block of cream cheese. So good. I have made it adding whipped cream and it’s a nice fluffy treat. I have also substituted using lime juice and pineapple juice. So good. ❤️🧡💛💚
Had this recipe in a kids cooking book back in the early 70s, it was one that a child can make without help from their parents as a surprise either cause mum is ill or it's mother's day. They put jelly (jello??) on top instead of fruit and used a base of ginger biscuits crushed and mixed together with melted butter as a casing. Tastes lovely and mum often made it as a summer cheesecake as it's quick and easy.

If you add a few eggs to it then you can bake this. I have a recipe that has all these ingredients and eggs. Then once it cools you top it woth a thing layer of sour cream. Yes sour cream. My husband who hates sour cream loves the recipe and says the sour cream makes it.

I would be tempted to put some miniature semi sweet chocolate chips in it, to give a sort of cannoli feel to it, or possibly add cocoa powder, or dried chopped cranberries.

A quarter cup of lemon juice and a teaspoon of vanilla. You also might want to mix in a small envelope of unflavored gelatin to add a bit of firmness so the final product isn't too soft like the consistency of melting ice cream after you take it out of the refrigerator.

I use one pack of cream cheese, about a fourth to a half of a cup of lemon juice, a half of a can of sweetened condensed milk and some whipped cream. Mix it all together, put it in the graham cracker crust, refrigerate until set and… mmm, mmm, delicious. 🙂 The original recipe that i found on You Tube called for two packs of cream cheese and a whole can of sweetened condensed milk. However, that’s just too much for me. I fix it to my own liking and it’s just fine. I think I’ll try this recipe for the cheesecake. I really don’t care for too much cream cheese or all that topping. That's how I make mine too but I use the lemon juice instead which gives it a nicer flavour
