Btw, sweet potato pie also makes a great substitute for pumpkin in the event of dietary restrictions. The recipes are a bit different (mostly in the amount of sugar added, as pumpkins are much less naturally sweet), but the texture and overall flavor are remarkably similar!

Pie dough rolling tips: Pack the dough very tightly in a THIN disk before you chill it. This helps prevent cracking later on. Let it rest for a few minutes when you take it out. VERY cold dough will crack. Just don’t let it get too warm. Also, it helps to smack the disc with the rolling pin at first to get it started. Then roll as usual.

But what I really wanted to say is that I am dough challenged. I am definitely gonna use my big food processor next time + follow Andrew's method. That pumpkin pie looked pretty good, but I find that just pumpkin in the pie is a little underwhelming. Try adding other winter squashes, like Delicatta, Butternut, or Galeux d'eysines for deeper color and enhanced flavor! Also on the whipped cream, you could try to sweeten it with maple syrup, or use maple extract in the whip to better complement the flavor of the pumpkin.
When you layer the turkey on a scaffold of aluminum foil, sometimes you get the foil breakage that sticks to the turkey; so I would recommend using some whole rosemary or sage sprigs to prevent a direct contact.
You want bigger chunks of butter in the pie crust , about the size of a pea. This will melt while cooking making the pie crust more flakey instead of chewy and tough
Whisking by hand: start with wrist, when that tires use your elbow, when that tires use your shoulder and when that tires your wrirst is up to work again. So rinse and repeat until you've got what you're after.

Mr. Babish you have to use your forearm and not your wrist. Also, the motion should be a thrusting vs. a circlular whip. Sort-of like hula hooping. That's it! That's the secret to hand made whipped cream..
I have also successfully used this method: Fill cream into lidded jar. Don't overfill, the cream needs room to move. Close tightly and hold in one hand. Quickly and repeatedly punch something soft and springy (I used a mattress). Occasionally check consistency. This is also a great way to let off steam. In fact the first time I did it I got so carried away I ended up with butter.

Why does he say 2-2.5 hours until it's 160 degrees but takes it out at 130 degrees? Is this the right temperature to remove the stuffing and butter skin? He didn't say how long before he flips it, just that it came out 130 (really 135 if you look). What did you do?

That pumpkin pie looked pretty good, but I find that just pumpkin in the pie is a little underwhelming. Try adding other winter squashes, like Delicatta, Butternut, or Galeux d'eysines for deeper color and enhanced flavor! Also on the whipped cream, you could try to sweeten it with maple syrup, or use maple extract in the whip to better complement the flavor of the pumpkin.

My favorite way to make stuffing is to use a muffin/cupcake tin. That way you get perfect single-serving stuffin muffins.

Mr. Babish you have to use your forearm and not your wrist. Also, the motion should be a thrusting vs. a circlular whip. Sort-of like hula hooping. That's it! That's the secret to hand made whipped cream..
I have also successfully used this method: Fill cream into lidded jar. Don't overfill, the cream needs room to move. Close tightly and hold in one hand. Quickly and repeatedly punch something soft and springy (I used a mattress). Occasionally check consistency.
This is also a great way to let off steam. In fact the first time I did it I got so carried away I ended up with butter.
