How to make Scottish tablet

- A relatively new favourite. Very rich with a buttery vanilla taste, much like a soft and crumbly fudge, it melts in your mouth. Easy to make and very forgiving.

OMG! I lived in Scotland as a child, and I remember having something that was fudge like. It had a sweet, crumbly texture. I've spent my life trying to figure out what it was, AND I THINK THIS IS IT!!!! I'm so excited to try this and see!!!

The difference between fudge and tablet is that fudge is quite soft and tablet has a ‘bite’ to it.
Melt 250g of unsalted butter with 250ml of semi skimmed milk in a large pan. Pour in 900g of sugar slowly stirring continuously. Boil for 5mins. Add 1 tin 397g of sweetened condensed milk while stirring. Boil for 20mins stirring intermittently. Take off heat and leave for 5mins. Stir well and pour into a lined tray(baking parchment) Cool in the fridge for at least 2 hours. Lift out tray and cut into squares. Love from Scotland.

😋 I use Half and half or heavy cream. I don't usually have any canned milks on hand but I always have half and half for coffee. So, yeah, every old recipe we know of that uses store bought stuff was originally made with things the women had at home. I always try to find those versions (or tweak the more modern ones) because I try to cook with what I've got. But oh my this looks so YUM. I just ran out of my recent batch of Tablet. I think that this video showed up means today I need to make more! 🌴 Thank you

You're absolutely right. You should be able to make this with any type of cream. We always tend to have a bit of shelf-stable condensed or evaporated milk on hand since it has a good long shelf life and doesn't require refrigeration, but if you only have fresh, that should work, too. Flavouring is an option not a requirement, if the temperature is taken up to 17°- 18°c the mallard reaction will infuse it with a wonderful taste also if you play about with a slightly lower temperature and less beating at the end you can end up with fudge. My ingredients are slightly different and the sugar is added last to the heated milk and butter and I beat the mixture with a wooden spoon before pouring out the tablet but the end result looks much the same but perhaps a bit darker . I'm going to give your way a try when I get my weight down a bit.

My son told me about this fudge his friends mother made (She is Scottish) he couldn’t remember what it was called. My son will be happy when I make this for him as I think it was Scottish tablet she made. 👍

Half and half or heavy cream. I make mine with half and half. I don't usually have the canned Milks on hand but I always have half and half for coffee.

I can imagine that Maple flavour would be really good, too. Perhaps with some walnuts or pecans added in. Phil avoids nuts so I wouldn't put them in ours, but I may definitely try Maple flavouring someday. Perhaps a coffee flavouring could work, too.
I use maple syrup or salted caramel. But I saw some people here (Scotland) use golden syrup as well. I think that’s corn syrup over the pond. I’ve even seen someone use cinnamon. The recipe is quite flexible that way in terms of flavourings 😊

Is the taste very similar to fudge?
It does taste like a butter fudge, also very addictive.
I have looked all over the place for condensed milk and I can only find sweetened condensed milk. Even Amazon doesn’t have it. Any suggestions? Thank you in advance.
Sweetened condensed milk is what you use! I'm Scottish. 🙂

a Teaspoon of vanilla should be more than enough for that quantity!! 2 tablespoons is way overkill .
Wish you would use grams and not cups..
