This is what I miss so much about my dad, a through and through Scotsman. Also Cullen Skink, although he never called it that. Me I am English although I consider myself half Scottish. I don't like porridge though, my dad made me eat it with salt so even the smell makes me sick now. Sigh even as a 51 year old man, I still miss him.
Oh my this stuff was my favorite as a child. My grandparents spent most of their retirement in Scotland and they’d bring back a bar for me and my siblings every time. I’d take it to my room and try to savor each piece because it was the only treat I ever got but probably covered my entire sugar allowance for the year. I’m definitely going to be making this!

If you ever head up to Fife, down in the harbour in Crail is a wonderful tea shop set in a very old stone cottage. On a nice day you can sit in the courtyard in the back and look over the sea and the chickens. A chicken laid a blue egg right in front of me!

Have made lorne sausage, millionaire's shortbread,shortbread and tomorrow am making tablet,(my wee granddaughter will be swinging fae the lampshade😂) Loving the way you explain each step of the recipe,thank you and you have got this 63yr old back into baking and enjoying it👍💕
I used to love when my great aunt would visit us in Canada from Scotland and bring some tablet and Edinburgh rock. So good. I got a recipe from my English father in law’s Scottish mother. She called it fudge but I know it’s tablet. I didn’t know I could beat it with my stand mixer, but I had my nephew do it which saved my tired arms.
I used to make this all the time for the bairns when they were small. One of them just asked me to make it and i couldnt remember it clearly so Thank you and im going to make it today

OMG! I am a great lover of Scottish tablet and I've had none since my return to America. Now I can make my own woot woot!! :-) I would describe Scottish tablet as more like a thin sugar cube held together with butter and vanilla. It is sold like a candy bar but I have to be careful because if I make this I am inclined not to be too disciplined with it.
You use your mum's method, I use my gran's. It doesn't matter it tastes delicious anyway. I love the fact that you don't use a thermometer and look for the craters forming. I do the same. I love your recipes and calm style of explaining everything.
I haven't had that since my wee Scottish Granny made it when I was little. I live in the US and hearing your accent brought the sound of my childhood right back since all my family with the accents are gone.

My mother allways said the secret for good tablet was the beating after removing from the gas,with a wooden spoon ,and my brothers and sisters fought over the rights to lick the spoon afterwards :)
My Scottish Mom had biceps like a body builder and could beat the daylights out of the tablet when making it, I would try and my arm would be tired within 3 minutes, I couldn't get over how strong my tiny 5'1 90-pound Mom was. I always joked it was because she made tablet all the time and built her biceps up from it lol.

My grandfather called this cream candy and I couldn’t get enough as a young boy! Like MyMagic111, I was born and raised in Québec. My grandfather was French Canadian and was a Campbell. The blend of Scottish folk and the French Canadian folk made for a wonderful mix, as well as marvellous tablet.
My Mom made this all the time and gave a batch to my friend, my friend gave a piece to her Grandfather who is from Mexico and he said, this is the best jamoncillo de Leche I ever had, she had to correct him and he said, I knew there was something different with it but I thought it was from Mexico, and from that moment on he never stopped asking my Mom to make this that wonderful Scottish Candy lol.

I wanted to make sure as othee videos say no stirring and leave for 15 minutes and then stir, and some say to put the condensed milk after the sugar has melted. Im going to try your recipe ❤
Most Scottish tablet sold in shops over there is pale and crumbly along with being crunchy. The care just isn't taken but I still think it's lovely and yours looks a treat!
When I put the mixture into the tray, I place cling wrap over the top and pat it gently all over with the palm of my hand to smooth out the surface. Just be careful as it can be quite hot, I always fold the cling wrap inwards before discarding it into the bin. Thank you for sharing your recipe xx
Every day, when I was in primary school I'd go to the shop down the road and buy a pound mixture, some fudge and couple bars of tablet, my teeth suffered but it was worth it LOL
My favourite was 'Strathaven Toffee', but they don't make it anymore 😭. My Mum always brought it over when she came (I'm in Australia), many years ago. I'm not sure what the difference was, but it was more like tablet than it was a toffee or even fudge. As for tablet itself, I never mastered the art of making it, it always came out more 'fudgey'. So, I will try to make it now that you have shown me exactly how to do it. 🙂
Mine looked like yours until i put in the food mixed and then it turned to crumbs right away.. like the sort you put in a cheese cake base. where did I go wrong?
PI almost made this the other day. Made French toast for breakfast and discovered I had no syrup. Used a dash of vanilla extract and half a stick of butter and boiled it to the soft ball stage. Didn't taste exactly like my mom's but it was edible. I still had some left so had pancakes and reheated the syrup. This time it turned brown and crumbly. Still good and I didn't waste anything.
Brought up on this, haven’t had it in years. There are so many variations now, my mum chopped up ginger and put it through as an experiment, delicious!

Whit a nice wumin... My man absolutely loves this confection. That amount would only last about 3 days with him. I find it far too sweet so he gets the lot, bar 1 or 2 squares lol xxx
Tablet can keep for about 2 weeks after being made. This is if it is in an airtight container, and stored at room temp. If not, keep it airtight, but put it in the freezer and that will keep for 5 months typically. Tablet is mainly sugar, so it’s shelf life is pretty good.
Looks great :-) When I remember my father making this I seem to recall him pouring it into a tray, so assume he didn't use a blender at the end. May give this a go though :-)

This tasted perfect… but, it turned to powder when I cut it. Not sure where I went wrong. Everything looked perfect up till I put it in mixer, I could tell right away something was wrong with the texture. So I stopped mixing and put it in the tin. But when it cooled the texture was not right. Where did I go wrong??

I come from the island of St. Helena in the south Atlantic and our fudge is the same consistency as Scottish tablet. It's the drier crumblier texture, not toffee texture.
Nothing wrong with "rustic"! I have only had tablet from some factory somewhere, supposedly in Scotland. I wasn't impressed, too much sugar for me! I'm not big on sweets, but I love authentic stuff! Check out Townsends for recipes from history. No, they aren't paying me, but maybe they should :p I'd be happy for a dollar per week from them, even as a gift card for their shop! Anyway, they do historical cooking, mostly from the 18th century I realize you are a long way from Indiana I think that is where they are), but it would be super if you could do a collab with Jon. You show him some really old recipe in your modern kitchen, and he cooks it in his replica of a very very old kitchen. Or something. I mean, if you visited him, that would be FAB! but expensive. I wouldn't ask you to make such a trip as much as I would love it. Maybe through the internet, you could work something out with Townsends? There is also Tasting History, which does recipes for all over and many time spans, but he is much more about the history than the cooking. NOT bad, mind you, but not so different from what you do, except the history lesson he includes. I wouldn't mind if you threw in more history, but your other fans might not enjoy it so much. In any case, I hope you and yours prosper in every healthy way possible! You make the world a better place, so thank you very much for that!.
Nice recipe amount...but Offt it was all going well...but the mixer seized it a wee bit am gonni stick to the wooden spoon! Also discovered I don't like the vanilla...definitely prefer the buttery taste.
What's For Tea? I quatered the recipe and boiled for 20 minutes. When I tried beating it, it started to set within 30 seconds so I quickly pressed into a tin and it actually came out perfect! Didnt have the depth of flavour of tablet that I've tried before but still delicious. Was wondering if you've ever tried different flavours?
I was given a piece of this--homemade by Scotsman--at tea this week, and I forgot to eat it! I'm so disappointed in myself. Never had it before..... and I still haven't!
Scottish fudge recipe. 450g of golden caster sugar 400ml of double cream 50g of unsalted butter 1tbsp of glucose syrup Put all ingredients in a medium to large pot. Melt all ingredients turn up heat bring to a steady boil stirring often till mixture reaches soft ball stage take off heat leave to cool for 5 minutes stir in vanilla extract and a good pinch of salt beat like crazy till mixture cools to 60oc pour into prepared tin. Voila Scottish fudge 😁😁😁 always best to use a sugar thermometer

Mate, I hear you. My Yorkshire father force fed me mushy peas and Brussel sprouts. It’s taken 50 years for me to be able to stomach them again.
I eat savory oat meal with eggs . I put salt and pepper and butter and some cayenne pepper , then plenty of parmesan cheese . Try it , might like it .

My sister made some this Christmas but she added Marula Cream Liqueur (one of our South African liqueurs) and it was delicious.

Add a generous splash of Baileys Irish cream for an adult xmas version. A friend of mine would add a couple of cardamon seeds, interesting flavour!

Mine only needed 30 minutes on the heat and I should've probably pulled it at 25. Watch your temperature.

Your mix is over done by about half the thickness , you don't want pure solid bits , you want it to be able to melt in your mouth

I come from the island of St. Helena in the south Atlantic and our fudge is the same consistency as Scottish tablet. It's the drier crumblier texture, not toffee texture.
Nothing wrong with "rustic"! I have only had tablet from some factory somewhere, supposedly in Scotland. I wasn't impressed, too much sugar for me! I'm not big on sweets, but I love authentic stuff! Check out Townsends for recipes from history. No, they aren't paying me, but maybe they should :p I'd be happy for a dollar per week from them, even as a gift card for their shop! Anyway, they do historical cooking, mostly from the 18th century I realize you are a long way from Indiana I think that is where they are), but it would be super if you could do a collab with Jon. You show him some really old recipe in your modern kitchen, and he cooks it in his replica of a very very old kitchen. Or something. I mean, if you visited him, that would be FAB! but expensive. I wouldn't ask you to make such a trip as much as I would love it. Maybe through the internet, you could work something out with Townsends? There is also Tasting History, which does recipes for all over and many time spans, but he is much more about the history than the cooking. NOT bad, mind you, but not so different from what you do, except the history lesson he includes. I wouldn't mind if you threw in more history, but your other fans might not enjoy it so much.

Is the condensed milk you use sweetened? What we have available in the US is sweetened. That seems like a sugar overload!
Yes it is sweetened and is a lot of sugar but delicious ,you need to hold yourself back from having just one more wee bit
Nice recipe amount...but Offt it was all going well...but the mixer seized it a wee bit am gonni stick to the wooden spoon! Also discovered I don't like the vanilla...definitely prefer the buttery taste.

What's For Tea? I quatered the recipe and boiled for 20 minutes. When I tried beating it, it started to set within 30 seconds so I quickly pressed into a tin and it actually came out perfect! Didnt have the depth of flavour of tablet that I've tried before but still delicious. Was wondering if you've ever tried different flavours?

I was given a piece of this--homemade by Scotsman--at tea this week, and I forgot to eat it! I'm so disappointed in myself. Never had it before..... and I still haven't!

Scottish fudge recipe.
450g of golden caster sugar
400ml of double cream
50g of unsalted butter
1tbsp of glucose syrup
Put all ingredients in a medium to large pot. Melt all ingredients turn up heat bring to a steady boil stirring often till mixture reaches soft ball stage take off heat leave to cool for 5 minutes stir in vanilla extract and a good pinch of salt beat like crazy till mixture cools to 60oc pour into prepared tin. Voila Scottish fudge 😁😁😁 always best to use a sugar thermometer

Condensed milk is unnecessary .
Correct portion of sugar butter and milk gives a great tablet. Vanilla essence optional extra at the end.
