This is honestly one of the only UA-cam channels that is professional enough to be on tv. There’s no dumb intro like “WHATS UP ITS YOUR BOI.....”. Seriously, this needs to be on tv. I’d watch it every week.
i love watching things like this because it reminds me of the cultural differences even in "similar" countries. mexican tamales are so different from costa rican tamales,, just wow. it's so cool
Tamales are different even within Mexico. North Mexico (smaller, greasier) tamales are way different from Center Mexico tamales (bigger, with crumbles), that are different from South Mexico tamales (tamales oaxaquelos: large as center's, thin and greasier as north's, but with more herbs and using banana leafs instead of corn husks)
TIL that there's over 500 varieties of tamale in Mexico alone; add in the rest of Central/South America, plus Hispanic US dwellers and the Caribbean variants, and you've probably close to tripled that. And that's without even coming anywhere _near_ family recipes!
People out here saying “this is wrong” and “you should’ve done this or that” chill. The beauty of Mexican food is that depending on the region, state, even town/city dishes are prepared differently. Tamales in Oaxaca are different from Jalisco, but they’re still tamales and are authentic.

There is another version of tamales that my family makes occasionally. They are sweet tamales. We change the dough a bit. We add sugar, cinnamon, and raisins. (Maybe vanilla extract sometimes) We also add pink food coloring to tell apart the sweet tamales from the spicy or savory ones. Or maybe instead of pork, we like to have cheese and jalapeños.
@@HayTatsuko I forgot about this comment, but someone else commented and I saw this. We usually use queso blanco. A Mexican white cheese. (Yeah it’s redundant, but that’s what it says on the packages and signs when we buy it.) But really any cheese could work. It’s based on preference.
My mother taught me to not make pork tamales during the summer or on hot days because it spoils in the heat. So, we reserve making pork tamales for thanksgiving and Christmas time. On hot days we make chicken tamales.

Awwww yah the big and thick tamales are the best since I am Mexican and every time family comes over and we make them let me tell you something OMG my grandmas thamales are the best cuz she makes them with lost of fillings
These comments are a nice mix between people appreciating the recipe and people utterly baffled that a man who's never made tamales before isn't quite as good at making them as their (grand)mother who has been cooking them for 20+ years
Don't skimp out on the filling man. I hate when I get a Tamale that is like all masa and like a centimeter of filling. What is the point of having a filling if there is barely any in it. You, feel me.
My mama ain't Mexican at all. We're native American and Irish. But we make tamales from scratch too. And we learned that the first time we made it. Its honestly the more meat the better. I love the masa but the meat is amazing.
Maybe I'm weird, or maybe my mom's recipe is just that good, but I love the masa more than the filing usually. Of course she always uses chicken, and I never really liked chicken.
I don't really like meat... had some interactions with it that scared me but I prefer my tamales that have more masa than carne or at least have more chile
My mom made “kid tamales” if any of the kids didn’t want to eat the regular ones and I was just masa a little sugar to make them a little sweeter and raisins. I still love them they’re great with coffee tea or Abuelitas!
"...preferably freshly toasted and ground in a spice grinder but it's late and I'm not trying to wake up Rasheed" *Proceeds to start high powered blender*
I have made tamales several times growing up. And I’ve never heard of whipping the lard. Usually we heat it up and melt it and mix it in like it was a liquid. Also for those trying it. Another tip to know it’s done right is if the tamale rolls clean off the leaf. That means there is enough lard. It was still great!
Looked quite good. One thing I would’ve done different is add some of the marinade from the pork directly in the masa mix. That’s what gives the masa an incredible flavor!
Yeah it just kinda depends on different regions in Mexico and how they make tamales, my mom's side of the family adds the chile to the masa which makes it more spicy. His recipe still looks tasty tho!
If I may it would be nice if it was mentioned that when you spread the masa it should be done on the smooth side of the corn husk (not common sense to surprising amount of people)
Fun fact everyone calls my great grandma abuela and almost no one in my family knows her real name Abuela es Abuela Edit: asked my grandma her name is Antionia

Neither is regular butter, supposedly. All the hate is apparently due to lazy research/bad science. In other words, the general rule is to pay attention to your diet and how the food you consume affects your body.
Dixon Triconderoga butter is actually pretty bad for you in terms of the kinds of fats it contains (bad cholesterol, saturated fats). However, it ultimately all lies in moderation. How do you make it yo where it looks like that
when babish makes traditional food he always has these specific measurements when the traditional ancestors of the food just threw in stuff until they thought it was fine. this is an amazing phenomenon
there's something really funny about it for sure. comes with having a worldwide audience I guess - if it's "your" food you've already learned how to eyeball it, but until someone on another continent has made it a few times they gotta have measurements so their eyeballs can get up to speed XD

i love watching things like this because it reminds me of the cultural differences even in "similar" countries. mexican tamales are so different from costa rican tamales,, just wow. it's so cool
My mom's Mexican and works at a Nicaraguan restaurant, they add stuff like carrots and potatoes . Usually banana leaves.
Culinary diversity is a blessing

There is another version of tamales that my family makes occasionally.
They are sweet tamales. We change the dough a bit. We add sugar, cinnamon, and raisins. (Maybe vanilla extract sometimes) We also add pink food coloring to tell apart the sweet tamales from the spicy or savory ones.
Or maybe instead of pork, we like to have cheese and jalapeños.

I asked if you wanted more tamales?! Si? Thats what i thought you said!
The key to escaping is to have a few tamales at the table and then take a tamale with you outside.
I have made tamales several times growing up. And I’ve never heard of whipping the lard. Usually we heat it up and melt it and mix it in like it was a liquid. Also for those trying it. Another tip to know it’s done right is if the tamale rolls clean off the leaf. That means there is enough lard. It was still great!
blahlove13 I've never heard about whipping the lard either. Worth a try though, to see if it makes a difference.
Also masa is usually mixed by hand, not a machine. Part of the tactile method that abuelas use when they don't measure anything

That being said, lard is far healthier than butter. I'd recommend it over butter (besides, butter has that butter taste and personally, I dislike)
