    Where have these been all my life? They crisped up so beautifully and they were a hit with hubby and 17 year old son. Your Hemp Ranch Dressing was spot on but I did my own thing with the filling (a can of fat free refried beans, 1/2C cooked lentils, about 1 C leftover cheez” sauce & some seasonings). Hubby said it tasted like Taco Bell bean burrito filling , which was his way of giving a compliment! 😂

    Mashed potato taquitos are a real thing. For years, I made them the "old-fashioned" way, but they're super good veganized, and they taste extra good with a spicy red taco sauce.

    I make these all the time. There’s so many things you can use as filling: fat-free refried beans, baked beans, mashed potatoes/mashed sweet potatoes….etc. Your Buffalo sauce looks amazing. Will make these tonight with roasted cauliflower. Thanks!

    Made the buffalo and ranch tonight I had jackfruit taco filling left over and made taquitos from that but next I will do the peas and celery. It was delish. I think that ranch is the best ive had. I’ve not had it on a salad yet but that’s the plan tomorrow. Thx for all you both do

    For those with nut allergies, you can always substitute silken tofu for cashews in recipes. My daughter is allergic, so I keep a dozen aseptic tofu packages in the pantry at all times. My favorite is Mori Nu extra firm silken. Don't press it, you'll turn it into paste! Just wrap it in a couple of clean dish towels for a few hours and use in place of raw cashews in equal measure.
    If you prefer to substitute seeds for the nuts, the closest replacement for cashews I've found so far is raw pepitas.

    Can't wait to try this recipe. In the video you didn't comment about the 3/4 cup of distilled white vinegar being in the Buffalo Sauce, nor did I see you put it in with the other ingredients. Is 3/4 cup the correct amount, and could you substitute apple cider vinegar or rice vinegar? Thanks so much for all your delicious recipes!!

      Oops did I accidentally cut that out? It should be right yes. To get that characteristic buffalo sauce flavor I recommend white distilled but you can try it with whatever you prefer. I’m sure it will be delicious.

    I like to slightly steam my corn tortillas before filling and rolling so they don't split in the oven.

      @@WellYourWorld and here's my method: I use one of those flat spatter screens on a pot of simmering water. Put a lid that will cover the tortilla on top and steam for only a few seconds till soft. Then remove from heat, throw it upside down onto the counter, put another one on to steam while filling the soft one. Enjoy!

    Just made the taquitos. They're yummy. I did switch up the sauce though by adding some soy sauce and using 2 lemons instead of vinegar

    If you whip the juice from chicken peas it makes a mayo like texture cream then add spice

    Should’ve heated the tortillas on top of a griddle, wrapped them in a towel to steam so they become pliable. This way you can roll the taquitos real tight. And to seal them use a slurry of corn starch.

    Can you show me what corn tortilla you use. I bought some just corn and water but they break when folded so I heated them some and then folded but they did not get crispy in the oven like yours did. TIA

    😆😆😆😆😆I have to find a substitute for the chickpeas and the corn tortilla. Just found out that I am sensitive to chickpeas. 😢. They get added to my🚫 list. Anyway, thanks for sharing.

    Loving this video and these recipes! Not that I count calories but do you think that it would work to switch out 1/2 cup of hemp seeds for white beans in the ranch dressing. I think 1/2 cup of hemp seeds is like over 1400 calories or something . . . not that I would eat the whole recipe! haha!

    Dillon you are hilarious lol - no body likes a crusty masher and the face you made hahahaha. Question: did you add some of that sauce to the mashed chick pea mix? They looked a bit saucy when you assembled the taquitos.

      Warm them in the oven for 2-3 minutes before rolling them! That should do the trick!

      Oh no! Try warming them in the preheated oven for 1-2 minutes and then rolling, it should help prevent breaking!
