- Join Rick Martinez in the Bon Appétit Test Kitchen as he makes pork tamales. You can make masa, a dough made from ground corn, in two ways: instant and fresh. Fresh yielded the best corn flavor and best texture, but you can use corn masa flour too, which is easier to find. You can find fresh masa and dried corn husks at tortilla stores/factories, international sections at larger stores, or online. Whichever masa you choose, be sure to save some of the chile purée from the pork filling.

When they are hot, I eat them with a fork, but I get impatient and eat them too soon. Ten minutes later, I'm not using anything except fingers to eat them, not even a plate.

Lol. I think it's more that he just struggles to think "What product do people around America know that has a strong toasted corn flavor", and that's the first thing he thinks of. Or maybe he had some cancha (toasted corn kernels) on his trip to Mexico, so it's fresh in his mind.

@@vacantandstainedd I can see both sides. Sometimes you need something plain tasting to balance it out like how white rice is usually better than fried rice as a side for chinese food. Plus, there is something comforting to me about that super plain masa flavor.

Me and my mom use to make tamales once a year it was an event we dedicate several days on the making on day one we prepare the guisos and some the husk the next day we start ensamble them we made a lot of varieties chicken ,pork, deer, char with cream cheese and chicken, cheese with jalapeño,beans and with cheese we ate that day and froze the rest and if want to eat tamales just take them out of the freezer and cook them it my mom passed away but I'm gonna continue the tradition

Omg thank you for posting! My mother-in-law was supposed to come over this thanksgiving and teach me to do it on my own but she was in a horrific car accident 6 months ago and passed away. Ive always helped make them and last year she came over and made them at my apartment but this year I was going to write it all down as she supervised me. I wanted to write her recipe down because most Mexican family recipes are not written down. We all miss her so much. This is our first holidays without her. I need to go out and buy all the supplies and ingredients in a few weeks. If it turns out well I will teach my 19 year old son.

I really enjoy the fact that Mexican food gets represented properly by Rick. So many people want to do these Frankenstein creations for content but we just want that authentic take on food we grew up on. He does add his flair but the spirit of the dishes never get lost.

It’s not legit. You don’t use a putty knife to spread the masa lol and you certainly don’t make them that thin. Just use a spoon to spread it evenly and to add the filling.

"A spoon?! My god!" I love Rick. I also love homemade tamales, and these look spectacular. I don't think I'd ever attempt them myself, but there's a lovely woman in my neighborhood - she and her husband own the local liquor store - and every now and again, on a really lucky day, she will sell her homemade tamales and they are simply to die for! There really is nothing like a homemade tamale. Yum!

I also really love Rick's explanations to how it's traditionally prepared, where he deviates and why. I personally prefer trying to cook new dishes as authentic as possible, but when I clearly see the difference and why that might be good to just incorporate I think that's really great.
the humor and fun amongst all of BA folks makes them all so down to earth and so remarkably enjoyable to watch. i often tell others that i watch BA as a way to de-stress then they say "you too? " and i discover my people!

I grew up in Southwestern Texas and I always looked forward to Christmas because the grandmas in our tiny town would hold a low-key, unofficial tamale cook-off so even though I did not have a Mexican abuela, I got to eat like I did during Christmas. Pork with red chiles and poblano and cheese were always my favorites.
